BEEF AND CORN CASSEROLE

This recipe was passed down from my mother. It's now a stand-by for me as well as our three grown daughters. It's a great dish to pass at potlucks.-Ruth Jost, Clear Lake, Iowa

1 package (10 ounces) fine egg noodles
1 pound ground beef
1 medium onion, chopped
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 cup water
1 cup diced process cheese (Velveeta)
1/2 medium green pepper, chopped
1 medium carrot, thinly sliced
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cook noodles according to package directions; drain. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the noodles and remaining ingredients., Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 325° for 30 minutes. Uncover; bake 30-35 minutes longer or until bubbly.

1 8oz package Macaroni
1 can Cream of Chicken Soup
1 can Corned Beef, cut up
1 cup Milk
¼ lb. Cheddar Cheese, grated
1 small Onion, diced
2 Tablespoons Butter, melted
½ cup Panko Bread Crumbs

Steps:

  • Cook pasta about 3 minutes less than called for according to box directions.
  • Drain the pasta. Set aside.
  • Dice the onion.
  • Grate the cheddar cheese.
  • Place onion and cheese in a large mixing bowl.
  • Add the can of cream of chicken soup.
  • Add the milk.
  • Stir until fully combined.
  • Add the cut up corned beef.
  • Fold the beef into the other ingredients.
  • Butter a 13x9x2 casserole dish.
  • Pour the beef and pasta mixture into the buttered dish.
  • Place two tablespoons of butter in a small bowl. Melt butter in microwave.
  • Stir the half cup of bread crumbs into the melted butter until fully coated.
  • Spread the buttered bread crumbs over the top of the dish.
  • Bake at 350F degrees for 30 minutes or until bubbly hot and lightly browned on top.
  • Remove from oven when done. Set on folded towel and let cool for 10-15 minutes before serving.
  • Enjoy!

1 medium onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 teaspoons salt
1 teaspoon Worcestershire sauce
1/4 teaspoon pepper
2-1/2 cups milk
3 medium potatoes, cooked and cubed
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (12 ounces) corned beef
1 tube (12 ounces) refrigerated buttermilk biscuits

Steps:

  • In a large saucepan, cook onion in butter over medium heat until tender; remove from the heat. Stir in the flour, salt, Worcestershire sauce and pepper until blended. Gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the potatoes, corn and corned beef., Transfer to a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 400° for 30 minutes or until bubbly. Top with biscuits. Bake 10-15 minutes longer or until biscuits are golden brown.

8 ounces egg noodles, broad
1 (12 ounce) can corned beef
1 (10 1/2 ounce) can cream of chicken soup
1/3 cup onion, chopped
1/2 cup black olives, coarsely chopped
2 tablespoons green peppers, chopped
1 (16 ounce) can cream-style corn
2 cups American cheese, coarsely shredded

Steps:

  • Cook noodles, without salt.
  • Drain.
  • Crumble corned beef in bowl, add soup, onion, olives, green pepper and corn.
  • Mix well.
  • Put about 1/4 of meat mixture in shallow 2 quart baking dish.
  • Alternate noodles, sauce, and cheese, ending with cheese.
  • Bake at 350 degrees 45 minutes.

1 cup sour cream
1 small onion, diced (optional)
2 garlic cloves, pressed
