CHIPOTLE CHEESEBURGER

A burger with a fiery twist! The classic cheeseburger gets a tasty update with the addition of GOYA® Chipotle Peppers in Adobo Sauce. These chipotle chiles are jalapeno peppers that have been dried, smoked, and then packed in a flavorful sauce made of tomatoes and other spices. Here, we add these special peppers twice--first to the mayonnaise, which gets spread on the buns, and then mixed into the meat before its grilled. And don't skip the red onions and tomatoes: they add a sweet, crisp bite.

¼ cup Goya Mayonnaise
1 chipotle pepper from a can of Goya Chipotle Peppers in Adobo Sauce, finely chopped
¼ cup sauce from a can of Goya Chipotle Chiles in Adobo Sauce
3 tablespoons Goya Minced Garlic, divided
1 tablespoon finely chopped fresh cilantro
Goya Adobo All-Purpose Seasoning, to taste
2 pounds ground beef (80% lean)
1 teaspoon Goya Vegetable Oil
6 slices Cheddar cheese
6 hamburger buns
6 (1/4 inch thick) slices red onions
6 (1/2 inch thick) slices tomatoes
6 lettuce leaves

Steps:

  • In medium bowl, stir together mayonnaise, 1 tbsp. chipotle sauce, 1 tsp. garlic, cilantro and adobo; cover and refrigerate until ready to use.
  • In large bowl, gently mix together beef, chopped chipotle, 3 tbsp. chipotle sauce, remaining garlic and adobo until combined. Divide meat into 6 portions; form into 1 inch-thick patties. (Take care not to over-handle meat or else it will toughen).
  • Prepare grill to medium-high heat, grease with oil (or heat oil in medium skillet over medium-high heat). Cook burgers, flipping once, until charred and cooked to desired doneness (about 12 minutes total for medium rare). Add cheese to patties about 5 minutes before taking them off grill.
  • To assemble, divide patties evenly among bottom buns; top with onion slice, tomato slice, lettuce and top bun spread with reserved chipotle mayonnaise.

How to make Tex-Mex Bacon Cheeseburger wtih Chipotle Ketchup

12 slices bacon, 4 slices chopped
EVOO, for drizzling
1 small yellow onion, chopped
2 jalapeno chiles, chopped
4 cloves garlic, chopped
1 1/2 pounds ground beef
1 tablespoon sweet smoked paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 tablespoon oregano, preferably mexican
Salt and pepper
4 slices smoked or sharp cheddar
4 slices pepper jack
4 crusty burger rolls, split and toasted
Lettuce leaves and red onion slices, for serving
1 cup tomato sauce
3 tablespoons pureed chipotle chiles in adobo sauce
2 tablespoons light brown sugar
2 tablespoons vinegar
1 tablespoon worcestershire sauce

Steps:

  • Burger Preheat the oven to 400 degrees . Place the 8 whole slices of bacon on a broiler pan. Bake in the oven until crisp, about 15 minutes. In a skillet, heat a drizzle of EVOO over medium-high heat. Add the chopped bacon and cook until crisp, about 5 minutes. Transfer to paper towels to drain, leaving 2 tbsp. of the bacon fat in the pan. Add the yellow onion, jalapenno and garlic to the pan and cook until softened, 7 to 8 minutes. Let cool. In a bowl, combine the beef, chopped bacon, onion mixture, paprika, cumin, coriander and oregano; season with salt and pepper. Form into 4 patties (making them thinner at the centers and thicker at the edges for even cooking). Add to the skillet and cook over medium-high heat, turning once, for 8 minutes for medium doneness. Add 1 slice of each cheese on top during the last minute or two of cooking. Layer each roll bottom with a burger, 2 bacon slices, lettuce, red onion, Chipotle Ketchup and a roll top. Chipotle Ketchup In a saucepan, combine all of the ingredients. Simmer over low heat until thickened, about 20 minutes. (Store in the refrigerator for up to 1 week.)

4 slices bacon, thick slices cooked until crispy and crumbled
1 1/2 lbs ground beef
6 ounces smoked cheddar cheese, grated (about 1 1/2 cups)
1 garlic clove, minced
salt and pepper
4 hamburger buns
2 tablespoons butter, melted
lettuce
tomatoes
onion, slices
pickle, slices
1/2 cup mayonnaise
1 -2 chipotle pepper (from can)
1 tablespoon adobo sauce
1/2 teaspoon sweet paprika

Steps:

  • For mayo: mix mayo, peppers, adobo sauce and paprika in a bowl and whick well.
  • Preheat Grill to High.
  • In a mixing bowl combine bacon, ground beef, cheddar cheese and garlic. Mix well.
  • Wet hands and shape mixture into 4 equal size patties. Place on a plate and refrigerate, covered, until ready to grill.
  • Season each patty on both sides with salt and pepper and place on grill. Close lid and grill for 4-6 minutes. When done, remove burgers to a clean plate and cover to keep warm.
  • Brush cut sides of hamburger buns with melted butter. Place bun, cut side down on grill surface and grill until toasted (1-2 minutes).
  • Serve burgers with lettuce, tomato, onion, pickle and a dollop of Chipotle Mayonnaise.
