This is a super-simple recipe that I got off the back of a fettucini box and tried on my kids during their "picky months"...They LOVED it! It's so simple, I'm almost afraid to post it...But I wanted to save it because the kids ask for it a lot.

8 ounces fettuccine pasta
1 1/4 cups prepared alfredo sauce (I use Classico Alfredo with sun dried tomatoes)
2 (14 ounce) cans cut green beans, drained
1 1/4 cups cooked chicken strips (I usually use Tyson frozen Chicken Fajita Strips)
2 tablespoons grated parmesan cheese
1 teaspoon fresh basil (finely chopped) or 1 teaspoon sage (finely chopped)

Steps:

  • Cook pasta according to package directions. Drain and butter liberally. Return to saucepan.
  • Meanwhile, heat Alfredo sauce, green beans and chicken in a medium saucepan. Stir. Toss well with hot pasta.
  • Transfer to serving dish. Sprinkle with cheese. Garnish with basil or sage.

1 pound fettuccine pasta
¼ cup butter
2 skinless, boneless chicken breast halves, cut into strips
1 clove garlic, minced, or more to taste
4 ounces sliced fresh mushrooms
1 green bell pepper, sliced
1 red bell pepper, sliced
½ cup butter
1 pint heavy whipping cream
½ cup grated Parmesan cheese
1 (8 ounce) package cream cheese, cut into pieces
salt and ground black pepper to taste
1 egg, beaten

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the fettuccine, bring back to a boil, and cook pasta over medium heat until cooked through but still firm to the bite, about 8 minutes. Drain.
  • Melt 1/4 cup butter in a large skillet over medium heat; cook and stir chicken and garlic in butter until chicken is browned. Add mushrooms, green bell pepper, and red bell pepper; cook and stir until vegetables are tender.
  • Melt remaining 1/2 cup butter with half the heavy cream in a large saucepan over medium heat. Gradually add Parmesan cheese, alternating with pieces of cream cheese, stirring constantly. Stir in remaining heavy cream, simmering until sauce has thickened, about 5 minutes. Stir chicken and vegetable mixture into cream sauce.
  • Transfer pasta to the saucepan and stir in egg. Cook and stir for 1 minute and serve immediately.

2 (9 ounce) packages frozen green beans, thawed
1 (2 7/8 ounce) can French fried onion rings
1/4 teaspoon fresh ground black pepper
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 350°F.
  • Combine Alfredo sauce, beans, 1/2 of the onions and pepper.
  • Place in a 1 1/2 quart baking dish and sprinkle with Parmesan.
  • Bake 25 minutes or until bubbling.
  • Top with remaining onions and bake 5 minutes.

2 can(s) cut green beans drained
6 oz cooked chicken strips
2 Tbsp parmesan cheese
2 Tbsp basil or sage leaves (optional)

  • 1. Cook pasta according to pkg directions drain Return to saucepan
  • 2. Heat sauce, green and Chicken in medium saucepan; stir occasionally. Toss well with hot pasta
