1 package Betty Crocker™ julienne potatoes
2 1/2 cups boiling water
2/3 cup milk
1 1/2 cups cubed fully cooked ham
1 cup shredded Swiss cheese (4 ounces)
1/2 cup Progresso™ plain bread crumbs

Steps:

  • Heat oven to 400°F. Stir together Potatoes, Sauce Mix and boiling water in ungreased 2-quart casserole. Stir in milk, ham and cheese.
  • Bake uncovered 50 minutes; sprinkle with bread crumbs. Bake 10 to 14 minutes longer or until top is golden brown.

This can also be baked in a 10-inch pie plate or an 11 x 7-inch baking dish, also use as much shredded cheese as deired. Use the frozen potato patties for this, not hash browns.

1 (15 ounce) package frozen potato patties (slightly thawed)
1 tablespoon melted butter
2 cups shredded swiss cheese (can use more cheese)
2 cups finely chopped cooked ham
1 (10 ounce) can sliced mushrooms, well drained
4 large eggs
2 tablespoons whipping cream or 2 tablespoons 18% table cream
1 teaspoon seasoning salt (or to taste)
black pepper
1/4 teaspoon paprika

Steps:

  • Grease a 9-inch baking dish.
  • Cut and fit the potato patties into the bottom of the pie plate; press firmly, then brush with melted butter.
  • Bake at 425 degrees for about 20 minutes; remove from oven.
  • Reduce oven temperature to 350 degrees.
  • Sprinkle with grated cheese, ham and mushrooms.
  • In a small bowl whisk together eggs with whipping cream, seasoned salt and black pepper, then pour over the pie.
  • Bake for 30-40 minutes or until center is set.
  • Let stand for 10 minutes.

6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir potatoes into ham mixture; transfer to the prepared baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
  • Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
  • Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
  • Pour sauce over ham and potatoes.
  • Sprinkle bread crumbs atop casserole.
  • Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

Lifted off another recipe website (can't remember which one) when I was looking for low-fat recipes to make. It involves many of my favorite things all together in one dish.

2 cups mashed potatoes (it's easier to use instant potatoes, and to make them with chicken broth instead of milk to cut calo)
2 tablespoons prepared mustard (optional)
1/2 cup low fat cottage cheese
1 lb cooked ham, cubed
2 slices low-fat cheddar cheese, crumbled (or just get some of the pre-grated in a package. Again, easier.)

Steps:

  • Preheat oven to 350.
  • Mix mashed potatoes and mustard (personally, I prefer to leave the mustard out, but that's just me.) Spread evenly in bottom of non-stick 8x8 baking pan.
  • Add ham cubes in layer on top of potatoes.
  • In electric blender, blend cottage cheese and cheddar cheese until fairly smooth. Spread over ham.
  • Bake for 30 minutes.

1 (30 ounce) package frozen hash brown potatoes, thawed
1 (12 ounce) package pre-cooked ham steak, diced
2 cups shredded sharp Cheddar cheese, or more to taste
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
½ cup butter, melted
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Stir hash browns, ham, Cheddar cheese, onion, cream of chicken soup, sour cream, and butter in a large bowl; season with salt and black pepper. Transfer mixture to prepared baking dish and cover with aluminum foil.
  • Bake until bubbly and cheese is melted, 45 minutes to 1 hour. Remove foil and continue baking until brown, about 15 minutes more.

1 loaf (1 lb) French bread, cut into 1/2-inch slices
2 tablespoons Dijon mustard
8 oz thinly sliced cooked ham
8 oz thinly sliced Swiss cheese
4 eggs
2 cups milk
1/4 cup grated Parmesan cheese
1/4 cup Progresso™ plain bread crumbs
2 tablespoons chopped fresh parsley
3 tablespoons butter or margarine, melted

Steps:

  • In ungreased 13x9-inch (3-quart) glass baking dish, arrange half of the bread slices, overlapping as needed. Brush bread in dish with mustard. Top evenly with ham and Swiss cheese, overlapping as needed. Top with remaining bread slices, arranging them over first layer of bread slices to make sandwiches.
  • In medium bowl, beat eggs and milk with wire whisk until well blended. Carefully pour over sandwiches. Cover; refrigerate at least 1 hour but no longer than 12 hours.
  • Meanwhile, in small bowl, mix Parmesan cheese, bread crumbs, parsley and butter. Set aside.
  • Heat oven to 375°F. Sprinkle crumb topping over casserole. Bake uncovered 30 to 35 minutes or until sandwiches are puffed and golden brown.

2 cups cubed fully cooked ham

1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup sour cream
1/2 cup chopped green pepper
1/2 cup chopped onion

Steps:

  • In a greased 13x9-in. baking dish, layer half the noodles, ham and cheese. , In a large bowl, combine the soup, sour cream, green pepper and onion; spread half over the top. Repeat layers. Bake, uncovered, at 350° for 40-45 minutes or until heated through.
