This sumptuous layered bar cookie is iced with cherry frosting. Cut them small to make bite size morsels that melt in your mouth. You may want to double the frosting recipe.

1 ¼ cups all-purpose flour
⅓ cup packed brown sugar
½ cup butter or margarine
2 eggs
1 ¼ cups packed brown sugar
1 tablespoon all-purpose flour
½ teaspoon baking powder
⅛ teaspoon salt
1 cup flaked coconut
½ cup chopped walnuts
½ cup maraschino cherries, chopped
1 cup confectioners' sugar
2 tablespoons butter
½ teaspoon vanilla extract
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together 1 1/4 cup flour and 1/3 cup brown sugar. Rub in 1/2 cup butter using your hands or a pastry blender. Press into an ungreased 9 inch square pan.
  • Bake for 15 minutes in the preheated oven, or until lightly browned at the edges. Set aside. In a medium bowl, beat eggs until light. Mix together the brown sugar, flour, baking powder, and salt; stir into the eggs. Mix in the coconut, nuts, and cherries; spread the batter evenly over the baked crust.
  • Return to the oven, and bake for 25 minutes, or until brown. Set aside to cool. In a small bowl, mix the confectioners' sugar, 2 tablespoons butter, vanilla, and water until smooth. Add more liquid if necessary to make a more spreadable mixture. Spread over cooled bars before cutting into squares.

Steps:

  • Preheat oven to 375°. In a large bowl, cream the butter, sugars and extract until light and fluffy. Combine flour and salt; gradually add to creamed mixture and mix well. Press onto the bottom of an ungreased 13x9-in. baking pan. Bake 8-10 minutes or until edges begin to brown., Meanwhile, in a large saucepan, combine the brown sugar, butter, corn syrup, cream and salt. Bring to boil over medium heat, stirring constantly. Reduce heat; cook and stir 4 minutes or until slightly thickened., Remove from the heat. Stir in 2-1/2 cups walnuts, cherries and vanilla; spread over crust. Bake 15-20 minutes or until bubbly. Sprinkle with baking chips and remaining walnuts; lightly press into filling. Cool on a wire rack. Cut into bars.

3 cups chopped pretzels
¾ cup brown sugar

1 (8 ounce) package cream cheese, softened
1 cup powdered sugar
1 (8 ounce) container frozen whipped dessert topping, thawed

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, combine crushed pretzels, brown sugar and butter. Spread half of this pretzel mixture in bottom of 13x9-inch baking pan. Bake 10 minutes. Cool.
  • While the pretzel mixture is baking, combine the cream cheese and powdered sugar in large mixing bowl. Fold in whipped topping.
  • Spread half of this cream cheese mixture on top of the cooled baked pretzel crust. Spread 2 cans of LUCKY LEAF Cherry Fruit Filling over the cream cheese layer, then spread the remaining half of the cream cheese mixture over the pie filling.

1 cup medium grind coconut
1/2 cup chopped walnuts
1/2 cup candied cherries or 1/2 cup maraschino cherry (at least)
1 cup icing sugar
2 tablespoons butter or 2 tablespoons margarine
1/2 teaspoon vanilla
1 tablespoon water

Steps:

  • FIRST LAYER: Crumble ingredients together well.
  • Press into ungreased 9 x 9 inch pan.
  • Bake in preheated 350F oven for 15 minutes.
  • SECOND LAYER: Beat eggs slightly; add remaining ingredients in the order listed.
  • If using maraschino cherries, drain well.
  • I prefer using candied cherries- at Christmas, I use a mixture of red& green.
  • Spread over first layer& return to oven for 25 minutes.
  • Let cool completely.
  • TOP LAYER: Beat ingredients in a small bowl, adding more water if necessary to make a more spreadable mixture.
  • This makes a minimum amount of icing to spread over top.

140g butter , melted, plus extra butter for the tin
100g self-raising flour
175g caster sugar
175g porridge oat
1 egg , beaten
100g glacé cherry , halved
50g dark chocolate

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter and line the base and sides of a 22cm square cake tin: cut 2 strips of baking parchment the width of the tin and longer than the base and sides, and fit into the tin each way and up the sides. This will make lifting it out easier.
  • Mix together the flour, sugar and oats in a bowl. Add the egg, melted butter and cherries, and mix well. Tip into the tin and spread evenly with a fork.
  • Bake for 20-25 mins until golden brown. Cool in the tin for 10 mins, then carefully lift out using the paper and place on a board. Mark, but don't cut, 4 lines each way to make 16 squares. Melt the chocolate in the microwave for 1 min, then drizzle over the squares. When the chocolate has set, cut the squares down the marked lines.

1 cup softened butter
1/2 teaspoon almond extract
1 egg
2 cups flour
3/4 cup coarsely chopped candied red cherries
1/4 teaspoon salt
1/3 cup coarsely chopped green candy covered plain chocolate candies
1 cup powdered sugar
5 -6 teaspoons warm water

Steps:

  • Heat oven to 300.
  • Mix sugar, butter, almond extreact and egg in a large bowl until well blended.
  • Stir in flour, 1/2 cup cherries, and salt.
  • Spread in ungreased 15 1/2 x 10 jelly roll pan.
  • Sprinkle on top the remaining cherries and the candies; press lightly.
  • Bake until edges are very light brown, 30 to 35 minutes.

1 cup boiling-hot water

2 cups all-purpose flour
1 1/4 teaspoons baking soda
1/2 teaspoon salt
2 sticks (1 cup) unsalted butter, softened
1 1/4 cups packed dark brown sugar
4 large eggs
1 cup semisweet chocolate chips
Garnish: confectioners sugar

Steps:

  • Toss fresh or frozen cherries and any juices with granulated sugar and almond extract in a bowl and let stand at least 2 hours. Drain cherries, reserving 1/2 cup cherry juices.
  • Preheat oven to 350°F. Butter and flour a 13- by 9-inch metal baking pan, knocking out excess flour. Whisk hot water and cocoa powder in a small bowl until smooth, then whisk in reserved cherry juices and vanilla.
  • Sift together flour, baking soda, and salt into another bowl.
  • Beat together butter and brown sugar in a large bowl with an electric mixer at medium speed until pale and fluffy, about 3 minutes, then add eggs 1 at a time, beating well after each addition. Add flour mixture and cocoa mixture alternately in batches, beginning and ending with flour mixture and mixing at low speed until blended (batter may look curdled).
  • Stir in cherries and chocolate chips and pour batter into pan, smoothing top. Bake in middle of oven until a wooden pick inserted in center comes out clean, 35 to 40 minutes. Cool cake completely in pan on a rack, then cut into squares. Just before serving, dust with confectioners sugar.

Puffed Wheat Squares are a Canadian treat that should be tried by all! Chewy and chocolatey, they're a perfect sweet treat!

Number Of Ingredients 8

5 cups puffed wheat (see note)
1/2 cup dried cherrries, coarsely chopped (optional)
4 Tablespoons unsalted butter
1/2 cup corn syrup
1/2 cup white sugar
2 Tablespoons brown sugar
4 Tablespoons cocoa powder
1/2 teaspoon vanilla extract

Steps:

  • Lightly oil a 9x9 baking pan and set aside (you can also line the bottom of the dish with parchment paper to make removing the squares even easier.
  • Stir together puffed wheat and dried cherries in a large bowl. Set aside.
  • Combine butter, corn syrup, white and brown sugar and cocoa powder together in a small saucepan. Bring to a boil over medium heat (mixture must come to a boil or the syrup will not set and your squares will fall apart). Remove from heat and stir in vanilla extract.
  • Pour cocoa syrup mixture over puffed wheat and cherries. Stir until puffed wheat is completely coated. Press mixture into the prepared baking pan and let set at room temperature for at least an hour. Cut into squares and serve.

1 (6 ounce) package cherry gelatin
1 1/2 cups boiling water
1 (21 ounce) can cherry pie filling
1 1/4 cups carbonated lemon-lime beverage, chilled
whipped topping (optional)

Steps:

  • In a bowl, dissolve gelatin in water.
  • Stir in pie filling; mix well.
  • Slowly stir in soda (mixture will foam).
  • Pour into an 8-inch square dish.
  • Cover and refrigerate until firm.
  • Cut into squares.
  • Garnish with whipped topping if desired.

1 package (10 ounces) large marshmallows
3 tablespoons butter
1 teaspoon almond extract
6 cups crisp rice cereal
3 cups salted roasted almonds, divided
1-1/2 cups dried cherries, divided

Steps:

  • In a Dutch oven, combine marshmallows and butter. Cook and stir over medium-low heat until melted. Remove from the heat; stir in extract. Stir in the cereal, 1 cup almonds and 1 cup cherries. , Press into a greased 13-in. x 9-in. pan. Sprinkle with remaining almonds and cherries; gently press onto cereal mixture. Cool. Cut into squares.
