4 thin sliced boneless skinless chicken breasts (.75-1 lbs.)
1 (10 ounce) can condensed cream of mushroom & garlic soup
2 red capsicums or 2 red bell peppers, sliced
1/2 cup low-fat sour cream or 1/2 cup fat free sour cream
season salt
black pepper
1 whole wheat pasta, cooked and drained

Steps:

  • Spray a saute pan liberally with cooking spray and warm over medium heat.
  • Add red pepper and chicken to pan.
  • Sprinkle lightly with season salt.
  • Saute the red pepper and chicken until chicken is nearly done and pepper is softening.
  • Add sour cream and cream of mushroom soup.
  • Cook until heated through and sprinkle with black pepper.
  • Serve over pasta.

I've modified my grandmother's recipe for the 21st Century. I can't have a dinner party and not asked to make this simple dish. Enjoy!

Number Of Ingredients 6

4 chicken breasts, cut into strips (you could use thigh meat as well or chicken strips)
1 (8 ounce) container sour cream or 1 (8 ounce) container plain yogurt
1 box Ritz crackers (the 3 roll size or the minis which crush easier, you can substitute bread crumbs if you like) or 1 box Chicken In A Biscuit crackers (you can substitute bread crumbs if you like)
1 cup sweet butter
1/2 cup parmesan cheese
2 tablespoons tarragon (for color and flavor) or 2 tablespoons marjoram (for color and flavor)

Steps:

  • Clean chicken and pour sour cream over it and let marinate for about an hour in the refrigerator.
  • Meanwhile, take crackers and crush into medium course crumbs, mix in Parmesan cheese and Tarragon/ Marjoram.
  • Melt half of the butter and pour on the bottom of a 9x13 baking dish.
  • Dredge chicken in the cracker mixture and set in baking dish.
  • Repeat until complete.
  • Melt rest of butter and pour on top of chicken.
  • Bake@ 350 for 35-45 minutes or until golden brown.

I love sour cream and chicken and am always looking for a new way to fix it. This was well received by the family. All I served it with was some boiled new potatoes. Of course, I went a little heavy on the broccoli, but that's only because we love it so much!

4 boneless skinless chicken breasts
salt and pepper
1/2 cup butter
1/2 medium onion, chopped
1 tablespoon garlic, chopped
1 teaspoon paprika
2 (16 ounce) packages frozen broccoli, cooked & drained well
1 (16 ounce) carton sour cream
1/2 cup mayonnaise
1/2 cup parmesan cheese, grated

Steps:

  • Preheat over to 375 degrees F.
  • Season chicken with salt& pepper.
  • In small skillet, melt butter; add onion and garlic and saute for a few minutes.
  • Add paprika and mix.
  • Smush chicken in the mixture, coating well.
  • Place in shallow baking dish.
  • Spoon leftover onion mixture over breasts.
  • Bake in oven for 20 minutes.
  • Cover with foil and bake 10 more minutes.
  • Arrange drained, hot broccoli on top of and around chicken.
  • Mix sour cream and mayonnaise and spoon over all.
  • Sprinkle with Parmesan cheese.
  • Broil low in oven for 10 minutes.

1 cup reduced-fat sour cream
2 tablespoons minced chives
2 tablespoons lemon juice
2 teaspoons celery salt
2 teaspoons paprika

1 broiler/fryer chicken (2 to 3 pounds), cut up and skin removed

400 ml heavy cream
400 ml salsa

Steps:

  • Mix heavy cream and salsa in a casserole.
  • Wash the chicken breasts and dry them with a paper towel.
  • Lay them into the sauce and cover them with the mixture.
  • Bake 1 hour at 400° F or until chicken is tender and cooked through.
  • If you don't eat meat you can substitute the chicken with feta and bake it for approx 20 minutes.
  • Serve with white wine, pita bread, rice or/ and fresh garden salad.
