3 ancho chiles, stemmed, seeded and sliced
3 cascabel chiles, stemmed, seeded and sliced
3 dried arbol chiles, stemmed, seeded and sliced
2 tablespoons whole cumin seeds
2 tablespoons garlic powder
1 tablespoon dried oregano
1 teaspoon smoked paprika

Steps:

  • Place all of the chiles and the cumin into a medium nonstick saute pan or cast iron skillet over medium-high heat. Cook, moving the pan around constantly, until you begin to smell the cumin toasting, approximately 4 to 5 minutes. Set aside and cool completely.
  • Once cool, place the chiles and cumin into the carafe of a blender along with the garlic powder, oregano, and paprika. Process until a fine powder is formed. Allow the powder to settle for at least a minute before removing the lid of the carafe. Store in an airtight container for up to 6 months.

TACO SEASONING (WITHOUT THE CHILI POWDER)

Here is a recipe that uses only fundamental ingredients. Every other recipe I have found for taco seasoning has chili powder in it, which is a mix itself that has many of the same ingredients as taco seasoning, but in different proportions. This recipe takes chili powder out, but puts its ingredients and proportions back in. Now you have full knowledge and control of all of the ingredients. Adjust the red pepper to your heat preference. I would rate the heat level for this at around medium-hot, so adjust the red pepper as you see fit. I hope to see other variations spring out of this one.

1 vanilla bean (or 1 teaspoon vanilla extract)
3/4 cup sugar

1 heaping tablespoon instant espresso
Pinch salt
2 1/2 ounces bittersweet chocolate, the best quality possible, grated
2 cups whole milk
Vanilla ice cream
Chili powder

Steps:

  • Bring water to a boil in a saucepan. Split the vanilla bean and add to the boiling water. Add sugar, cinnamon, espresso, and a pinch of salt. Simmer for 1 minute and add the bittersweet chocolate. Whisk until it gets thick. Add milk and simmer 1 minute. Serve immediately with a dollop of vanilla ice cream and a sprinkling of chili powder on top.
  • You may make this ahead and reheat. Make sure to either whisk it or blend it in a blender to make it light and foamy before serving. (The classic Mexican chocolate was whisked with a special wooden tool called a 'molinillo'.)

A recipe I came across by accident in one of my cookbooks. I've never made chili powder before, nor have I looked on Zaar for a recipe. Heaven only knows why I haven't. The only chili powder that I can buy is very expensive (I have an allergy to black pepper and most brands say "spice" on the label which could mean anything) so I decided to try this one. I'll never buy chili powder again. You can adjust the heat by increasing or decreasing the amount of cayenne.

1 teaspoon ground cinnamon
1 navel orange, preferably organic, cut into 1 1/2-inch wedges (do not peel)
3 sprigs thyme
1 tablespoon unsulfured molasses

Steps:

  • Preheat oven to 425 degrees. Toss sweet potatoes and parsnips with reserved duck fat. Mix together salt, chili powder, and cinnamon. Sprinkle vegetables with seasoning mixture, and toss to coat well. Spread in a single layer on a rimmed baking sheet.
  • Roast vegetables for 15 minutes. Remove from oven, and toss in orange wedges and thyme. Roast, stirring halfway through, until vegetables are golden brown and tender, about 30 minutes. Drizzle with molasses.

2 large sweet potatoes
2 teaspoons chili powder

1/4 teaspoon cayenne powder

Vegetable oil, for deep-frying
Blue Cheese and Chive Dip, recipe follows
1 cup sour cream
1 cup mayonnaise, store-bought
1 teaspoon fresh lemon juice
1 cup crumbled blue cheese
1 1/2 tablespoons honey
1/2 bunch finely chopped chives, plus extra for garnish
Kosher salt and freshly ground black pepper

Steps:

  • Peel sweet potatoes and discard skin. Using the vegetable peeler or a mandoline make long thin chips by peeling/slicing lengthwise from top to bottom. Place in a bowl of ice water and chill for 1 hour. Drain in a colander and layout on paper towels and pat dry.
  • Combine chili powder, garlic powder, a pinch of cayenne, cumin and salt and pepper.
  • Heat vegetable oil in a large pot to 375 degrees F. Fry the potatoes in single layer batches for 2 to 3 minutes until golden brown. Lift chips out with slotted spoon and drain on paper towels. Season with the spice mixture and serve immediately. Serve as an appetizer with Blue Cheese and Chives dip.
  • Combine sour cream, mayonnaise, lemon juice, blue cheese, honey and chives in a medium bowl. Season with salt and pepper and garnish with chives. Serve with spicy and sweet potato chips.

Steps:

  • For the chili powder: Mix together the cumin, garlic powder, oregano, paprika, cayenne and salt.
  • For the bacon: Crisp the bacon in the olive oil in a saucepan over medium heat, about 10 minutes. Remove the bacon with a slotted spoon and set aside on paper towels. Keep the grease.
  • For the chowder: Brown the onions in the same saucepan, about 10 minutes. Sprinkle on the flour and chili powder. Cook for 1 minute. Add the chicken stock, corn and potatoes. Season with salt and pepper. Bring to a boil and simmer on medium-low until the potatoes are tender, about 20 minutes. Stir in the cream and remove from the heat.
  • Ladle the soup into bowls and garnish with cilantro and cheese. Sprinkle with the remaining chili powder and a squeeze of fresh lime juice. Serve with tortilla chips.

1 1/2 ounces dried red chilies, medium heat,preferably ancho and new mexican (the origianl recipe used 4 to 2 respectively)
2 -5 dried red chilies, of greater heat,to taste (like Chile de arbol or cayenne)
1 1/2-2 tablespoons cumin seeds, toasted and ground
1 1/2-2 tablespoons garlic powder
1 tablespoon ground oregano (preferably Mexican)

Steps:

  • Preheat oven to 300ºF.
  • Break the stems from all chiles, and remove the seeds.
  • Transfer chiles to a baking sheet, and arrange them in a single layer.
  • Place pan in heated oven.
  • (The chile de árbol or cayenne pods will be toasted first, so remove them after 4-5 minutes).
  • Bake the larger pods and additional 4-5 minutes, until they are well dried.
  • When cool enough to handle, break them into 2 or 3 pieces each.
  • Transfer pieces to a blender, and pulverize briefly, until you have powder.
  • Add remaining ingredients, and blend just until combined.
  • Store chili powder in a jar with a lid, for up to 3 months.

CHILI POWDER

To me, chili powder need not be superhot, but you can change that if you like-just add cayenne or some spicy dried chiles (most of the common dried red ones you find are pretty fiery). But it is easy enough to add heat at any stage of cooking or even at the table, whereas the warm, welcoming flavor of good chili powder is hard to come by. When you're buying dried chiles, look for those that are not brittle; they should retain some moisture and even be a bit soft.

4 ancho or 8 dried New Mexico chiles, stemmed and seeded
1 dried hot chile, like chile de árbol, stemmed and seeded, or cayenne to taste
2 tablespoons cumin seeds
2 tablespoons dried oregano, preferably from Mexico

Steps:

  • Combine the whole chiles and cumin seeds in a large skillet over medium heat. Cook, shaking the pan occasionally, until lightly browned and fragrant, just a few minutes; for the last minute of cooking, add the oregano.
  • Cool, then grind in a spice or coffee grinder to a fine powder; add cayenne at this stage if you're using it (some cooks also put in a bit of garlic powder). Store in a tightly covered opaque container for up to several months.
