MACAROON APPLE COBBLER

- Place the apples in an ungreased 9-in. pie plate. Combine sugar and cinnamon; sprinkle over apples. Top with coconut and pecans; set aside., To make topping, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine flour and baking powder; gradually add to the creamed mixture until blended. , Drop small spoonfuls over apples. Bake at 350° until top is golden brown and fruit is tender, 25-35 minutes. Serve warm.

- Preheat oven to 375 degrees F (190 degrees C).
- Stir together apples, caramel topping, and flour in a large round baking dish. Pull apart each biscuit into two halves, and arrange over the apples. Drizzle with butter. Stir together the sugar and coconut; sprinkle over the buttered biscuits.
- Bake in preheated oven until the biscuits have puffed, and are lightly browned, about 30 minutes.

VEGAN APPLE OAT CRISP
Coconut oil stands in for butter to make a vegan version of a classic, comforting apple crisp laced with cinnamon and tart dried cherries.

- Preheat oven to 375 degrees. Pulse 1 cup oats in a food processor until coarsely ground. Transfer to a bowl and add remaining 1 cup oats, brown sugar, salt, coconut oil and water. Stir until combined.
- Toss together all apple filling ingredients in a bowl and transfer to an 8-inch square baking dish. Sprinkle with topping. Cover with parchment-lined foil and bake 30 minutes. Remove foil and continue baking until apples are tender and topping is golden brown, about 30 minutes more. Let cool slightly before serving.

If you've been looking at my recipes, you'll have noticed I'm not into 'glam' desserts or cooking. I love homey fare, things that put a smile on my family's face. This recipe qualifies. Don't forget the ice cream or whipped cream.

Steps:
- Preheat oven to 375 degrees F (190C).
- Butter a 9 inch square baking pan.
- Peel, core and slice the apples into 1/3 inch slices.
- Toss them in a large bowl with the lemon juice to prevent discolouration.
- Layer the apples in the baking pan.
- Combine the flour, oats, walnuts, coconut, brown sugar, cinnamon, allspice, salt and vanilla.
- Add the butter and cut in until mixture resembles coarse meal.
- Sprinkle over apples and bake in the middle of the oven for 35-40 minutes; or until topping is browned and apples are tender.
