SHRIMP & GRITS W/ TASSO GRAVY image

Yield 2 Entree Bowls

Number Of Ingredients 9

Yellow Grits 1 cup
16/20 Shrimp 12ea (P&D)
Vidalia Onion 1ea (small dice)
Red&Green Bell Pepper 1 ea (small dice)
Tasso 1 cup (small dice)
Bourbon 3 floz
Chicken Stock 4 cups
Heavy Cream 1 cup
S&P TT

Steps:

  • Add stock to pot and bring to boil, then add grits. Cook for appx 4-8 mins, season w/ S&P. In hot saute pan add onions, peppers, tasso cook for 3-4 mins then deglaze pan w/ bourbon. Add shrimp for 1 min then cream let reduce appx 3 mins (until sauce thickens)Spoon grits in bowl then add shrimp&gravy mixture over top.
