1 cup (220g) vegetable oil
2 eggs
1 tsp vanilla extract
1 cup (240g) milk
3/4 cup (150g) granulated sugar
3 cups (375g) all purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup (100g) brown sugar
1/2 tsp ground cinnamon
2 tbsp (30g) unsalted butter
1/4 cup (30g) chopped walnuts
1/4 cup (30g) chopped walnuts
3.5 oz (100g) chopped semi sweet chocolate

Steps:

  • Preheat oven to 350°F and grease the baking tin
  • Combine brown sugar, cinnamon, butter, and walnuts in a small bowl to create crumble.
  • Mix wet ingredients - oil, milk, eggs, vanilla - in a medium mixing bowl
  • Mix dry ingredients - all purpose flour, sugar, salt, baking powder - in a large mixing bowl
  • Pour wet ingredients into dry ingredients and whisk until just combined. The batter should be quite sticky. Fold in chocolate and walnuts with a spatula.
  • Pour batter into greased baking tin. Cover the top evenly with crumble.
  • Bake for 50 - 55 minutes until a toothpick inserted in the center comes out clean. Let cool for 15 minutes before slicing and serving.

½ cup brown sugar
1 ½ teaspoons ground cinnamon
½ cup dark brown sugar, or more to taste
½ cup chopped walnuts, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking dish.
  • Stir 1/2 cup brown sugar and 1 1/2 teaspoons cinnamon together in a small bowl. Stir dark brown sugar, walnuts, and 1 teaspoon sugar together in another bowl. Whisk flour, baking soda, baking powder, and salt together in third bowl.
  • Beat butter and white sugar together in a large bowl with an electric mixer until creamy. Mix sour cream into butter mixture. Add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next. Add vanilla with the last egg.

3 tablespoons cocoa powder
1/2 teaspoon cinnamon
1/3 cup sugar
3/4 cup butter, softened

1 orange, grated peel of

Steps:

  • Grease a 10" bundt pan.

This is the most moist coffee cake I have ever eaten. It is delicious right out of the oven, but is even better the next day. I wish it wasn't made from pre-packaged products, but it tastes so good, I am willing to forgive. I have made this with half of the oil substituted with half a cup of applesauce with great success. That is how I make it now. Pecans can be substituted for the walnuts as well, it is a pretty forgiving recipe.

1 (18 ounce) yellow cake mix
2 (3 ounce) packages instant vanilla pudding
1 cup water
1 tablespoon water
1 cup vegetable oil
4 eggs
1 cup brown sugar

1 ½ cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup sour cream

1/2 cup butter, softened
1-1/4 cups sugar
