GOURMET HORSERADISH HAMBURGERS

Since my hubby is from the horseradish capital of the world, I had to post this recipe! Found in the 1988 version of Favorite Foods from Century 21 (a cookbook I got from Grandma).

Number Of Ingredients 9

2 lbs ground beef (leaner the better)
1 cup soft breadcrumbs
6 tablespoons ketchup
4 teaspoons mustard
1/4 cup milk
1 teaspoon Worcestershire sauce
4 teaspoons horseradish
2 teaspoons salt
1 onion, finely minced

Steps:

  • Combine beef and bread crumbs. Then add remaining ingredients and mix well. Form into 8-10 patties. Pan fry to desired doneness (recommended medium to medium-well).

Serve this all-American classic with all the toppings you love -- cheese, lettuce, pickles, and onion.

1 pound ground beef chuck (20 percent fat)
4 teaspoons softened butter
4 hamburger buns, split
Coarse salt and ground pepper
4 slices melting cheese, such as American or mild cheddar
Toppings, such as shredded iceberg lettuce, pickle chips, thinly sliced red onion, mustard, ketchup, and mayonnaise

Steps:

  • Heat broiler. Divide beef into 4 rounds and place each between two layers of plastic wrap. Using a rolling pin, roll beef into 1/4-inch-thick patties. Butter inside of each bun. Place on a baking sheet, buttered side up, and toast under broiler.
  • Heat a large cast-iron skillet or griddle over high. Generously season patties on both sides with salt and pepper. Working in batches, cook burgers 1 to 2 minutes. Flip and top each with cheese; cover and cook 1 to 2 minutes more. Place burgers on buns and serve with desired toppings.

1/4 cup ketchup
1/4 cup mayonnaise
1 tablespoon red wine vinegar
1 teaspoon celery seeds
1 teaspoon hot smoked paprika
Kosher salt and freshly ground black pepper
1/2 head green cabbage, finely shredded
1 medium carrot, peeled and shredded
6 green onions, green and pale green parts only, thinly sliced
3 tablespoons grated Spanish onion

Steps:

  • Whisk together the ketchup, mayonnaise, vinegar, celery seeds, paprika, and some salt and pepper.
  • Put the cabbage, carrot, green onions and Spanish onions in a large bowl; season with salt and pepper, and toss to combine. Pour the dressing over the vegetables and toss again. Cover and refrigerate for at least 30 minutes and up to 8 hours.
