Whip up a Chicken and Potato Bake for an easy dinner any night of the week!

3 large russet potatoes, peeled and thinly-sliced into ¼-inch-thick rounds
1 large onion, diced
1 stick (8 tablespoons) salted butter, divided
2 cups diced, cooked chicken
Salt and pepper, to taste
1 (10.5 oz) can condensed cream of mushroom soup
1 cup milk
1 cup crushed Corn Flakes cereal (about 1 ¾ cups whole cereal before crushing)
Optional garnish: chopped fresh parsley

Steps:

  • Preheat oven to 375 degrees F. Grease a 9 x 13-inch casserole dish.
  • Melt 2 tablespoons of the butter in a small bowl. Toss with the Corn Flake crumbs and set aside to use for the topping later.
  • Arrange the potatoes in the bottom of the dish. Spread onion over top. Cut remaining 6 tablespoons of butter into thin pats. Dot the potatoes and onions with the pats of butter.
  • Place chicken on top of the butter. Season with salt and pepper.
  • In a small bowl, whisk together soup and milk. Pour the soup mixture evenly over the chicken.
  • Cover and bake for 1 hour. Remove the cover, sprinkle buttered Corn Flake crumbs over top, and bake for about 10-15 more minutes (or until topping is golden brown and potatoes are tender). Garnish with fresh parsley just before serving.

2 pounds small red-skinned potatoes, quartered
3 tablespoons extra-virgin olive oil
1/2 teaspoon cumin seeds (optional)
Kosher salt and freshly ground pepper
4 cloves garlic, finely chopped
2 tablespoons packed light brown sugar
1 lemon (1/2 juiced, 1/2 cut into wedges)
Pinch of red pepper flakes
4 skinless, boneless chicken breasts (1 1/2 to 1 3/4 pounds)
2 tablespoons chopped fresh cilantro or parsley

Steps:

  • Position a rack in the lower third of the oven and preheat to 425 degrees F. Toss the potatoes with 1 tablespoon olive oil, the cumin seeds, 3/4 teaspoon salt, and pepper to taste. Spread in a large baking dish and roast until the potatoes begin to brown, 25 to 30 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet over medium heat. Add the garlic and cook, stirring frequently, until lightly golden, about 2 minutes. Remove from the heat and stir in the brown sugar, lemon juice and red pepper flakes. Remove the baking dish from the oven, push the potatoes to the sides and arrange the chicken breasts in the middle. Season the chicken with salt and drizzle with the garlic mixture. Return to the oven and bake until the chicken is cooked through and the potatoes are tender, about 20 minutes.
  • Remove from the oven; transfer the chicken to a cutting board and slice. Add the cilantro to the baking dish and toss with the potatoes. Serve the chicken with the potatoes and lemon wedges. Drizzle with the pan juices.

2 potatoes (grated (11/2 cup frozen hash browns))
1 zucchini (pealed and grated)
1 tablespoon of olive oil
1/2 grated mozzarella (or your favorite cheese)
1 egg (beaten)
1 skinless and boneless chicken breast (diced)
1 red pepper (diced)
1/2 cup of roasted corn kernels (One ear or cob)
1 tablespoon of butter
1 tablespoon of olive oil
1 garlic clove (crushed)
1/2 tablespoon of tarragon (finely chopped)
2 tablespoons green onions (finely chopped)
1/2 cup of cream
Salt and pepper to taste

Steps:

  • Pre heat the oven at 350 F.
  • Grate the potatoes and zucchini, add the egg, salt, pepper, olive oil and the cheese, mix until wel combined. Take a cupcake tin, grease it well, filled with the potatoes mixture making a well in the middle with the back of a teaspoon. Cook for 35 minutes.
  • Put a large frying pan on a medium high flame, add the butter and olive oil, add the chicken and brown in all sides, add the garlic, tarragon and red pepper, let cook for 10 minutes.
  • On the mean time, roast your corn on the BBQ, for 5 minutes, take off and Place an ear of corn, cut side down, on a cutting board, holding it near the top. Using a sharp knife, start at the top and cut downward with a gentle motion. Continue cutting until all of the corn is removed. Add the corn to the chicken, season well with slat and pepper. Add the cream, cook for 5 more minutes and you are done.
  • Take out the baskets from the oven, take them off the mold. Fill with the chicken mixture. Garnish with the green onions, serve right away.

4 1/2 cups frozen hash brown potatoes (thawed)
6 tablespoons butter or 6 tablespoons margarine (melted)
1 1/2 teaspoons salt
1/4 teaspoon pepper

1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
2 teaspoons chicken bouillon granules
1 teaspoon Worcestershire sauce
1/2 teaspoon dried basil

1 cup frozen peas (thawed)

  • In a bowl, combine the potatoes,butter,salt and pepper.

2 tablespoons olive oil (divided)
¾ teaspoon lemon pepper seasoning
1 pound baby potatoes (quartered)
8 ounces carrots (about 2 medium, cut into ½" pieces)
½ medium onion (chopped)
3 cloves garlic (minced)
salt & pepper (to taste)

Steps:

  • Preheat oven to 400°F.
  • Drizzle 1 tablespoon olive oil over the chicken thighs and season with lemon pepper seasoning.
  • In a medium bowl, combine potatoes, carrots, onion, garlic, remaining olive oil, and salt & pepper to taste. Toss well.
  • Place vegetables on a non-stick or parchment-lined baking sheet. Nestle chicken pieces in between the vegetables.
  • Roast 45-50 minutes or until potatoes are tender and chicken reaches 165°F.

1-1/2 tsp salt

FILLING:
1/2 c chopped onion

2 tsp chicken bouillon granules
1 tsp worcestershire sauce
1/2 tsp dried basil
2 c milk
