1 pound (2 cups) fresh cherries, pitted (or one 10-ounce bag frozen cherries, thawed and patted dry)
3 large eggs
1 1/4 cups half-and-half
1/2 cup 4% cottage cheese
1/2 cup plus 2 tablespoons granulated sugar
1/2 cup all-purpose flour
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 375 degrees F. Butter an 11-inch-round baking dish and spread the cherries evenly over the bottom.
  • Whisk the eggs, half-and-half, cottage cheese, 1/2 cup granulated sugar and the flour in a medium bowl until combined. Pour the batter over the cherries, sprinkle with the remaining 2 tablespoons granulated sugar and scatter the sliced butter on top.
  • Bake until puffed and golden around the edges, about 40 minutes. Cool slightly, then dust with confectioners' sugar.

Steps:

  • Preheat oven to 350 degrees F.
  • Using a blender, combine the milk, 1/3 cup sugar, eggs, vanilla, salt and flour, and blend.
  • Lightly butter an 8-cup baking dish, and pour a 1/4-inch layer of the blended mixture over the bottom. Set remaining batter aside.
  • Place dish into the oven for about 7-10 minutes, until a film of batter sets in the pan but the mixture is not baked through. Remove from oven (but don't turn the oven off, yet).
  • Distribute the pitted cherries over the set batter in the pan, then sprinkle with the remaining sugar. Pour the remaining batter over the cherries and sugar.
  • Bake in the preheated oven for 45 to 60 minutes, until the clafouti is puffed and brown and a knife inserted into the center comes out clean.
  • Sprinkle with powdered sugar and serve warm.

3 tablespoons sliced almonds
3 tablespoons unsalted butter, melted
2/3 cup all-purpose flour
2/3 cup plus 2 teaspoons sugar
1/4 teaspoon salt
4 large whole eggs
3 large egg yolks
1 1/4 cups heavy cream
1 vanilla bean, split and scraped
Finely grated zest of 1 lemon
1 pound fresh, ripe cherries, stemmed and pitted
1/4 cup kirsch or brandy (optional)

Steps:

  • Preheat oven to 350 degrees. Place sliced almonds in a single layer on a rimmed baking sheet. Toast until they are fragrant, about 5 minutes. Transfer to a wire rack to cool. Use 1 tablespoon melted butter to coat six 4 1/2-by-1 3/4 inch round baking dishes, and set aside.
  • Place flour, 2/3 cup sugar, salt, and almonds in the bowl of a food processor fitted with the metal blade; pulse until mixture is finely ground. Transfer to a medium bowl. Add eggs, egg yolks, 3/4 cup cream, vanilla scrapings, and lemon zest, and whisk to combine. Place in refrigerator, and let rest 30 minutes.
  • Place cherries in a medium bowl; add kirsch, if using, and let macerate 30 minutes. Divide among dishes. Whisk remaining butter into batter; pour batter over cherries, and place dishes on a rimmed baking sheet. Bake 20 minutes. Sprinkle with remaining sugar; bake until tops are golden and bubbling, 15 to 20 minutes. Transfer to a wire rack to cool.
  • Whip remaining 1/2 cup cream until soft peaks form. Serve clafoutis warm or at room temperature, topped with whipped cream.

¼ teaspoon kosher salt
2 large eggs
1 cup half & half
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350°F (180°C).
  • Pit the cherries by placing them on top of an empty glass bottle, one at a time. Using a chopstick, push through the cherry to remove the pit. Set aside.
  • In a medium bowl, mix together the flour, sugar, and salt. Add the eggs and stir well to combine. Add the half-and-half and vanilla and whisk until smooth.
  • Melt the butter in an 8-inch (20 cm) cast-iron skillet over medium heat. Once the butter has melted, remove the pan from the heat.

1 1/2 pounds (about 5 cups) fresh ripe cherries, stemmed and pitted if desired
2 tablespoons kirsch
6 tablespoons sugar
3 large eggs
1 vanilla bean, scraped
Pinch of salt
2/3 cup sifted unbleached all-purpose flour
3/4 cup low-fat yogurt
2 tablespoons milk
2 teaspoons confectioners' sugar (optional)

Steps:

  • Toss the cherries with the kirsch and 2 tablespoons of the sugar, and let sit for 30 minutes. Drain over a bowl.
  • Preheat the oven to 375 degrees. Butter a 10- or 10 1/2-inch ceramic tart pan or clafouti dish. Fill the dish with the drained cherries.
  • In a medium bowl, beat the eggs with the remaining sugar and the seeds from the vanilla bean. Add the salt and the liquid from the cherries, and combine well. Slowly beat in the flour, and whisk until smooth. Add the yogurt and milk, and combine well. Pour over the cherries, scraping out all of the batter with a rubber spatula.
  • Bake in the preheated oven for 30 to 40 minutes until the top is browned and the clafouti is firm and puffed. Press gently on the top in the middle to see if it's firm. If not, return to the oven for five minutes.
  • Remove from the oven and cool on a rack. When the clafouti is warm or cool, sift on the powdered sugar. Serve warm or at room temperature.

1 ounce grated Manchego cheese

150g caster sugar
50ml kirsch
225g cherries, pitted and kept whole
¼ tsp almond extract (optional)
2 large eggs and 2 egg yolks (freeze the whites for another recipe)
200ml double cream
45g plain flour
butter, for the dishes
1 tbsp icing sugar
vanilla ice cream, to serve

Steps:

  • Simmer 50g of the caster sugar and the kirsch together in a pan over a medium heat until the sugar has dissolved. Stir in the cherries and simmer for 1-2 mins until softened slightly and you have a syrup. Pour into a bowl and set aside to cool.
  • Whisk the almond extract, if using, with the eggs, yolks and remaining 100g caster sugar in a bowl until smooth. Whisk in the cream and flour to combine. Leave for 10 mins to rest. After that, it should be the consistency of pancake batter.
  • Heat the oven to 180C/160C fan/ gas 4. Butter six shallow ceramic dishes (ours were 125ml, 10cm round and 2.5cm deep.) Divide the cherries between the dishes, pour over the batter, then drizzle the cherry juices over the top.
  • Put on a baking sheet and bake for 25 mins until golden brown. (They will deflate once out of the oven.) Dust the icing sugar over the top and serve warm with the ice cream.

1 stick unsalted butter, room temperature
2/3 cup confectioners' sugar
1 large egg yolk
1 cup all-purpose flour, plus more for surface
Coarse salt
2 large eggs
2/3 cup creme fraiche or sour cream
1/4 cup granulated sugar
1 teaspoon pure vanilla extract
Table salt
6 ounces sour cherries (about 1 1/4 cups), halved and pitted

Steps:

  • Make the crusts: Beat butter and confectioners' sugar with a mixer on medium speed until smooth. Add yolk, and mix until combined. Add flour and 1/2 teaspoon coarse salt; mix until just combined. Press dough into a disk, and wrap in plastic. Refrigerate for at least 1 hour or up to 3 days.
  • Set six 4-inch tart rings on a parchment-lined baking sheet. Roll out dough to 1/8-inch thickness on a lightly floured surface. Cut out six 5 1/2-inch circles, rerolling scraps as needed. Press dough into bottoms and up sides of tart rings, patching any holes or tears. Trim excess dough flush with edges of rings using a knife. Prick bottoms of tart shells all over with a fork, and refrigerate until firm, about 1 hour. Meanwhile, preheat oven to 325 degrees.
  • Bake until pale gold, pressing down dough if puffing, about 20 minutes. Let cool.
  • Make the filling: Raise oven temperature to 375 degrees. Gently whisk together eggs, creme fraiche, granulated sugar, vanilla, and a pinch of table salt. Divide mixture evenly among tart shells, and carefully drop cherry halves, cut sides down, into each. Transfer to oven, and bake until just set, 17 to 19 minutes. Let cool.

2 tablespoons whiskey
1/4 teaspoon Angostura bitters
Unsalted butter, for the baking dish
1 1/2 cups half-and-half
4 large eggs
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon finely grated lemon zest
1/2 teaspoon finely grated orange zest
1/4 teaspoon kosher salt
1 tablespoon coarse sugar

Steps:

  • Preheat the oven to 375 degrees F. Toss the cherries, whiskey and bitters in a bowl and let sit at room temperature, stirring occasionally, about 30 minutes. Drain the cherries and reserve the liquid. Butter a 10-inch pie plate and arrange the cherries in the plate in a single layer.

  • Put the flour in a mixing bowl, then slowly add the eggs, whisking until smooth. Whisk in the sour cream; then slowly whisk in the milk to make a thin, smooth batter. Season with salt and pepper.
  • Gently pour the batter over the tomatoes, then sprinkle the top with the remaining cheese. Bake in a preheated oven at 375 degrees for 40-45 minutes or until set and puffy. Cover top with foil if it browns too much before the batter sets. If serving hot, let the clafoutis cool a few minutes before cutting, or let cool to room temperature.

Nonstick cooking spray
1/2 cup pancake mix
1/2 cup sugar
1 1/2 cups buttermilk
3 tablespoons butter, melted and cooled
1/2 teaspoon vanilla extract
3 eggs
1 (12-ounce) package frozen pitted cherries, thawed and drained, juices reserved
1 cup French vanilla ice cream
Confectioners' sugar, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-inch deep pie dish with nonstick cooking spray and place on a baking sheet.
  • In a medium bowl, combine the pancake mix and sugar. In a large measuring cup, whisk together the buttermilk, butter, extract and eggs. Whisk the liquid ingredients into the dry. Evenly distribute the cherries in the bottom of the pie dish. Pour the batter over top of the cherries and bake until the center is set and the edges are golden, 45 minutes to 1 hour.
  • Remove from the oven and cool to room temperature, about 1 hour, before slicing. To serve, place ice cream in a microwave-safe bowl and microwave on high for about 45 seconds until the ice cream is melted. Stir in 1 tablespoon of the reserved cherry juice. Place a slice of the clafoutis onto a desert place. Drizzle with the sauce and dust with confectioners' sugar.

1/2 stick butter, melted, plus more for baking dish
1/2 cup all-purpose flour, plus more for baking dish
1 pound fresh cherries, pitted and cut in 1/2 or 1 box frozen cherries
1/2 cup sliced almonds, toasted
1/2 cup sugar
Pinch salt
4 eggs
1 cup milk
1 teaspoon vanilla extract
1 lemon, zested
Powdered sugar
Ice cream or whipped cream, for garnish

Steps:

  • Preheat oven to 325 degrees F.
  • Generously butter and flour a 7 by 5-inch baking dish or 6 individual, wide, flat gratin dishes.
  • Add the cherries, in an even layer, to the prepared baking dish.
  • In the bowl of a food processor, add the almonds, sugar, flour and salt and pulse until they are coarsely chopped. In a large bowl, using a whisk, combine the eggs, milk, vanilla and lemon zest until they are homogeneous. Add in the melted butter and the flour mixture and whisk until smooth. Pour over the cherries.
  • Bake in the preheated oven for 35 to 40 minutes, or until the center is set and the top is golden brown.
  • Dust with powdered sugar and serve with ice cream or whipped cream or both!

CHERRY AND KIRSCH CLAFOUTIS

A recipe by Amanda Laird, found in a New Zealand newspaper Some interesting info I found.... A traditional Limousin clafoutis contains pits of the cherries. According to baking purists, the pits release a wonderful flavor when the dish is cooked. If the cherry pits are removed prior to baking, the clafoutis will be milder in flavor..... I'd like to make one with the pits and another without to find out which is better.

3 cups fresh cherries or 3 cups canned cherries, drained
1/4 cup kirsch
1 teaspoon lemon zest, finely grated
1 tablespoon butter, softened
1 cup whole milk
1/3 cup caster sugar
3 eggs
3 teaspoons vanilla extract
1/4 teaspoon salt
1/2 cup plain flour
icing sugar, to serve

Steps:

  • Preheat oven to 180C or 356F.
  • Combine the cherries, kirsch and lemon and let stand for a 1/2 hour.
  • Grease a 20cm or 8 in round baking dish with the softened butter.
  • Place the milk, sugar, eggs, vanilla, salt and flour into a blender and blend for 1 minute.
  • Pour the mixture into the dish then spoon over the cherries and juice.
  • Bake for about 45 minutes or until puffed and golden.
  • Dust liberally with icing sugar, serve hot.

  • Preheat oven to 150 lower for fan oven. Beat together eggs, sweetener, almond essence, vanilla essence and fromage frais until well mixed.
  • Halve and stone the cherries and scatter over the base of a large flan dish. Pour over the egg mixture and bake for 50-60 mins. When dish is cooked it should feel springy and have started to brown at the edges
