I created this meat loaf one day when I wanted to make cheeseburgers-my husband's favorite-but it was too chilly to grill outside. I've served it numerous times since then, and it never fails to get rave reviews. Even your most finicky eater will enjoy this oven-baked main dish. 1/2 cup ketchup, divided
1 egg
1/4 cup dry bread crumbs
1 teaspoon onion powder
1 pound lean ground beef (90% lean)
2 teaspoons prepared mustard
2 teaspoons dill pickle relish
6 slices process American cheese

Steps:

  • In a bowl, combine 1/4 cup ketchup, egg, bread crumbs and onion powder. Crumble beef over mixture and mix well. On a large piece of waxed paper, pat beef mixture into a 10x6-in. rectangle. Spread remaining ketchup over meat to within 1/2 in. of long sides and 1-1/2 in. of short sides. Top with mustard and relish., Place four cheese slices on top; set remaining cheese aside. Roll up loaf, jelly-roll style, starting with a short side and pulling away waxed paper while rolling. Seal seams and ends well. Place loaf, seam side down, in a greased 11x7-in. baking pan., Bake at 350° for 45 minutes or until meat is no longer pink and a thermometer reads 160°. Cut the reserved cheese slices in half diagonally; place on top of loaf. Return to the oven for 5 minutes or until cheese is melted. Let stand for 10 minutes before slicing.

4 slices bacon
1 1/2 pounds lean ground chuck or ground round
1 cup firm fresh white bread crumbs
1 cup coarsely shredded sharp Cheddar cheese (4 ounces)
1 large sweet onion, such as Vidalia, chopped
2 tablespoons mayonnaise
2 tablespoons India or other sweet pickle relish
2 teaspoons dry mustard
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1 egg
1/4 cup ketchup

Steps:

  • Preheat the oven to 350°F. In a medium skillet, cook the bacon over medium heat until limp and some of the fat is rendered, 3 to 4 minutes. Remove the bacon from the skillet and reserve it.
  • In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, 1/2 cup of the cheese, onion, mayonnaise, relish, mustard, salt, pepper, and egg. Pat the mixture into a shallow 2-quart baking pan. Spread the top of the loaf with ketchup, then lay the bacon strips over the ketchup. Bake until the loaf is firm and the bacon is crisp, 45 to 50 minutes, sprinkling the top the loaf with the remaining 1/2 cheese to melt during the last 5 to 10 minutes of baking. Let the meatloaf stand in the baking dish for 10 minutes, then cut into squares to serve.

1 pound ground beef
1 small onion, chopped
2/3 cup shredded cheddar cheese
1/3 cup shredded mozzarella cheese
1/4 cup ketchup
1-1/2 teaspoons salt, divided
1/4 teaspoon pepper
1-3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 cup shortening
3/4 cup milk

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. Add onion, cheeses, ketchup, 1/2 teaspoon salt and pepper; set aside. In a bowl, combine the flour, baking powder and remaining salt. Cut in shortening until mixture resembles coarse crumbs. Using a fork, stir in milk until mixture forms a ball. On a floured surface, roll out dough into a 15x10-in. rectangle. Spread meat mixture to within 1 in. of edges. Roll up, jelly-roll style, starting with a long side. Pinch edges to seal. Place seam side down on an ungreased baking sheet. Bake at 425° for 30 minutes or until golden brown. Cut into slices.

1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/2 teaspoon garlic salt
1/4 teaspoon salt
1/4 teaspoon pepper
1 loaf (1 pound) unsliced French bread
1 tablespoon butter, softened
8 ounces plain or Mexican process cheese (Velveeta), sliced

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Add soup, garlic salt, salt and pepper; simmer, uncovered for 5-10 minutes. , Meanwhile, slice the top third off the bread. Hollow out bottom half of loaf, leaving a 3/4-in. shell (discard removed bread or save for another use). Spread butter on cut side of bread. 1 cup quick-cooking oats
1/4 cup chopped onion

1/3 cup mayonnaise
2 tablespoons ketchup
2 medium tomatoes, sliced
8 slices cheddar cheese
8 bacon strips, cooked and halved
8 hoagie buns, split and toasted

Steps:

  • In a large bowl, combine the egg, tomato sauce, oats, onion, salt and pepper. Crumble beef over mixture and mix well. 10 slice(s) bacon, fried crisp and crumbled
8 ounce(s) cheddar cheese, grated
2 large eggs, lightly beaten

1 tablespoon(s) worcestershire sauce
1/4 teaspoon(s) salt and pepper
1/3 cup(s) ketchup
2 tablespoon(s) mustard

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine the ground chuck and next 8 ingredients, mixing well. In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.
  • Press meat mixture into a 9x5x3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake 10 to 15 minutes, or until meat is no longer pink.

1/2 cup cracker crumbs
1 cup (4 oz) shredded american cheese (2 slices)
1 egg, beaten
1/4 cup onions, chopped
1/4 cup green pepper, chopped
3/4 tsp salt
1/4 tsp pepper
1/4 tsp dried basil leaves

Steps:

  • Combine all ingredients except cheese slices in a large mixing bowl and mix lightly. Place mixture in a 8 1/2 x 4 1/2 x 2 5/8 inch loaf pan and shape into a loaf. Bake @ 375 deg for 1 hr. Remove load from oven. Cut each cheese slice into 2 triangles and arrange triangles overlapping on top of loaf. Return meat loaf to oven 2 minutes or until cheese melts. Let stand 10 minutes before slicing.
