1/4 cup unsalted butter, softened
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon ground black pepper
4 cobs of corn, peeled

Steps:

  • Preheat oven to 350 F.
  • In a small mixing bowl, cream together the butter, garlic, salt and pepper. Spread the butter mixture over each corn.
  • Wrap each corn in aluminum foil and place on a large half sheet baking pan. Roast in the preheated oven for 40 minutes, turning the corn over halfway.
  • Take out the corn and open the foil on top to expose it. Turn on the broiler function on the oven and place corn back in. Broil on high for 2-3 minutes.
  • Serve with a piece of butter on top. Sprinkle more salt and pepper as desired.

4 ears sweet corn in the husks
6 tablespoons unsalted butter, at room temperature (if using salted butter, omit the salt)
3 tablespoons minced fresh flat leaf parsley or cilantro
1 clove garlic, minced
Salt and freshly ground black pepper

Steps:

  • Set up the grill for direct grilling and preheat to high.
  • Strip back the corn husks, as you would peel a banana, exposing the kernels. Bring the husks together beneath the ear of corn to make a sort of handle and tie with string.
  • Place the butter, parsley, and garlic in a mixing bowl and whisk or beat until smooth and creamy.
  • Lightly brush the corn with a little of the butter and arrange on the grate, positioning the ears in such a way that the husks are away from the fire. Grill the corn until the kernels are handsomely browned on all sides, turning as needed, basting with the remaining butter, and most important, seasoning generously with salt and pepper. Serve at once and get ready for one of the most fabulous tastes in life.

1 dried ancho or guajillo chile, seeded and torn into pieces
1/2 cup warm water
1/4 cup fresh cilantro
3 garlic cloves
1 tablespoon fresh lime juice
Pinch of sugar
1 1/2 teaspoons kosher salt
1 stick (1/2 cup) unsalted butter, softened
8 ears corn, shucked

Steps:

  • Soak chile in warm water in a 1-cup glass measure until softened, about 30 minutes, then drain.
  • Finely chop cilantro and garlic together in a food processor. Add chile, lime juice, sugar, and salt, then process until finely chopped. Add butter and blend until smooth, then spoon into a ramekin.
  • Cook corn in a large pot of boiling salted water until crisp-tender, 4 to 5 minutes. Transfer with tongs to a platter and serve with butter.

2 tablespoons canola oil
1/2 small red onion, chopped
2 cloves garlic, chopped
1 tablespoon ancho chili powder
2 teaspoons Spanish paprika
1 teaspoon toasted cumin seeds
1/2 teaspoon cayenne powder
1/2 cup water
1 1/2 sticks unsalted butter, slightly softened
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper
4 ears corn
Kosher salt

Steps:

  • Perfectly Grilled Corn, recipe follows
  • Heat the oil in a medium saute pan over high heat until almost smoking. Add the onion and cook until soft, 2 to 3 minutes. Add the garlic and cook for 30 seconds. Add the ancho powder, paprika, cumin and cayenne and cook for 1 minute. Add 1/2 cup of water and cook until the mixture becomes thickened and the water reduces. Let cool slightly.
  • Place the butter in a food processor, add the spice mixture and Worcestershire sauce and process until smooth. Season with salt and pepper, scrape the mixture into a small bowl, cover and refrigerate for at least 30 minutes to allow the flavors to meld. Bring to room temperature before serving and spread the butter over the corn while hot.
  • Heat the grill to medium.
  • Pull the outer husks down the ear to the base. Strip away the silk from each ear of corn by hand. Fold husks back into place and tie the ends together with kitchen string. Place the ears of corn in a large bowl of cold water with 1 tablespoon of salt for 10 minutes.
  • Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Remove the husks and eat on the cob or remove the kernels.
  • How to remove corn kernels from cob: To remove kernels from cobs of either raw or cooked corn, stand cob upright on its stem end in a large pan, holding tip with fingers. Cut down the sides of cob with sharp paring knife, releasing kernels without cutting into cob. Run dull edge of knife down the cob to release any remaining corn and liquid.

4 corn cobs, leaves and silks removed
60 g butter
1 garlic clove, crushed
1 teaspoon dried herbs
1 tablespoon chopped fresh parsley

  • Preheat oven to 200°C.
  • Remove all the husks and silks from the corn cobs.
  • To make the Herb & Garlic Butter- mix all ingredients together is a small mixing bowl.

Steps:

  • Pull back the corn husks without detaching them from the cobs. Pull out all of the silk. Spread the corn with butter, if desired. Pull the husks back over the corn.
  • To steam corn: Bring a large pot of water to the boil. Reduce heat to a simmer. Place corn in a steamer over the water. Cover and steam until corn is tender, about 12 minutes. Or, to roast corn: Preheat oven to 375 degrees. Roast corn in the oven until tender, turning it twice, about 35 minutes.
