JALAPENO-CILANTRO RANCH DIP

Cool, herby, slightly spicy dip. Perfect with tortilla chips, mixed into guacamole, or on tacos. Refrigerate for up to 1 week. Can be frozen and then defrosted in the fridge, but the texture changes slightly -- it's best fresh.

1 ½ (8 ounce) containers sour cream
1 cup roughly chopped fresh cilantro
¾ cup mayonnaise
3 jalapeno peppers, seeded and roughly chopped
1 (1 ounce) package dry ranch dressing mix

Steps:

  • Combine sour cream, cilantro, mayonnaise, jalapenos, and ranch dressing mix in a blender. Pulse until cilantro and peppers are finely minced and incorporated. You might need to stir with a spatula a few times to make sure everything's fully mixed. Serve immediately or refrigerate.

3 jalapeno peppers, seeded
2 serrano peppers, seeded
1 bunch of cilantro
2 green onions
1 cup mayonnaise
1/2 cup sour cream
1/2 cup milk
1/2 tbsp white vinegar
juice of 1/2 lime
1/2 tsp garlic powder
1/4 tsp onion powder
1 tsp kosher salt
fresh black pepper

Steps:

  • Roughly chop peppers and green onions. Place into large food processor.
  • Add cilantro to food processor and pulse a few times.
  • Add remaining ingredients to food processor and pulse until blended.
  • Refrigerate until ready to use as a dip, dressing, or marinade.

Tried this recipe at a resteraunt and altered it a little bit at home. Its great with fresh Italian bread with garlic!! Basil is optional! Works great as an appetizer

1 bunch cilantro
1 bunch green onion (scallions)
2 cups light olive oil
1 cup red wine vinegar
2 large lemons, juice of
2 large limes, juice of
4 cloves of minced garlic
loaf bread

Steps:

  • Wash and de-leaf the cilantro.
  • Chop the cilantro (carefully, cause cilantro damages and bruises easily!).
  • Dice the green onions.
  • Combine all the ingrediants together in a serving dish or bowl.
  • Cut or rip the bread into bit size peices.
  • Chill for 10- 15 minutes.
  • Spoon over bread and enjoy!

Here's a dip for all you cilantro lovers out there! This has a wonderful cilantro flavor and is addictive! Serve with a sturdy corn chip or crackers. This recipe is from a good tennis buddy of mine-she loves cilantro as much as I do! There's never any left when she makes it for a gathering!

8 ounces cream cheese, softened to room temperature
1 1/2 bunches cilantro
1/2 cup water
0.5 (1/4 ounce) envelope unflavored gelatin (Knox)
1 chicken bouillon cube
2 tablespoons mayonnaise
2 teaspoons chopped jalapeno peppers (optional)

Steps:

  • Dissolve gelatin and bouillon cube in warm water.
  • Coarsely chop the cilantro.
  • Cream the cream cheese and mayonnaise.
  • Stir in the water/gelatin/bouillon mixture.
  • Add the jalapeños if desired.
  • Pour into a mold and chill until firm.

If you are a garlic lover, you will love this and adjust the garlic to your preference. My hubby & I usually share a plate of this and I'll have 5-6 pressed cloves of garlic on my side alone!

1 loaf Italian bread or 1 loaf French baguette
1/4 cup olive oil
4 cloves garlic (pressed)
balsamic vinegar
2 tablespoons parmesan cheese
1 tablespoon oregano (dried)

  • Pour Olive Oil onto salad sized plate.
  • Place pressed garlic all around the edges of the plate to form a ring of garlic.
  • Drizzle balsamic vinegar over garlic& olive oil.

2 cloves garlic, chopped
2 1/2 tablespoons water

3 tablespoons finely chopped white onions
