FAVORITE APPLESAUCE COOKIES (WITH OATS AND CINNAMON)
These cookies are a little crispy around the edges right out of the oven, but soften as they are stored.

Steps:
- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
- Stir the ingredients together in a medium bowl. The batter will be fairly thick and sticky.
- Use a 1 tablespoon spoon to portion out batter onto the prepared baking sheet, placing batter about 1 inch apart. Press down slightly so the cookies are about 1/2 inch thick.
- Bake for 12-14 minutes or until firm to the touch and lightly golden brown around the edges.
- Remove from oven and let cool on the pan. Serve warm or at room temperature.

APPLESAUCE CINNAMON ORNAMENTS

Yield about 60 (1-1/2 inch) ornaments.

- In a large bowl, combine the applesauce and spices; mix well until a stiff dough forms, adding additional cinnamon if needed., On a board dusted with additional cinnamon, roll out each portion of dough to 1/4-inch thickness. Cut into shapes using 1-1/2-in. cookie cutters dipped in cinnamon. Reroll scraps. Place cutouts on parchment-lined baking sheets., Using a straw or wooden skewer, make a small hole in the top of each of the ornaments., Bake at 200° for 20 to 30 minutes. Remove to paper towels to dry thoroughly. When completely dry and cool, string a ribbon strip or piece of thread through each hole; tie the ends together to for a loop.

- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the brown sugar and shortening until smooth. Stir in the egg, and then the applesauce until well blended. Combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the applesauce mixture. Mix in walnuts and raisins. Drop by teaspoonfuls onto the prepared cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for a few minutes before removing to wire racks to cool completely.

CINNAMON APPLESAUCE COOKIES
This is a healthier cookie but is still delicious! From one of my favourite cookbooks, "One Smart Cookie", by Julie Van Rosendaal. Dough needs an hour to chill before rolling out.

- In a large bowl, beat margarine, brown sugar, applesauce and egg until smooth.
- In a medium bowl, combine flour, baking powder, cinnamon and salt. Add to the applesauce mixture, stirring by hand just until you have a soft dough. Divide the dough in half, wrap each half in plastic and refrigerate for at least an hour or until well chilled.
- When ready to bake, preheat oven to 375 degrees. Roll dough 1/8 inch thick between two sheets of waxed paper. Cut with a 2 1/2 inch cookie cutter or glass rim, and place 1 inch apart on a cookie sheet that has been lightly sprayed with nonstick spray.
- Bake for 10 - 12 minutes, until edges are golden. Bake 5 minutes longer for darker golden, crispier cookies. Transfer to a wire rack to cool.
