My mother-in-law has been gone for 20 years, but her recipe is still in great demand at family gatherings and potluck suppers. Serve this lasagna with salad, bread and a light dessert...and you'll satisfy the heartiest appetite.

12 uncooked lasagna noodles
1-1/2 pounds ground beef
1 medium onion, chopped
1 medium green pepper, chopped
2 to 3 jalapeno peppers, seeded and chopped
1 to 2 tablespoons chili powder
1 garlic clove, minced
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup frozen corn
1 can (8 ounces) tomato sauce
3 tablespoons tomato paste
1 can (2-1/4 ounces) sliced ripe olives, drained
4 cups shredded cheddar cheese

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, cook the beef, onion, peppers and chili powder. Add garlic; cook 1 minute longer. Drain. Add the soup, corn, tomato sauce, tomato paste and olives; simmer until heated through., Drain noodles. Spread 1/2 cup meat sauce in a greased 13x9-in. baking dish. Layer with four noodles, half of the remaining sauce and a third of the cheese. Repeat layers once. Top with remaining noodles and cheese. , Cover and bake at 350° for 30 minutes. Uncover; bake 15 minutes longer or until cheese is melted. Let stand for 15 minutes before cutting.

6 ounces cream cheese, softened
1 medium onion, chopped
8 green onions, chopped
2 cups shredded Mexican cheese blend, divided
2 garlic cloves, minced
3/4 teaspoon ground cumin, divided
1/2 teaspoon minced fresh cilantro
3 cups cubed cooked chicken
1/4 cup butter
1/4 cup all-purpose flour
1-1/2 cups chicken broth
1 cup shredded Monterey Jack cheese
1 cup sour cream
1 can (4 ounces) chopped green chilies, drained
1/8 teaspoon dried thyme
1/8 teaspoon salt
1/8 teaspoon pepper
12 flour tortillas (6 inches), halved

Steps:

  • In a large bowl, beat the cream cheese, onions, 1-1/2 cups Mexican-cheese blend, garlic, 1/4 teaspoon cumin and cilantro until blended. Stir in chicken; set aside. , In a large saucepan, melt butter. Stir in flour until smooth; gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in Monterey Jack cheese, sour cream, chilies, thyme, salt, pepper and remaining cumin. , Spread 1/2 cup of the cheese sauce in a greased 13x9-in. baking dish. Top with six tortilla halves, a third of the chicken mixture and a fourth of the cheese sauce. Repeat tortilla, chicken and cheese sauce layers twice. Top with remaining tortillas, cheese sauce and Mexican cheese. , Cover and bake at 350° for 30 minutes. Uncover; bake 10 minutes longer or until heated through. Let stand 5 minutes before cutting.

9 lasagna noodles
2 (15 ounce) cans chili without beans
15 ounces ricotta cheese
3 cups cheddar cheese, shredded
3 scallions, thinly sliced
1 (8 1/2 ounce) can whole kernel corn, drained
1 egg
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees.
  • Coat a 9" x 13" baking dish with nonstick cooking spray.
  • Cook the lasagna noodles according to the package directions; drain.
  • In a medium bowl, combine the ricotta cheese, 2 cups Cheddar cheese, 2 sliced scallions, the corn, egg, salt, and pepper; mix well.
  • Spread 3/4 cup chili over the bottom of the baking dish.
  • Place 3 lasagna noodles over the chili.
  • Place half of the ricotta mixture evenly over the noodles then top with half of the remaining chili.
  • Place 3 noodles over the chili then top with the remaining chili.
  • Place the 3 remaining noodles over the chili
  • Top with the remaining cheese mixture then top with the remaining chili.
  • Cover tightly with aluminum foil.
  • Bake for 30 minutes
  • Remove the foil and sprinkle the lasagna with the remaining 1 cup Cheddar cheese.
  • Bake for 10 more minutes.
  • Remove the oven.
  • Sprinkle with the remaining scallions; and let sit for 5 minutes before serving.
  • OPTION: For a spicier dish, add some hot pepper sauce and/or chili powder to the canned chili before assembling the lasagna.

1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 (12 ounce) box no-boil lasagna noodles
2 cups canned chili

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine processed cheese food and diced tomatoes and green chiles in a saucepan over medium heat; cook and stir until cheese dip is smooth, about 5 minutes.

1 lb ground beef or 1 lb ground turkey
2 (8 ounce) cans tomato sauce
1 (14 1/2 ounce) can black beans, drained and rinsed
8 3/4 cups whole kernel corn, undrained (1 can)
1 can chopped green chili, undrained
2 tablespoons chili powder
2 tablespoons of minced onions
1 teaspoon ground cumin
1 teaspoon garlic salt
1/2 teaspoon oregano leaves
6 (8 inch) flour tortillas, divided
2 cups shredded cheddar cheese, divided

Steps:

  • Preheat oven to 350°F In a large skillet, brown ground beef over medium high heat, drain. Add tomato sauce, beans, corn and green chiles. Stir in next 5 seasonings. Bring to a boil and reduce heat. Simmer, uncovered for 15 minutes. In a 2 quart baking dish, coated with cooking spray, place 3 flour tortillas to cover bottom. Overlap as needed. 9 lasagna noodles (from 16oz pkg)
1 lb lean ground chuck
1 onion, chopped
1 green pepper, chopped
1 teaspoon ground cumin, divided
1 teaspoon chili powder, divided
3/4 teaspoon salt, divided
1/4 teaspoon pepper
2 (10 ounce) cans enchilada sauce, divided
1 egg
2 (15 ounce) containers ricotta cheese
1 cup shredded monterey jack and cheddar cheese blend

Steps:

  • Cook noodles according to pkg directions, drain.
  • Preheat oven to 350.
  • Crumble beef into nonstick skillet.
  • Add onion, gr pepper, 1/2 tsp cumin, 1/2 tsp chili pwdr, 1/2 tsp salt & pepper.
  • Cook, stirring until beef is browned; drain
  • Stir in 3/4 cup enchilada sauce; remove from heat
  • In bowl lightly beat egg.

  • preheat oven to 375* combine chicken, green chilies, 1 cup salsa verde, and sour cream season generously with pepper, cumin, and chili powder. spread 1/3 of the chicken mixture in the bottom of a large baking dish layer with lasagna noodles, top with another layer of chicken mixture. then 1/2 of the crema, mozzarella and Mexican cheese, repeat with noodles, crema, mozzarella, Mexican cheese, cover with remaining, crema, and cheese. cover with aluminum foil and bake at 375* for 25 minutes, uncover and bake another 15 minutes let stand 10 minutes before serving.

3 lb chicken
1/2 gal water to cover
1 jar(s) frozen roasted green chili
2 Tbsp garlic powder
2 Tbsp onion powder
5 Tbsp chicken bouillon
1 Tbsp pepper
2 Tbsp italian seasoning
1 box lasagna noodles, no boil
1 bottle (16 oz container) cottage cheese
1 lb monterey jack cheese
1 large egg
salt to taste

Steps:

  • 1. Preheat oven to 350 degrees Place chicken, water, and seasonings into a five quart cooking pot.(Reserve 2 cups of broth)
  • 2. Grate monteray jack cheese and combine with the cottage cheese and one egg.
  • 3. Defrost the roasted green chili. I use a brand called Bueno and I usually use the mild flavoring so the kids can enjoy the lasagna also but feel free to use the different heats for your dish. Drain the liguid from the green chili and put the green chili into a blender. You are going to add the 2 cups of reserved broth to the chili to make the sauce. Blend until smooth. Also add any additional salt you'd like here.
  • 4. Once chicken is finished cooking debone the chicken if needed (i use drumsticks just because i feel it is easier to use). Then shred the chicken into strips and place in a bowl. Combine green chili sauce with chicken.
  • 5. In an 8x8 baking dish laddel a little chicken sauce over the bottom. Just enough to cover the bottom. place 2 lasagna noodles side by side on top of the chicken mixture.
  • 6. Now your layers are going to be noodles, cheese mixture, chicken sauce. You should be able to make 2-3 layers in your dish. Once completed cover with aluminum foil and bake for 30-40 mins. Remove foil and bake an addition 10 just to crisp the top.
  • 7. Serve and enjoy.

yellow mustard to taste
1 can(s) chili
5 flour tortillas
1 pkg chedder cheese

Steps:

  • 1. layer 1/4 of the can of chili on the bottom of a glass casserole dish ( I used my medium sized one)
  • 2. cut hotdogs lengthwise, then in half and layer, then squirt mustard to your taste (amount wise) over the hotdogs, then a layer of cheese, then a layer of tortilla's (I ripped them into pieces) Keep layering until you're out of ingredients or space, whichever comes first.
  • 3. Bake at 350 F. until bubbly and cheese is melted.

Steps:

  • In a 2-qt. non- stick saucepan, melt butter over medium heat.
  • Add onion, garlic, green pepper and ground turkey.
  • Cook, stirring and breaking up meat until brown, about 5 minutes.
  • Pour off drippings.
  • Stir in chili powder, tomato sauce, sugar and lentils.
  • Bring to boiling; reduce heat to low, cover and simmer for about 30 minutes, or until lentils are tender, stirring occasionally to keep mixture from sticking.
  • Meanwhile, cook lasagna according to directions on package; drain.

1 cup coarsely chopped zucchini
1/2 cup coarsely chopped onion
1 lb Italian sausage
2 garlic cloves, finely chopped
2 1/2 cups spaghetti sauce (canned or homemade)
3 cups beef broth
1 cup water
1 1/2 cups uncooked pasta, nuggets preferably radatore
2 tablespoons chopped fresh basil (optional)

Steps:

  • Preheat a 4 QT pot or casserole pan heat on medium.
  • Cook sausage with onion and garlic.
  • Cook till done (8-10 minutes) and drain.
  • Add spaghetti sauce, broth and water.
  • Bring to a boil.
  • Stir in pasta.
  • Reduce heat, and simmer uncovered for 7 minutes.
  • Stir zucchini into chili and cook for 4-5 minutes or until tender.
  • Remove from heat and stir basil into soup, if desired.
