COMPANY'S COMING BREAKFAST CASSEROLE
This can be made ahead and refrigerated overnight if you like, then baked the next day. Great for a weekend when you have lots of stuff going on!

Steps:
- Set oven to 350°F.
- Brown the sausage, drain. I like to put it in a food processor and hit pulse a few times, I don't like the larger pieces but don't go so far as to make a paste!
- Whisk the eggs and seasonings in a bowl,.
- add milk.
- Spray a 9x13" pan with cooking spray.
- Layer the ingredients as follows; all the sausage, then a layer of cheese, then half the bag of hash browns, then the cheese and the rest of the hash browns. Pour the egg/milk/ seasonings mixture over all.
- Cover with foil bake for one hour, check for doneness, mine usually take a bit longer, but everyone's oven is different.
- When done top with more shredded cheese and let rest for 10 minutes.
- Serve with fruit salad for a delightful brunch!

Steps:
- 1. Tear bread into chunks. Should have 10 cups. In a greased shallow 3 qt casserole or 9x13 pan, arrange bread chunks evenly. Sprinkle with the shredded cheese followed by the cubed cream cheese. Top with green chilies. In a large mixing bowl, beat eggs just until mixed. Stir in milk, mustard and red pepper. Pour egg mixture over bread and cheeses.
- 2. Cover and chill for several hours or overnight.
- 3. Bake uncovered at 350 for 55 to 60 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving. Makes 12 servings.
COMPANY FRENCH TOAST EASY TO DO-AHEAD HOLIDAY BREAKFAST
Having company and/or getting ready for a big day? I have found this is the perfect breakfast for a crowd when I want to spend time with my company rather than in the kitchen. My guests love it! Steps:
- Melt butter in a 9x12 glass casserole.
- Add brown sugar and cinnamon. Stir, covering bottom of pan (add more butter or sugar if necessary for a thick sauce).
- Place six slices of bread to cover bottom of pan.
- Add any 'dress up' additions you may want onto the top of each slice of bread. Some ideas may be a dollop of cream cheese, jam, banana slices, caramel covered pecans, cooked bacon or sausage, etc. Feel free to leave out the extras - I usually don't add anything.
- Top with remaining six slices of bread.
- Slice each 'sandwich' diagonally. This creates beautiful, triangular servings.
- Mix eggs, water, salt and pepper together in a bowl. You can also use milk instead of water. (At 9000ft elevation, I have found water works better when scrambling eggs. I don't know why that is.).
- Pour egg mixture over bread slices and cover dish with foil.
- Refrigerate overnight.
- In the morning, put cold pan into cold oven and turn the heat to 350. Bake about 35 minutes until eggs are set.
- To serve, loosen sides and separate each serving with spatula. Scoop each serving upside down onto plate. The brown sugar mixture becomes the top of the sandwich and runs down the sides.

Steps:
- Preheat oven to 350 degrees.
- Mix cheeses together.
- Put 1/2 the cheese in the bottom of a 13x9 (ungreased) baking dish.
- In a skillet, melt butter and cook the mushrooms and green onions until tender.
- Sprinkle all this over the cheese layer.
- Then layer ham over the vegetables.
- Then layer remaining cheese over the ham.
- Combine flour, milk and eggs, blending well.
- Pour this mixture over the layers.
- Bake at 350 degrees for 35 to 45 minutes, or till mixture is set and lightly browned.
- Let set 10 minutes.
- Cut into squares.
- May make the night before; cover and refrigerate till cooked.
