PAN SEARED HALIBUT WITH TOMATO CAPER SAUCE image

Number Of Ingredients 9

4 (7 oz 1" thick) halibut fillets
coarse salt and fresh white pepper
2T canola oil
1/4 C dry white wine
2T fresh lemon juice
1/2 C unsalted butter cut into 1/2" slices
5 scallions, white part only
1T capers, drained and rinsed
1 lg ripe tomato, peeled, seeded and cut into 1/4" dice

Steps:

  • Pour oil from pan. Add wine and lemon juice. Raise heat to high to deglaze pan by scraping the bottom of pan with wooden spoon. Cook until reduces by half, about 2 mins. Reduce heat and stir in butter, 1 slice at a time. Add scallions, capers and tomato. Season with salt & pepper and pour over fish on platter.
