8 kiwi fruits, sliced
2 bananas, peeled and sliced diagonally
1 papaya, pared, seeded and sliced
2 tablespoons olive oil or 2 tablespoons salad oil
1 tablespoon honey
1 tablespoon lime juice
1/8 teaspoon grated lime zest
1/8 teaspoon paprika
1 dash salt

Steps:

  • Combine Kiwi fruit, banana, and papaya; toss gently with honey lime dressing.
  • Honey lime dressing: combine all dressing ingredients and season to taste with a dash of salt. Whisk well to combine. Makes about 1/4 cup.

Perfect Summer Fruit Salad image

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

1/4 cup lime juice
1/4 cup honey
1 tablespoon minced fresh mint leaves
4 cups cubed honeydew melon (about 1 small)
2 cups green grapes
4 medium kiwifruit, peeled, halved lengthwise and sliced
1 medium cucumber, halved lengthwise and sliced

Steps:

  • For dressing, in a small bowl, whisk lime juice, honey and mint until blended. Place fruit and cucumber in a large bowl; add dressing and toss to coat. Refrigerate until serving.

Cool Fruit Salad With Light Sauce image

Fresh, cool versatile ... all are ways I'd describe this salad. The dressing is light and not overwhelming. This is a very easy recipe to customize for your own family's likes & dislikes, as well as considering which fruits are in season for you. Strawberries, raspberries and blackberries are all great in this too. Sugar-free pudding works just as well if you prefer.

1 (2 1/2 ounce) box instant vanilla pudding
2 apples, chopped
2 tablespoons lemon juice
1 1/2-2 cups blueberries
2 cups seedless grapes
1 (15 ounce) can mandarin oranges, drained
1 (20 ounce) can pineapple tidbits, in its own juice (drain & reserve the juice!)
1/4 cup orange juice

Steps:

  • In a large mixing bowl, toss the chopped apples in 2 tablespoons lemon juice (Note: orange juice could also be used instead of lemon juice).
  • Add in the drained pineapple tidbits, mandarin oranges and grapes.
  • In a small mixing bowl, combine the dry pudding mix with 1/4 cup orange juice and the liquid you had drained from the can of pineapple. Using a wire whisk, mix it until it starts to thicken. If it seems too thick, thin it with a little more orange juice.
  • Pour the dressing over the fruit and toss gently to mix well.
  • Fold in the blueberries last (and gently).
  • Chill until ready to serve. This keeps 3-4 days if it lasts that long!
