Creamy Pesto Pasta Salad with Chicken, Asparagus and Cherry Tomatoes image

A tangy buttermilk dressing ties together this pasta salad studded with asparagus, chicken, artichokes, and cherry tomatoes!

1 large garlic clove, minced
⅓ cup mayonnaise
⅓ cup sour cream
⅓ cup buttermilk
3 tablespoons rice wine vinegar
2 tablespoons salt
1 pound bow tie (farfalle) pasta
8 ounces trimmed asparagus, cut into 1-inch lengths
1 pound cooked chicken breast strips, pulled into bite-size pieces
8 ounces cherry tomatoes, halved and lightly salted
1 (14 ounce) can whole artichoke hearts, drained, cut into sixths
3 green onions, thinly sliced
½ cup pine nuts, toasted in a small skillet over low heat until golden
¼ cup pesto (homemade or refrigerated prepared variety)

Steps:

  • Mix dressing ingredients in a small bowl; keep chilled until ready to toss with salad. (Store in clean jar with lid.)
  • Bring 1 gallon of water and 2 Tbs. of salt to boil in a large soup kettle. Add pasta and, using package times as a guide, boil, stirring frequently and adding asparagus the last 1 minute, until just tender. Drain thoroughly (do not rinse) and dump onto a large, lipped cookie sheet. Set aside to cool while preparing remaining salad ingredients.
  • Place all salad ingredients (except buttermilk dressing) in a large bowl or transfer to a gallon-size zippered bag. (Can be covered and refrigerated several hours at this point.) When ready to serve, add dressing; toss to coat and serve.

The cherries can be ordered on-line these days, which makes it much easier for those of us living where cherries are not readily available. Regular milk can be substituted for buttermilk, if necessary.

1 pound fresh or frozen pizza or bread dough, thawed according to package directions
1 1/2 cups grated mozzarella cheese
2 teaspoons garlic flakes
2 cooked chicken breast halves, diced (about 2 cups)
1 cup sliced mushrooms
1/2 cup sliced pitted kalamata olives
1/2 cup crumbled feta cheese
1 teaspoon dried oregano
1 recipe Cherry Tomato Salad, recipe follows
2 cups halved red cherry or grape tomatoes
2 cups halved yellow cherry tomatoes
1/4 cup freshly chopped basil leaves
2 tablespoons red wine vinegar
2 teaspoons olive oil
1 teaspoon Dijon mustard
Salt and coarsely ground black pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Roll dough out into a large rectangle and transfer to a large baking sheet. Top dough with mozzarella cheese, to within 1/2-inch of the edges and then sprinkle garlic flakes all over cheese. Top with chicken, mushrooms and olives. Sprinkle feta cheese over top and then sprinkle oregano over everything. Bake 10 to 12 minutes, until crust is golden brown and cheese melts.
  • Serve with Cherry Tomato Salad.
  • In a medium bowl, combine tomatoes and basil. In a small bowl, whisk together vinegar, oil and mustard. Add mixture to tomatoes and toss to combine. Season, to taste, with salt and black pepper.

2 teaspoons coriander seeds
2 cups heirloom cherry tomatoes
1/4 red onion, thinly sliced
5 tablespoons extra-virgin olive oil
2 tablespoons fresh ginger juice
2 tablespoons fresh basil leaves, thinly sliced
1 tablespoon fresh mint leaves, thinly sliced
1 tablespoon sherry vinegar
1 clove garlic, minced
Kosher salt and freshly ground black pepper

5 fresh basil leaves, torn
1 clove garlic, sliced
2 boneless, skinless chicken breasts

Steps:

  • For the marinated cherry tomatoes: Toast the coriander seeds in a small skillet over medium heat until fragrant, 3 to 5 minutes. Transfer to a mortar and pestle and crack. Allow to cool.
  • Bring a medium pot of water to a boil. Make a small "x" incision at the bottom of each tomato. Blanch the cherry tomatoes for 1 minute and immediately transfer them to a large bowl filled with ice water (an ice bath). Allow the tomatoes to cool, and then peel the tomatoes and discard the skins.
  • In a medium bowl, mix together the coriander, peeled tomatoes, onions, olive oil, ginger juice, basil, mint, vinegar, and garlic. Season with salt and pepper, cover, and allow the tomato mixture to sit at room temperature for 4 hours.
  • For the chicken: Combine the olive oil, basil and garlic in a large bowl. Add the chicken breasts, making sure to coat all sides with the marinade. Cover and let marinate for at least 2 hours in the refrigerator.
  • Preheat the grill to medium heat. Remove the chicken from the marinade and pat dry with a towel. Sprinkle with salt and pepper. Add chicken breasts and grill for around 5 minutes on each side, depending on how hot your grill is, or until cooked through.
  • Serve the chicken with some of the marinated tomatoes on top.

2 Granny Smith apples

1 cup thawed frozen pitted sweet cherries, juices reserved
1/2 cup low-sodium soy sauce
1/2 cup dry white wine
1/4 cup packed light brown sugar

1 teaspoon freshly grated ginger
1 clove garlic
1 1/2 pounds skinless, boneless chicken breasts
Vegetable oil, for brushing
2 cups sauerkraut, drained and rinsed
1/2 12-ounce package wonton wrappers, thinly sliced
6 cups chopped romaine lettuce
1 red bell pepper, julienned
1 green bell pepper, julienned
3 scallions, julienned
2 medium carrots, julienned
1 cup snow peas, trimmed and julienned
1 cup drained sliced water chestnuts

Steps:

  • Make the dressing: Whisk the cherries, 1 tablespoon reserved cherry juice, the soy sauce, peanut butter, vinegar, vegetable oil and sesame oil in a bowl. Set aside.
  • Make the chicken: Put the cherries, 3 tablespoons reserved cherry juice, the soy sauce, white wine, brown sugar, Worcestershire sauce, ginger and garlic in a blender and puree until the cherries and garlic are finely chopped. Pour the marinade into a large resealable plastic bag. Pierce the chicken all over with a fork. Add to the bag with the marinade, seal and refrigerate at least 20 minutes or up to 8 hours. Preheat a grill to high. Brush the grates with vegetable oil. Remove the chicken from the marinade, brushing off any excess. Grill the chicken, covered, until the juices run clear, 5 to 7 minutes per side. Transfer to a cutting board and let rest 5 minutes.
  • Meanwhile, prepare the salad: Preheat the oven to 350 degrees F. Soak the sauerkraut in a bowl of ice water 10 minutes; drain, rinse and squeeze out the excess water. Arrange the wonton strips in a single layer on a baking sheet and bake until crisp, about 5 minutes. Toss the sauerkraut and romaine with half of the dressing in a bowl; divide among plates. Top with the bell peppers, scallions, carrots, snow peas and water chestnuts. Slice the chicken and serve with the salad. Top with the crispy wonton strips. Serve with more dressing on the side.   • 1. In a large bowl, combine the chicken, cherries, celery, apple and pecans. In another bowl, combine the mayonnaise, buttermilk, salt and pepper; add to chicken mixture and mix well. Spoon 1/2 cup chicken salad onto each croissant. Yield: 7 servings. 13 points per serving

I'm a southern cook so I season to taste. When I don't have an exact measurement, don't worry, just add spices a little at a time so your palate will tell you what tastes yummy! You can make a sandwich or put it over a bed of lettuce. My favorite is on a croissant. Just try it...you'll love it!

3 large chicken breasts (with ribs)
1/3 c red onion, diced
1 stalk celery, chopped
1/2-3/4 c dried cherries, chopped
1/2-3/4 c unsalted cashew pieces
enough mayonnaise to bind chicken
2-3 pinch sri lankan curry
salt and white pepper to taste

Steps:

  • 1. Boil 3 large chicken breasts for 35-45 minutes. Cool and remove skin. Pull chicken off of bone and tear into bite-size pieces.
  • 2. In a large bowl add the chicken pieces, diced red onion, chopped celery, dried cherries and cashew pieces.
  • 3. Add enough mayonnaise to bind the ingredients together without making it goopy. I start with 1/2 cup and then add a little more at a time so I don't overdo it.
  • 4. Add the curry. You may want to add it in slowly so you can taste test the strength of the curry. I add 2-3 pinches, mix, then more if I want it stronger. (I use the Sri Lankan curry blend which contains coriander, cumin, fennel, fenugreek, cloves and other spices. You can get it at www.spice-appeal.com if you're interested or use your own type of curry.)
  • 5. Add salt and white pepper to taste. I use white pepper because I love it but you can use black if you prefer.

1/4 cup fresh lemon juice
3 tablespoons Dijon mustard
3 tablespoons chopped fresh dill
2 tablespoons honey
1 garlic clove, minced
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 Perfect Pan-Roasted Chicken Thighs , fat from pan reserved
4 thick slices rustic bread, crusts removed, torn into 3/4" pieces
1 pound fresh cherries, stemmed, pitted, and lightly crushed
3 heads butter lettuce, cored and torn into pieces
4 radishes, thinly sliced
1 tablespoon chopped chives

Steps:

  • Whisk first 5 ingredients in a small bowl. Gradually whisk in oil. Season to taste with salt and pepper. Stir; set aside. Remove crispy chicken skin and tear into pieces. Pull chicken meat from bones and tear into pieces; discard bones. Reserve skin and meat.
  • Heat chicken fat in a large skillet over medium heat. Add bread to skillet and toast, turning frequently, until golden and crisp, about 2 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt and pepper while still hot.
  • Place chicken meat in a large bowl. Add cherries, butter lettuce, radishes, and chives and drizzle with vinaigrette; toss to coat. Divide salad among plates and garnish with croutons and chicken skin.

Number Of Ingredients 20

2 or 3 c stewed, roasted or canned chicken use how ever much you want in your chicken salad 2 or 3 cups
2 stalk(s) celery 2 stalks of celery
1 c chopped pecans 1 c. of chopped
1 can(s) sliced water chestnuts chopped 1 sm. can of sliced water chestnuts chopped
1 c . raisins
1/20oz. can(s) pineapple tidbits drained
1/4 to 1/2 c sugar
1 c light mayonnaise more if needed
alfalfa sprouts if desired for sandwich
makes 3 loaves, each 9 inches
1-1/3 pkg (1 tablespoon plus 1 teaspoon) active dry yeast
3 c lukewarm water
1 Tbsp honey
5 c all-purpose flour, plus extra for dusting
3 c rye flour
1-1/2 Tbsp salt
1 tsp chopped fresh rosemary or thyme leaves, or 1/2 teaspoon dried
3-1/2 oz unsalted butter, softened, plus extra for greasing
1-1/2 c chopped pecans
1-1/2 c fresh cherries cut in half or quartered

Steps:

  • 1. CHICKEN SALAD Make sure everything is cut into bite size. Mix well and chill for 2hrs. Cut you bread in thin slices and toast the bread lightly, add a small amount Alfalfa of sprouts to your bread and then add your chicken salad and another small amount of Alfalfa sprouts to the top of your salad and then add another slice of bread. Cut in half and lay on a plate This is one of the best sandwich's I have ever had.
  • 2. PECAN CHERRY BREAD Dissolve the yeast in 1/2 cup of lukewarm water. Put the remaining water, the honey, both flours, the salt, the rosemary or thyme, and the butter in a mixer fitted with a dough hook. Mix for about 5 minutes. Add the dissolved yeast and continue to knead in the mixer for about 10 minutes, until the dough looks smooth and elastic and comes away from the sides of the bowl and comes together into a ball. Add the pecans and walnuts and continue to knead briefly just until the nuts look fully incorporated. Remove the bowl from the mixer and take out the dough hook, scraping any pieces of dough back into the bowl. Cover the bowl with a clean, damp kitchen towel and leave at warm room temperature until the dough approximately doubles in volume, about 45 minutes. Turn out the dough onto a lightly floured work surface. With clean hands, knead the dough briefly, pushing it down and away, then folding it back on itself and giving it a quarter turn, just until it deflates and any air pockets have been removed. Butter and flour three 9-by-5-inch loaf pans. With a sharp knife, carefully cut the dough into 3 equal pieces and shape each into a cylinder 9 inches long. Place the cylinders in the prepared pans. Put the pans on a tray, cover with a clean, damp kitchen towel, and leave to rise at warm room temperature until the dough as at least doubled in volume, about 1 hour. About 20 minutes before the loaves are done rising, position the oven rack in the middle of the oven and preheat the oven to 375 degrees F. Bake the loaves until they look nicely browned, about 20 minutes. Then, reduce the temperature to 325 degrees F. and continue baking about 25 minutes longer, until the loaves are a deep brown color and a loaf carefully tipped out of its pan sounds hollow when tapped on its bottom. Remove all 3 loaves from the pan and transfer to wire racks to cool. To serve, use a serrated bread knife to cut into slices 1/3 to 1/2 inch thick and toast as desired.
