CHEESY PIEROGI CASSEROLE
This is my family's favorite casserole. No matter when my mom makes this it will not last to the next day.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly crispy, about 10 minutes.
- In the meantime, fill a large pot with lightly salted water and bring to a rolling boil. Cook kluski at a boil until nearly tender, about 7 minutes. Drain.
- Drain bacon slices on paper towels. Add onion to the bacon drippings in the skillet. Cook and stir over medium heat until softened, about 5 minutes. Add cabbage; reduce heat to low and simmer for 15 minutes.
- Stir cottage cheese, Muenster cheese, dill, and salt into noodles. Add bacon, onion, and cabbage and mix well. Turn all ingredients out into a 3-quart baking dish.
- Melt butter in the empty skillet and mix in bread crumbs to coat. Top noodle mixture with bread crumb mixture; sprinkle paprika on top.
- Bake in the preheated oven until golden brown on top and heated through, 25 to 35 minutes.

CHEESY PIEROGI CASSEROLE
This family friendly Cheesy Pierogi Casserole is layered with cheddar pierogies, creamy sauce, crisp bacon, scallions, mozzarella and cheddar cheese. This hearty casserole feeds six and takes less than fifteen minutes to get in the oven.

Steps:
- Preheat oven to 375 degrees. Grease 9×13 inch casserole dish (or equivalent sized dish)
- Layer half of the frozen pierogies in the casserole. Spoon half of the alfredo sauce on top. Sprinkle with half of the crispy chopped bacon, half of the chopped green onions, and half of the cheese. Layer the rest of the pierogies on top and spoon the rest of the alfredo sauce on top. Sprinkle with the rest of the chopped bacon, green onions and remaining cheese. Season with kosher salt and black pepper to taste.
- Cover with foil and bake for 15 minutes. Remove foil and continue baking for another 20-25 minutes or until the cheese is melted and casserole is bubbly and cooked through. Garnish with chopped fresh parsley.

I made this cheesy Pierogi casserole to go with my Sauerkraut and Sausage dinner. Steps:
- 1. Add 3 tablespoons of butter to a large skillet, heat till hot then add sliced onions and peppers and sauté until crisp tender about 5 or 6 minutes. Remove from skillet and set aside.
- 2. Spray a 9X13 X2 inch casserole dish with cooking spray and set aside till needed.
- 3. Now add 4 tablespoons of butter to large skillet, I used a 16 inch size skillet, & heat till hot over medium high heat, then add in the frozen pierogis, and stir to prevent sticking and cook until they become lightly browned on both sides, then add the sautéed onions and peppers back into skillet and stir to blend together then remove from heat.
- 4. Add 1/2 of pierogi mixture into prepared casserole dish, then sprinkle with a teaspoon of basil.Top with half of bacon crumbles.
- 5. Now add half of Pasta Sauce. I'm showing 2 jars but I decided to only use one jar. Top with half the Shredded & sliced fresh mozzarella cheese.
- 6. Now Add the remaining pierogi mixture and top with the last of the vodka sauce & remaining teaspoon of dried basil.
- 7. Add the sliced fresh mozzarella, shredded mozzarella the real bacon bits, and add shredded sharp cheddar on top.
- 8. Bake in preheated 350 degrees F oven for 35 to 40 minutes or until hot and bubbly and cheese has melted. Remove from oven, and allow to sit 10 to 15 minutes before serving.
- 9. Serve and enjoy. This is all that remained for my final picture. It was really good and very cheesy, you can omit some of the cheese if you prefer less cheese, but FRESH MOZZARELLA really does make it cheesy & gooey good.
