4-INGREDIENT CITRUS & MELON SPRITZER
Light and refreshing spritzers made with fresh honeydew melon and lime. Incredibly versatile and made with just 4 simple ingredients.

Steps:
- To make the melon ice cubes, slice one honeydew melon in half and scoop out the seeds. Then slice into 6 wedges and run a knife very close to the rind to remove the fruit. Use a knife to cut the fruit into ice cube shapes (alternatively, use a melon baller to scoop out fruit).
- Arrange fruit on a parchment-lined baking sheet and freeze for 1-2 hours, or until firm (like ice cubes).
- In the meantime, remove seeds from the remaining half of the melon and scoop the fruit into a large jar (you should have ~2 cups of melon as recipe is written // adjust if altering batch size).
- To the jar, add lime juice and organic cane sugar (or stevia) and use a muddler (or something with a flat edge) to smash and muddle together until it looks like a purée.
- Set a fine mesh strainer over a mixing bowl and add the purée, then press to extract the juice. Continue pressing until all juice is extracted. Discard (or compost) remaining pulp, or reserve for smoothies. Set juice in refrigerator until melon cubes are frozen.
- Once frozen, add melon cubes to desired number of serving glasses, filling 3/4 of the way up. Then top with the melon-lime juice, filling just less than halfway full.
- At this time you can add extras such as fresh cherries, cucumber, mint, or alcohol of choice (see notes). Then top with club soda / sparkling water, stir gently, and enjoy!
- Best when fresh. Store melon cubes in a freezer-safe container in the freezer up to 1 month. Juice will keep covered in the refrigerator for a few days, though best within the first 24 hours. Shake to refresh as it will separate.

- In a large stem glass arrange slices of lemon and lime between ice cubes to fill the glass. Pour 4 ounces of white wine, 1/2 cup, and 2 ounces of sparkling lemon lime seltzer water, 1/4 cup, down over fruit and ice. Stir with cocktail stir-stick or straw and serve.
MIXED CITRUS SPRITZER

- For the simple syrup: In a small saucepan, bring the water and agave to a boil over medium-high heat. Remove the pan from the heat and let cool.
- Combine the citrus juices and sparkling water in a pitcher. Add the simple syrup and mix well. Pour into ice-filled glasses and garnish with orange slices.

- Bring sugar, water, lemon zest, orange zest, and basil to a boil in a saucepan over medium-high heat. Remove from heat and allow simple syrup to cool, 15 to 30 minutes.
- Pour lemon juice and orange juice into a high-speed blender (such as a Vitamix®). Add strawberries and simple syrup. Blend on low speed (1), then slowly increase speed to high (10) and blend until pureed, about 45 seconds.
- For each drink, fill an old fashioned glass with ice. Pour 1/4 cup strawberry puree over top and fill with seltzer water.

- Put sugar and 1 cup water into a medium saucepan; bring to a simmer over medium heat, stirring to dissolve sugar. Remove from heat; let cool slightly.
- Puree fruit, syrup, lemon juice, and salt in a blender. Pour through a fine sieve into a bowl. Refrigerate until cold, at least 30 minutes (up to 2 days).

- Preheat barbecue and lightly oil grill.
- Slice one lemon and one orange into 1/2-inch thick slices. Divide the citrus slices between the 6 skewers. Cut remaining citrus fruits in half.
- Grill citrus slices untl caramelized and marked on both sides, about 2 minutes per side; remove. Grill citrus halves cut side down until well-caramelized and warm 5-8 minutes.
- Squeeze and strain the juice from the grilled halves into a pitcher. Stir in honey and a pinch of salt until dissolved. Add cranberry cocktail, wine, carbonated water and ice. To serve put a citrus swizzle stick and a mint sprig in each glass.
