6 ears corn, in their husks
1 cup unsalted butter, at room temperature
1 tablespoon chili powder
1 teaspoon cayenne pepper
Juice of 3 limes
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1 cup cotija cheese or feta cheese

Steps:

  • Heat a grill to medium-high heat. Grill the corn in their husks until the husks start to blacken, about 3 minutes per side.
  • Mix together the butter, chili powder, cayenne pepper, lime juice and some salt and black pepper in a bowl until incorporated.
  • Peel back the corn husks, leaving on to use as handles while eating. Rub the chili-lime butter all over the corn. Garnish with the cotija cheese.

2 pounds ground turkey breast
1 medium onion, chopped
3 cloves garlic, chopped
1 rounded tablespoon chili powder, a palm full
2 chipotles in adobo, chopped, found on Spanish/Mexican foods aisle or, 1/2 cup hot chipotle salsa may be substituted
Salt
1 cup Mexican beer
2 cups chicken stock
1 (28-ounce) can chopped stewed tomatoes
1 can red kidney beans, drained
1 (8 1/2-ounce) package corn muffin mix (recommended: Jiffy Mix) prepared to directions on box for corn cakes
1 1/2 cups shredded pepper jack cheese, 8 ounces
2 tablespoons butter

Steps:

  • Heat deep skillet or wide pot over medium high heat. Add oil and turkey. Crumble meat as it cooks, 3 minutes. Add the onions and garlic, chili powder, and chipotle. Cook another 5 minutes. Season with salt. Add beer and cook another minute, stirring to loosen any bits from the bottom of the pan. Add the stock, tomatoes, and beans and bring to a bubble. Reduce heat and simmer 10 minutes.
  • Heat a nonstick griddle pan over medium high heat. Mix batter and cheese together. Rub grill with butter, nesting the butter in a paper towel to hold on to it. Ladle the batter to make 3-inch cheese and corn cakes. Cook 3 minutes on each side, until golden. Transfer them to a plate and cover with foil to keep warm.
  • Serve bowls of chili with cheese-corn toppers -- like a spicy, corn topped chili pot pie.

Tomatillo-Avocado Salsa
12 tomatillo, husked, rinsed well
1 small onion, quartered
6 large garlic cloves, peeled
2 to 3 serrano chilies, stemmed
2 ripe avocados, peeled, diced
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
Tamales
1 6-ounce package dried corn husks
1 pound large poblano chilies
2 cups Masa Harina (corn tortilla mix)
6 tablespoons (3/4 stick) unsalted butter, room temperature
3 tablespoons sugar
2 1/4 teaspoons salt
1/2 cup canned low-salt chicken broth
5 cups frozen baby white corn kernels (about 25 ounces), thawed
3 cups (packed) coarsely grated sharp cheddar cheese
1 teaspoon baking powder
1/8 teaspoon ground black pepper

Steps:

  • Make Salsa:
  • Cook first 4 ingredients in heavy large skillet over high heat until charred in spots but still firm, turning occasionally, about 5 minutes. Transfer to processor; using on/off turns, chop coarsely. Add all remaining ingredients. Blend to coarse puree. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill.)
  • Make Tamales:
  • Selecting the largest and cleanest husks, place half of husks in large bowl; fill bowl with warm water. Weigh husks down with plate; soak husks until soft, separating occasionally, about 2 hours. Form 36 ties by tearing several husks into 1/2-inch-wide strips.
  • Char chilies directly over gas flame or under broiler until blackened on all sides. Place in medium bowl; cover tightly with plastic. Let stand 10 minutes. Peel, seed, and chop chilies.
  • To make dough, blend Masa Harina, butter, sugar, and 1 teaspoon salt in processor until coarse meal forms. Add broth and blend in (mixture will be crumbly). Transfer masa mixture to large bowl. Blend 2 1/2 cups corn, 1 cup cheese, baking powder, pepper, and 1 1/4 teaspoons salt in processor until coarse puree forms. Stir puree, then 2 1/2 cups corn into masa.
  • For each tamale, open 1 large softened husk. Place 1/3 cup tamale dough in center of husk. Make depression in center of dough; fill with 1 tablespoon chilies, then 1 tablespoon cheese. Using moistened fingertips, press dough over filling to cover; shape filled dough into 3-inch-long log parallel to 1 long edge of husk. Fold 1 long side of husk over filling and roll up to enclose. Tie ends of filled husks tightly with husk strips.
  • Add enough water to large pot containing steamer insert to reach bottom of insert. Layer tamales in steamer insert. Bring water to boil; cover pot. Steam until tamales are firm, removing insert and adding boiling water to pot to maintain water level as needed, about 1 hour. (Can be made 1 day ahead. Cool slightly. Refrigerate. Before serving, re-steam 45 minutes to heat through.) Serve tamales in husks with salsa.

Steps:

  • Preheat the oven to 400°F (200°C).
  • In a liquid measuring cup or medium bowl, whisk the eggs and milk until well-combined.
  • In a large bowl, add the flour, cornmeal, salt, baking powder, and baking soda, and whisk to combine.
  • Make a well in the center of the dry ingredients, then pour in the wet ingredients and whisk until smooth. Add the melted butter and stir to combine.
  • Grease a 9x13-inch (23x33-cm) glass baking dish with nonstick spray and line with parchment paper.

Truly the best soup I ever tasted. It's quick and easy and always turns out great. It's an adaptation of a recipe from a James McNair cookbook I found years ago and have been making it ever since. As you probably already know, if you like cheese soup to be as smooth as possible use processed cheese like Velveeta. Adding 1 cup of milk makes a richer soup, but it could be omitted and would still taste great.

1 cup onion, chopped
2 teaspoons garlic, minced (or pressed)

3 cups vegetable broth (or 2 Knorr vegetable bouillon cubes dissolved in 3 cups water)

  • melt butter in large saucepan over medium heat.
  • add onion and saute until soft, about 5 minutes.

1 small purple onion, cut up

lots cracked black pepper (I also added a little Tony's)

2 teaspoons garlic powder

1 teaspoon paprika
1 teaspoon cayenne pepper

2 thick slices bacon, finely cubed
1 tablespoon extra-virgin olive oil
1 onion, chopped
2 tablespoons all-purpose flour
1 teaspoon chili powder
3 1/2 cups organic chicken stock
2 cups corn kernels
2 cups Yukon gold potatoes, cubed
Sea salt
Freshly cracked pepper
1/2 cup heavy cream
1/2 cup crumbled cotija cheese
Lime wedges
Tortilla chips

Steps:

  • For the chili powder: Mix together the cumin, garlic powder, oregano, paprika, cayenne and salt.
  • For the bacon: Crisp the bacon in the olive oil in a saucepan over medium heat, about 10 minutes. Remove the bacon with a slotted spoon and set aside on paper towels. Keep the grease.
  • For the chowder: Brown the onions in the same saucepan, about 10 minutes. Sprinkle on the flour and chili powder. Cook for 1 minute. Add the chicken stock, corn and potatoes. Season with salt and pepper. Bring to a boil and simmer on medium-low until the potatoes are tender, about 20 minutes. Stir in the cream and remove from the heat.
  • Ladle the soup into bowls and garnish with cilantro and cheese. Sprinkle with the remaining chili powder and a squeeze of fresh lime juice. Serve with tortilla chips.

2 lbs ground chicken
2 garlic cloves
2 celery ribs
1 medium onion
1 carrot, finely chopped
1 jalapeno, seeded and finely chopped
S&P
1.5 t ground cumin
1 t ground coriander
6 oz beer
1/4 cup cayenne pepper hot sauce
15 oz can tomato sauce
8.5 oz Jiffy brand corn muffin mix
1/3 cup milk
1 large egg
2 scallions
3/4 cup crumbled blue cheese

Steps:

  • Heat a medium Dutch oven or large skillet over high heat. Add the olive oil, and the butter and melt together. Add the chicken and cook, breaking up the meat for 6 minutes. Add the garlic, celery, onion carrot and jalapeno. Season with S&P, cumin and coriander, and cook for 5 minutes. Add the beer and scrape up any browned bits from the bottom of the pan. Concentrate the flavor of the beer by reducing the mixture over medium heat for 2 to 3 minutes. Stir in the hot sauce and tomato sauce. Reduce to low heat and simmer the chili for 15 minutes. Prepare the corn muffin mix with the milk and egg according to package directions for corn pancakes. Stir the scallions and the blue cheese into the pancake batter. Heat a nonstick griddle pan or large skillet over medium heat. Nest a small piece of putter in a paper towel and rub over the pan. Drop rounded tablespoons of the batter into the pan. Cool the pancakes until bubbles form at the edges and then flip over, about 2 minutes per side until golden. Serve pancakes with each mug of chili.

1 cup cheddar cheese
1 8-oz. package cream cheese, room temperature
1 7-oz. can diced green chilies
2 tsp. chili power
2 tsp. ground cumin

Steps:

  • Preheat oven to 350º F. Mix all ingredients until well combined. Transfer to prepared large dish and bake until bubbling, about 30 minutes. Hint: grilling without the husk and basting with melted butter with your favorite herb or garlic will give you a very sweet ear of corn. Cook the corn until some of it is light to dark brown. The sugar in the corn caramelizes and you will not need to put anything else on it.

A grilled take on chili rellenos. Feel free to add black beans or other ingredients to the filling and make it your own. : )

4 large plum tomatoes, seeded and diced
1 small red onion, diced and divided
3 Tbsp extra-virgin olive oil
2 garlic cloves, minced and divided
1 tsp balsamic vinegar
1/4 tsp salt
1/4 tsp pepper
6 poblano peppers (or 8 anaheim peppers)
2 ears corn, husked
3/4 c goat cheese, crumbed (or feta)
1/2 c monterey jack cheese (or your choice of cheese)
1/2 c fresh cilantro, minced
fresh cilantro stems for garnish

Steps:

  • 1. Combine tomatoes, 1/2 onion, 2 tbsp. oil, 1 clove garlic, vinegar, salt and black pepper in a medium bowl; let salsa stand 15 minutes.
  • 2. Remove stems from poblano peppers by cutting each pepper about 1/2 inch from stem; remove seeds. Grill peppers over medium-hot coals until skins are charred on all sides. Place peppers in a large resealable plastic food storage bag; seal. Let stand 5 minutes; remove skin. Grill corn over medium-hot coals 6-10 minutes or until tender, turning every minute; cut kernels from cob.
  • 3. Combine corn, cheeses, minced cilantro, remaining 1/2 onion and 1 clove garlic in a medium bowl; mix well. Carefully fill each pepper with cheese mixture - making cut in side of pepper, if necessary. Secure opening with wooden picks that have been previously soaked in hot water for 15 minutes to prevent burning). Brush peppers with remaining 1 tbsp. oil; grill over medium coals 1 minute per side until cheese melts. Serve with salsa. Garnish with cilantro sprigs.

1 cup extra-sharp cheddar cheese, grated
1 (8 ounce) package cream cheese, softened
1 (7 ounce) can diced green chilies
2 teaspoons chili powder
2 teaspoons ground cumin

Steps:

  • Preheat oven to 350^F.
  • Butter 1 1/2 quart baking dish.
  • Mix all ingredients in a large bowl.
  • Transfer to baking dish.
  • Bake 30 minutes until bubbly.

4 c fresh or froaen corn kernels, drained
1 c grated cheddar cheese
1 6-oz. cream cheese, softened
1 7-oz. can diced green chilies
2 tsp chili powder
2 tsp ground cumin

Steps:

  • 1. Preheat oven to 350 degrees. Butter 1 1/2 quart baking dish. Mix all ingredients in large bowl, until well combined. Transfer to prepared baking dish. Bake unril bubbling about 30 minutes. Makes 6-8 servings.

CHILI-SPIKED GRILLED CORN ROLLED IN COTIJA CHEESE



Chili-Spiked Grilled Corn Rolled in Cotija Cheese image

Number Of Ingredients 6

6 ears of corn, shucked
1/4 cup mayonnaise
1/4 cup creme fraiche or sour cream
1/2 cup cotija cheese, freshly grated , or Pecorino-Romano cheese (about 2 ounces)
2 teaspoons chile piquin
Lime wedges, for serving

Steps:

  • Light a charcoal grill or preheat the oven to 500°. In a large pot of boiling water, cook the corn until crisp-tender, about 3 minutes. Drain well. Grill the corn, turning frequently, until well-browned, 10 to 12 minutes. Alternatively, roast the corn on a baking sheet for 10 to 15 minutes, turning the ears occasionally. Meanwhile, in a small bowl, mix the mayonnaise with the crème fraîche. Attach corn holders to each ear of corn, or press a bamboo skewer through the centers. Generously brush the mayonnaise mixture all over the ears and sprinkle with the cheese and chile piquín. Serve right away, with lime wedges.

1/4 cup milk
1/4 tsp garlic salt

  • In a large skillet, combine cream cheese and butter. Cook and stir over medium heat for 4-5 minutes, until smooth. Stir in the remaining ingredients. Cook for 5 minutes, until heated through.
