Baked Mediterranean Chicken Breasts with Tomatoes, Olives, Capers, and Garlic image

3 boneless skinless chicken breasts (extra fat removed)
1 1/2 tsp fresh thyme leaves (divided - plus more for garnish)
1 1/2 tsp fresh basil (chopped, divided - plus more for garnish)
1 tsp dried oregano (divided)
1/2 tsp garlic powder
Sea salt and freshly cracked pepper (to taste)
1 1/2 tbsp olive oil (divided)
1 1/2 cups of grape tomatoes
1 cup of Greek olives
1/2 sweet yellow onion (diced)
1 tbsp capers
3 cloves of garlic (sliced thinly)

Steps:

  • Preheat the oven to 350 degrees. Coat a baking dish with cooking spray.
  • Combine 1 teaspoon of thyme leaves, 1 teaspoon freshly chopped+ basil, 1/2 teaspoon dried oregano, and 1/2 teaspoon garlic powder in a small dish. Mix until well combined. Season both sides of the chicken with sea salt and freshly cracked pepper, to taste, then sprinkle the herb mixture evenly over both sides of each chicken breast.
  • Heat the 2 teaspoons of olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes, or until golden brown then flip. Cook for an additional 1-2 minutes.
  • While the chicken is cooking, combine the tomatoes, olives, onion, capers, sliced garlic, and remaining thyme, basil, and oregano, then season with sea salt and freshly cracked pepper, to taste, in a small bowl. Drizzle with remaining olive oil then toss to mix well.
  • Place the chicken breasts into the prepared baking dish then surround the chicken with the tomato mixture. Place into the oven and bake for 20-25 minutes, or until chicken is cooked through. Remove from the oven and let the chicken rest for 5 minutes before serving. Sprinkle with more fresh basil and thyme if desired. Enjoy.

1 pint grape tomatoes
16 Kalamata olives, pitted and halved
3 tablespoons drained capers, rinsed
3 tablespoons olive oil
4 (about 6 ounces each) boneless chicken breast halves, with skin
Coarse salt
Freshly ground pepper

Steps:

  • Preheat oven to 475 degrees. Toss tomatoes, olives, capers, and 2 tablespoons oil together in a medium bowl. Set aside.
  • Rinse chicken, and pat dry. Season both sides with salt and pepper. Heat a large ovenproof skillet over high heat until hot. Add remaining tablespoon oil; heat until hot but not smoking. Place chicken in skillet, skin sides down; cook until deep golden brown, about 4 minutes. Turn chicken over. Add tomato mixture to skillet.
  • Transfer skillet to oven. Roast until chicken is cooked through and tomatoes have softened, about 18 minutes.

Steps:

  • Heat oven to 425. Combine 2 or 3 chopped tomatoes, the juice of .5 lemon, 1 teaspoon capers and a handful of olives.
  • Lightly grease the pan with olive oil, then put the chicken in the pan and pour the tomato mixture over it.
  • Roast for 10 to 15 minutes, or until just cooked through.
  • Garnish: Chopped basil.

1/4 tsp black pepper, freshly ground
1/8 tsp table salt
1 1/2 cup(s) canned chicken broth, with lemon and herbs
2 Tbsp capers, drained and chopped
1 cup(s) uncooked couscous
1 cup(s) cherry tomato(es)

Steps:

  • Preheat the oven to 425°F. Spray a 9-inch square baking dish with nonstick spray; set aside. Sprinkle the chicken with the pepper and salt. Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the chicken and cook until browned, about 3 minutes on each side. Transfer the chicken to a plate. Add the broth and capers to the skillet, scraping any browned bits from the bottom of the pan. Bring the mixture to a simmer. Spread the couscous over the bottom of the baking dish. Pour the broth mixture over the couscous and stir to combine. Place the chicken on top of the couscous, then add the tomatoes. Cover the dish tightly with foil and bake until the chicken is cooked through and the broth is absorbed, about 20 minutes. Transfer the chicken and tomatoes to serving plates. Fluff the couscous with a fork and serve with chicken. Yields 1 chicken thigh with about 3⁄4 cup couscous mixture per serving. This recipe was originally developed by Pierre Franey in 1991 for the 60-Minute Gourmet column, a weekly feature dedicated to Times-worthy dishes that were easy, quick and inexpensive. This recipe fit the bill perfectly, and it still does. Just sauté the chicken breasts until they are lightly browned. Then add shallots and garlic, tarragon, tomatoes, vinegar, capers, white wine and tomato paste. Stir well and cook for about 9 minutes more. That's it.

6 tablespoons finely chopped shallots
