6 cups thinly sliced yellow squash
1 cup shredded carrot
1 (8 ounce) package sliced baby portabella mushrooms
1 onion, chopped
1 red bell pepper, chopped
3 cups chopped cooked chicken
3 cups crumbled cornbread
3 cups shredded cheddar cheese, divided
1 (14 ounce) can chicken broth
1 (10 3/4 ounce) can cream of chicken soup
1 (8 ounce) container sour cream
1 cup crumbled biscuit
2 large eggs
2 teaspoons poultry seasoning
1 teaspoon dried thyme
1/2 teaspoon salt

Steps:

  • In a large Dutch oven, combine squash, carrot, mushrooms, onion and bell pepper. Add water to cover; bring to a boil over high heat. Reduce heat and simmer 10-12 minutes or until tender. Drain well.
  • Preheat oven to 350 degrees and lightly grease a 3-quart casserole.
  • In a large bowl, combine squash mixture, chicken, cornbread, 2 cups cheese, chicken broth, cream of chicken soup, sour cream, biscuits, eggs, poultry seasoning, thyme and salt. Spoon mixture into prepared casserole.
  • Bake 45 minutes to 1 hours or until center is set.
  • Sprinkle evenly with remaining cheese and bake 10 minutes or until cheese is melted.

1 tablespoon extra-virgin olive oil
1 cup sliced zucchini
1 cup sliced yellow squash
3 scallions, sliced
½ teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon garlic powder
1 (15.25 ounce) can Southwest-style corn with poblano and red peppers, drained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), drained
1 cup chopped cooked chicken
salt and ground black pepper to taste
1 (13 ounce) can evaporated milk
2 ½ cups shredded Cheddar cheese
1 tablespoon cornstarch
¼ cup chopped cilantro
1 (6 ounce) package Mexican-style cornbread mix (such as Martha White®)
⅔ cup milk
1 egg
½ jalapeno, sliced crosswise, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 7x11-inch baking dish.
  • Heat olive oil in a large skillet over medium heat. Add zucchini and yellow squash; cook, stirring frequently, until fork-tender, about 4 minutes. Stir in white and light green parts of scallions, chili powder, cumin, and garlic powder. Set aside scallion tops for garnish.
  • Add drained corn, drained tomatoes, and chicken. Cook, stirring occasionally, until most of the liquid in the skillet has evaporated, about 5 minutes. Season with salt and pepper. Pour the contents of the skillet into a large mixing bowl.
  • Pour evaporated milk into the same skillet. Toss Cheddar cheese with cornstarch and add to the skillet; stir frequently until cheese is melted and blended, about 2 minutes. Stir in cilantro.
  • Pour the cheese sauce over the vegetables and stir to combine. Taste and adjust seasonings.

3 tablespoons extra-virgin olive oil
2 1/2 cups chopped onions
1 1/4 pounds assorted wild mushrooms (such as oyster, chanterelle, and portobello), coarsely chopped
1 1/2 tablespoons chopped fresh sage
4 teaspoons chopped fresh thyme
3 large garlic cloves, chopped
2 1/2 teaspoons ground cumin
4 cups 1/2-inch cubes seeded peeled butternut squash (about 2 1/2 pounds)
2 cups drained rinsed black beans (from two 15-ounce cans)
2 cups diced tomatoes in juice (from two 14 1/2-ounce cans)
1/2 cup water
Cornbread:
4 cups Masa Harina (corn tortilla mix)
2/3 cup yellow cornmeal
2 1/4 teaspoons salt
3/4 teaspoon baking powder
4 1/4 cups (or more) water
10 tablespoons (1 1/4 sticks) butter, melted, divided
2 large eggs
1 large egg yolk
2 cups (packed) coarsely grated extra-sharp white cheddar cheese (about 8 ounces)
3 tablespoons finely chopped fresh Italian parsley

Steps:

  • For filling:
  • Heat oil in large pot over medium-high heat. Add onions; sauté until golden, about 10 minutes. Add mushrooms; sauté until tender, about 10 minutes. Add sage, thyme, garlic, and cumin; stir 1 minute. Add squash, beans, tomatoes with juice, and 1/2 cup water; bring to boil. Reduce heat to medium, cover, and simmer 8 minutes. Uncover and simmer until vegetables are tender and most of liquid has evaporated but mixture is still very moist, about 12 minutes. Season filling generously with salt and pepper. (Can be made 1 day ahead. Cool slightly. Cover; chill.)
  • For cornbread:
  • Preheat oven to 350°F. Butter 15x10x2-inch glass baking dish. Mix Masa Harina, cornmeal, salt, and baking powder in large bowl. Whisk 4 1/4 cups water, 6 tablespoons melted butter, eggs, and egg yolk in another large bowl to blend. Stir egg mixture into Masa Harina mixture. Stir in cheese and parsley, adding more water by tablespoonfuls as needed to form thick moist dough.
  • Transfer 4 cups dough to prepared baking dish. Place large piece of plastic wrap atop dough. Using plastic as aid, press dough evenly over bottom and 3/4 of the way up sides of dish; peel off plastic. Spoon filling into dough in dish, spreading evenly. Spoon remaining dough in small dollops atop filling. Using offset spatula, gently spread dollops evenly over filling to cover. Press top and bottom dough together at edges to seal, enclosing filling. (Can be made 1 day ahead. Cover; chill.)
  • Brush top of casserole with 4 tablespoons melted butter. Bake until dough is light golden and casserole is heated through, about 1 hour (or about 1 hour 15 minutes if chilled). Cool 10 minutes. Cut into squares; serve with Ancho Mole.

  • Set oven to 350 degrees.

1 1/2 cups cornbread stuffing mix
1/4 cup butter or margarine, melted
2 teaspoons dried sage leaves

Steps:

  • Spray 4-quart slow cooker with cooking spray. In large bowl, stir soup and sour cream. Add squash, onion, carrot and corn; stir gently to coat. Spoon mixture into slow cooker.

1 lb yellow squash, sliced and quartered
1 large onion, chopped
2 garlic cloves, minced
1 tablespoon aged balsamic vinegar
1 teaspoon powdered Worcestershire sauce
1/4 cup butter, melted
1/4 cup cream
3 eggs, beaten
1 tablespoon sugar
3/4 cup cornbread, crumbled
1 cup finely grated parmesan cheese
1 cup grated extra-sharp cheddar cheese
1/4 teaspoon pepper
16 butter flavored crackers, crumbled
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • In large skillet, combine squash, onion, garlic, vinegar and Worcestershire and saute until tender and lightly caramelized.
  • Drain excess liquid off into a large pan and reduce it over low heat.
  • Add butter to the reduction, stirring to combine and mix the flavors until the butter is melted.
  • Remove from heat to cool, then whisk in cream, beaten eggs, salt and sugar.

2 lbs yellow squash (if frozen cook as dirrected)
1/2 cup mirepoix (chopped onion, carrots & cellery)
1 pint sour cream
2 (6 ounce) boxes cornbread stuffing mix
1 (10 1/2 ounce) can cream of chicken soup
2 cups cheddar cheese, grated
1/2 cup butter

Steps:

  • Melt butter and pour into a 9x13 pan, add 1 box stuffing mix and press into bottom of pan to form crust. Boil squash and mirepoix in water until tender - do not over cook. Mix sour cream, soup, cheese, cooked and drained squash mirepoix mixture and 1 box of stuffing mix in a bowl stir until well blended. Spread squash mixture evenly on top of crust. Bake 350 deg for 30 minutes.
