These tender centered, crispy-skinned baked plantains are perfect served as a healthy side dish or snack. Using just three base ingredients, and optional extra seasonings, this dish is incredibly versatile. Plus, this recipe is naturally gluten-free, paleo, vegan, and easy to make.

2 medium plantains (yellow (*see notes))
1 tbsp oil
Sea salt (to taste)
1/2 tsp onion powder ((optional))
1/4 tsp smoked paprika ((optional))

Steps:

  • You can watch the video in the post for visual instructions.Preheat the oven 400° F (205° C) and line a baking sheet with parchment paper. Spray it lightly with cooking spray and set aside.
  • Remove the peel of the plantains. If they are yellow with dark spots and overripe you will be able to peel them like a banana. If they aren't too ripe (yellow without spots), you will need to cut off the ends, then carefully cut through the skin lengthwise with a knife and remove the peel. Slice plantains diagonally into 1/3-inch (0.8 cm) thick slices.
  • In a bowl, toss together the plantain slices, oil, and spices. Spread the plantain slices in a single layer on the prepared baking sheet.
  • Bake until plantains are golden-brown, about 20-25 minutes, flip once after about 15 minutes. Depending on the ripeness of the plantains the baking time might be a bit shorter or longer.

Baked Bananas with Toasted Coconut image

Here's a quick and simple dessert: maple baked bananas, topped with crunchy toasted coconut. Serve with vanilla Greek yogurt or vanilla ice cream!

4 bananas
4 tablespoons maple syrup
2 tablespoons butter or coconut oil
1 teaspoon cinnamon
Kosher salt
¼ cup shredded coconut
7 ounces Greek yogurt (or substitute coconut whipped cream or vegan vanilla ice cream)
1 tablespoon maple syrup
¼ teaspoon vanilla extract

Steps:

  • Preheat oven to 400°F.
  • For the baked bananas: Cut the bananas in half length wise, then into about 3-inch pieces. Place the pieces of each banana on a square of aluminum foil. Top each pile of bananas with 1 tablespoon maple syrup, 1/2 tablespoon butter, ¼ teaspoon cinnamon (sprinkle evenly with your fingers), and one pinch kosher salt. Fold over the top of each piece of aluminum foil and fold in the sides to create a packet. Place the packets in the oven and bake for 12 minutes.
  • For the toasted coconut: Meanwhile, toast the shredded coconut in a small dry skillet, stirring constantly for several minutes until it browns. When the coconut is just starting to become browned, remove from the heat and continue stirring, taking care as it burns quite easily.
  • For the vanilla yogurt (optional): Make the vanilla yogurt by stirring together the Greek yogurt, 1 tablespoon maple syrup and vanilla.
  • To serve, place baked bananas in serving dishes. Top with a dollop of vanilla yogurt (or coconut whipped cream or vanilla ice cream), and toasted coconut.

1/2 cup shortening, room temperature
1/4 cup creamy cashew butter
1 cup sugar
1 cup mashed ripe banana (about 2 medium)
1 large egg, room temperature
1 tablespoon grated lime zest
1 teaspoon salt
1/2 teaspoon baking soda
1-3/4 cups unsweetened finely shredded coconut
1-1/2 cups all-purpose flour
1/2 cup sweetened flaked coconut

Steps:

  • Preheat oven to 375°. Cream shortening, cashew butter and sugar until light and fluffy, 5-7 minutes. Beat in next 5 ingredients until thoroughly mixed. In a separate bowl, mix unsweetened coconut and flour. Beat into creamed mixture just until combined., Using a medium cookie scoop, drop dough 2 in. apart onto parchment-lined baking sheets. Sprinkle with sweetened coconut. Bake until edges are golden brown, 15-20 minutes (cookies will have cakelike texture). Remove from pans to wire racks to cool. Serve warm or at room temperature.

It took me forever to find a good banana pancake recipe I like. It took me even longer to find coconut syrup I liked. This syrup is great because it doesn't have any of the coconut shavings in it. So kids will like it!

1 tablespoon white sugar

4 bananas (VERY RIPE or plantains)
1 pinch ground cinnamon
1 cup coconut milk
1/3 cup coconut, sweet shredded

Steps:

  • Preheat the oven to 350°, cut the ends of the bananas or plantains and peel.
  • Place them in a baking dish and brush with the butter. Sprinkle with the cinnamon and add the coconut milk, then sprinkle with coconut.
  • Bake for 25 to 30 minutes.
  • Serve warm as a side dish.
