1 tablespoon soy
1 tablespoon honey
1 tablespoon butter
2 tablespoons olive oil
12 ounces green beans, trimmed
Kosher salt
1 tablespoon minced garlic

Steps:

  • 1. Combine the soy, honey and 1 tablespoon water in a small dish and set near the stove. Set a shallow serving dish near the stove also. 2. in a 10 inch straight sided saute pan, heat the butter with the oil over medium-high heat. When the butter is melted, add the green beans and 1/2 teaspoon salt and toss with tongs to coat well. 3. Cook, turning the beans occasionally, until most are well browned, shrunken and tender, 7 to 8 minutes. Note that the butter in the pan will have turned dark brown. 4. Reduce the heat to low, add the garlic and cook stirring constantly with a heatproof rubber spatula, until the garlic is softened and fragrant, 15 to 20 seconds. 5. Carefully add the soy mixture. Cook, stirring until the liquid reduces to a glazey consistency that coats the beans, 30 to 45 seconds. 6. Immediately transfer the beans to the serving dish, scraping the pan with the spatula to get all of the garlicky sauce. Let sit 2-3 minutes for flavors to develop and serve.

Delicious and spicy green beans, just like your favorite Chinese restaurant. Be careful with the sesame oil, or it can overpower your beans. Prep time includes steaming the beans.

1 lb fresh green beans
vegetable oil cooking spray or 2 tablespoons peanut oil
1 teaspoon gingerroot, peeled, minced
1 garlic clove, minced
2 tablespoons water
1 tablespoon soy sauce
1 teaspoon cornstarch
1/2 teaspoon brown sugar
1/2 teaspoon sesame oil
1/4 teaspoon crushed red pepper flakes

Steps:

  • Wash beans, trim ends and remove strings.
  • Arrange beans in a vegetable steamer (or a colander that will sit nicely in saucepan), and place over boiling water.
  • Cover and steam 5 minutes.
  • Drain and plunge into cold water, drain again.
  • Coat a large nonstick skillet (or wok) with cooking spray or peanut oil and heat until hot.
  • Add gingerroot and garlic and saute 30 secs.
  • Add beans, saute 5 minutes.
  • Combine 2 tablespoons water and remaining 5 ingredients.
  • Stir well.
  • Add to beans, cook 30 seconds or until thoroughly heated, stirring constantly.

If you like the green beans served at most Chinese restaurants, I'm pretty sure you'll love these. I usually cook my green beans "country-style," but sometimes I just have to switch things up a bit. This is my own recipe for green beans that are a little sweet, a little savory and just deliciously different! They're a wonderful side dish to accompany fish, chicken or pork and even the children just might ask for more.

1 1/2 tablespoon(s) finely minced fresh garlic
1 tablespoon(s) finely minced ginger (may use bottled)
2 teaspoon(s) vegetable oil
1 teaspoon(s) sesame oil
2 tablespoon(s) soy sauce
2 teaspoon(s) rice vinegar
1 tablespoon(s) brown sugar, firmly packed
1/4 teaspoon(s) white pepper
1 pinch(es) red pepper flakes (or to taste)
1 pound(s) fresh green beans, cleaned and halved (or frozen, see *note)
1/3 cup(s) water
1/4-1/2 teaspoon(s) sesame seeds (optional)

Steps:

  • (*NOTE: Use only young, tender, very fresh green beans or frozen, thawed and drained. If using frozen, decrease water to 1/4 cup and decrease first simmer time to 3 minutes.)
  • Gather and prep all ingredients.
  • In a small bowl or jar, mix together garlic, ginger and oils; set aside.
  • In another small bowl, mix together soy sauce, vinegar, brown sugar, white pepper and red pepper flakes; set aside.
  • Add 1/3 cup water to a large non-stick skillet with a tight-fitting lid; bring water to a simmer over medium/medium-high heat; add green beans, cover , reduce heat to medium and simmer for 5 minutes.
  • Remove lid; simmer over medium-low heat until all water is evaporated.
  • Add garlic mixture; stir and cook for 1-2 minutes.
  • Add soy sauce mixture; stir and cook until most of the liquid is evaporated and beans are glazed.
  • Sprinkle with sesame seeds, if desired. Serve immediately. Cover and refrigerate leftovers.
