BARBECUE BEER CAN CHICKEN RECIPE BY TASTY
Here's what you need: brown sugar, onion powder, garlic powder, mustard powder, smoked paprika, pepper, dried tarragon, salt, whole chicken, beer, barbecue sauce

Steps:
- In a medium bowl, add the brown sugar, onion powder, garlic powder, mustard powder, smoked paprika, pepper, tarragon, and salt and stir to combine. Use half of the spice rub to season the entire chicken. Cover with plastic wrap and refrigerate for at least 2 hours or up to overnight.
- Preheat the grill to 350°F (190°C).
- Remove the chicken from the fridge and season with the remaining spice rub. our out half the can of beer. Place the half-filled can in the chicken cavity and stand it upright.
- Grill the chicken over indirect heat for 30-40 minutes. Baste the chicken with barbecue sauce and cook for another 10-15 minutes, until the internal temperature reaches 165°F (75°C).
- Remove chicken from the grill and let rest for 15 minutes before carving.

OVEN-ROASTED BBQ CHICKEN

Steps:
- Combine the barbecue sauce, peach preserves, garlic and hot sauce to taste in a medium saucepan and heat over medium heat until nice and hot, 8 to 10 minutes. Set aside.
- Preheat the oven to 400 degrees F.
- Drizzle some olive oil on 2 rimmed baking sheets and place the chicken thighs skin-side down. Roast for 25 minutes. Remove from the oven, brush some sauce all over the thighs, then use a spatula to flip them over, being careful not to tear the skin. Brush the tops with more sauce and return to the oven for 7 minutes more. Remove from the oven, brush on more sauce, and return to the oven for another 7 minutes. Remove from the oven, brush on more sauce, and increase the oven temperature to 425 degrees F.
- Continue roasting the chicken thighs until the sauce is starting to brown around the edges and the thighs are totally cooked through, 5 to 7 minutes more. Remove from the oven and let sit for at least 10 minutes before serving. Delicious!
CHICKEN MARYLAND ROASTED IN A BBQ BEER SAUCE

- For the rub mix the plain flour, smoked paprika, freshly ground pepper and salt all together in a bowl.
- Coat the chicken Maryland pieces on both sides with the rub and shake off the excess flour.
- In a thick bottom pan, add some olive oil and brown each side of the chicken.
- Transfer the chicken portions into a grill pan.
- While the pan is still on the heat, add a little beer to scrape off the browned bits of chicken skin, rub & fatty juices.
- Add the rest of the rub to the pan, and slowly stir in the beer.
- Allow the sauce to thicken and add some BBQ sauce too, to sweeten the flavour a tad.
- Take the sauce off the heat and pour over the chicken in the grill pan.
- Break some fresh asparagus sticks in halves and arrange them around the chicken.
- Pre-heat the oven to 180 deg C and place the grill tray on the middle shelf.
- Allow to bake for 25 minutes and grill for a few minutes to brown off the chicken, and release the fats from the skin. This adds a lot of flavour to the asparagus and makes them heavenly!!
BEER CAN CHICKEN WITH BEER AND MOLASSES BBQ SAUCE

- Rinse chicken thoroughly. Season inside and outside with salt, pepper, and garlic. Using can opener, open beer can. Place chicken upright on can, so can is inside chicken cavity. Place on a roasting pan and roast in a preheated 350 oven for 50 to 60 minutes or internal temperature of 150 degrees F. Glaze with BBQ sauce and finish cooking on grill.
- Combine all ingredients in sauce pot and simmer until reduced by 1/3 of the original volume. Cool completely and pack for transport.
MARYLAND CHICKEN

- Heat oven to 200C/180C fan/gas 6 and sit the chicken in a small roasting tin. Mix all the spices with 2 tsp salt using a pestle and mortar - try to grind the oregano finely so that it doesn't burn. Rub the spice mix over the chicken with some oil, and cover loosely with foil.
- Sit the potatoes in another tin, and put them in the oven together with the chicken. After 30 mins, remove the foil. Pierce the banana once in the skin with a knife and put alongside the potatoes, and roast with the chicken for another 30 mins.
- Check the potatoes are soft, then remove them and the banana from the oven. Leave the chicken to cook for a final 10 mins. Split the potatoes and banana, and scrape all the flesh into a saucepan. Add 1 tsp salt, half the butter and the milk, then mash together. Season.
- Check the chicken is cooked by piercing the inner thigh and ensuring the juices run clear. Lift to a serving platter and rest for 10 mins.
- To serve, spoon the mash into a dish, topped with knobs of remaining butter, and carve the chicken at the table. Serve with Creamed corn & bacon (recipe in 'goes well with', right).
