CHICKEN FAJITA PIZZA

Chicken Fajita Pizza is exactly as it sounds - everything you love about chicken fajitas tossed onto a cheesy golden crust!

Number Of Ingredients 13

2 cups all-purpose flour
4 tsp yeast
1 tsp kosher salt
1/2 tsp sugar
1 cup warm water
1 cup shredded cooked chicken (We like to use ready-to-eat rotisserie chicken from the supermarket.)
1/2 cup your favorite salsa (Note that in this case, jarred salsa works better than homemade.)
1/2 onion, thinly sliced (Preferably with a mandolin.)
1 bell pepper, gutted and sliced into spears
1 TBSP extra virgin olive oil
1 TBSP fajita seasoning (Preferably homemade.)
2 cups shredded Mexican blend or mozzarella cheese
Fresh parsley or cilantro, for garnish

Steps:

  • Place the flour, yeast, salt, and sugar into a large mixing bowl; whisk to combine the ingredients.
  • Set and lock the mixing bowl to the mixer. Attach the dough hook and turn the mixer on low. Slowly add the warm water and let the dough mix for about a minute, or until a nice ball of dough has formed. (Note: You can knead this dough by hand on a lightly floured surface, it will just take a bit longer to form.)
  • Place the dough ball in a large, lightly oiled bowl. Cover it tightly with plastic wrap, and let it sit for an hour.
  • Preheat the oven to 450º F.
  • Place the chicken and vegetables into a large mixing bowl. Drizzle with olive oil, add the seasoning, then toss to evenly coat the ingredients; set aside.
  • Lightly oil your pizza pan. Transfer the dough out onto it, and work the dough up to the edges of the pan until your pizza dough is fully formed.
  • Spoon the salsa over the center of the pizza and evenly spread it out, leaving about 1/2-1 inch of room for a crust to form. Evenly sprinkle the shredded cheese over the salsa, and finally, transfer the seasoned chicken and veggies to the pizza, spreading them out.
  • Bake the pizza for 12-15 minutes, or until the crust is golden in color. Remove the pizza from the oven and let it sit for about 5 minutes before cutting into it. Garnish with fresh herbs, and enjoy!

1 tablespoon olive oil
1 lb chicken breast, skinned, boned, cut into 2 x 1/2 inch strips
1 -2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 cup thinly sliced onion
1/2 cup green bell pepper, strips
1/2 cup red bell pepper, strips
pizza dough, for 12 inch pizza (you can use refrigerated pizza crust if you like(I like Pizza Dough #8497 by Steve Sickenberger)
1/2 cup mild salsa
2 cups monterey jack cheese, shredded

Steps:

  • Heat oil in large skillet.
  • Add chicken and cook, stirring frequently until lightly browned.
  • Stir in seasonings.
  • Add onions and bell peppers, cook an additional minute or so until vegetables are crisp-tender.
  • Heat oven to 425°.
  • Sprinkle pizza pan with semolina flour and press dough into pan.
  • Pre-bake dough until it is a very light golden brown, about 6 minutes.
  • Remove from oven and scatter chicken over crust, spoon salsa over chicken, spread vegetable mixture over that, and finally, top with cheese.
  • Bake for another 15 minutes until crust is golden brown.

3/4 pound boneless skinless chicken breasts, cut into 1/2-inch strips
1 medium onion, halved and thinly sliced
1 medium green pepper, julienned
2 tablespoons olive oil
2 teaspoons chili powder
1/2 teaspoon garlic powder
1 prebaked 12-inch pizza crust
1/2 cup picante sauce
2 cups shredded Monterey Jack cheese

Steps:

  • In a large skillet, saute the chicken, onion and green pepper in oil until chicken juices run clear; drain. Sprinkle with chili powder and garlic powder., Place crust on an ungreased 12-in. pizza pan. Spoon chicken mixture over crust. Top with picante sauce; sprinkle with cheese. Bake at 450° for 10-12 minutes or until cheese is melted.

1 (16 ounce) package pizza dough
1 tablespoon olive oil
2 (5 ounce) skinless, boneless chicken breasts, cut into small pieces
1 clove garlic, pressed
1 teaspoon chili powder, or more to taste
½ teaspoon salt
1 cup chopped sweet onion (such as Vidalia®)
1 cup chopped bell pepper
½ cup salsa
2 cups shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Roll or pull pizza dough to desired shape and spread on a large baking sheet or pizza stone. Prick with a fork.
  • Bake in the preheated oven until firm, about 8 minutes.
  • Meanwhile, heat oil in a large skillet over medium heat. Add chicken; cook and stir for 5 minutes. Stir in garlic, chili powder, and salt until incorporated. Add onion and bell peppers; cook until onions are translucent and peppers are tender, about 5 minutes. Remove from the heat.
