Red Snapper With Yogurt/Cucumber Sauce image

Red Snapper has a great, firm texture and a sweet, nutty flavor that lends itself very well to everything from hot chilies to subtle herbs. And, of course, Red Snapper is excellent for grilling.

120 g red snapper
2 tablespoons coriander
2 tablespoons cumin
2 tablespoons fresh ginger, ground
salt and pepper
1 teaspoon olive oil
1 large cucumber, peeled and without seeds
2 tablespoons unsweetened natural yoghurt
1 lime, juice of
salt and pepper
1 tablespoon mint leaf
2 tablespoons basil, finely chopped

Steps:

  • Marinate the fish with the coriander, cumin, ground ginger, salt and pepper.
  • In a frying pan, seal the fish on both sides with the olive oil.
  • For the sauce: put all the ingredients in a mixer except for the basil.
  • Serve the fish, cover with the yogurt sauce and toss with the basil.
