I joined a crockpot recipe group and this is one of the recipes that was sent to me in an email. This couldnt be simpler!

2 tablespoons flour
5 ounces evaporated milk
2 cups ham, diced
12 ounces frozen chopped broccoli
1/4 cup onion, minced
1 cup swiss cheese, grated
2 cups water
1 cup half-and-half

Steps:

  • In a small bowl mix together well the flour and evaporated milk.
  • To the crockpot, add ham, broccoli, onion, swiss cheese, water and flour/milk mixture.
  • Set crockpot to low and cook for 7 hours.
  • Before serving, stir in half-and-half and heat thru. Serve immediately.

There aren't that many recipes posted for broccoli cheese soup, and being one of my favourite comfort soups, I thought I would share mine. I like to sprinkle red pepper and put a small swirl of cream on top when I serve it.

Number Of Ingredients 10

1 medium head broccoli
1 large potato, peeled & cubed
1 large onion, chopped
2 tablespoons butter
2 chicken bouillon cubes
1 teaspoon cumin
2 tablespoons flour
3/4 cup half-and-half
1 1/2 cups sharp cheddar cheese, grated
salt and pepper

Steps:

  • Remove florets from broccoli head.
  • Cook florets in 4 cups water for 4 minutes, drain the florets, reserving the cooking water. Set florets aside for later. Chop broccoli stalk into small cubes.
  • Melt butter in a large heavy saucepan.
  • Add potatoes, onions and broccoli stalk, and saute for 10 minutes or until onion is soft.
  • Add cumin and flour and cook for 1 minute, stirring constantly.
  • Add 3 cups of the reserved floret cooking water and the bouillon cubes, and simmer for 20 minutes, stirring occasionally until broccoli stalks are tender.
  • Stir in cream and cheese.
  • Season with salt and pepper.
  • Puree the soup in a blender until smooth ( Be Careful if doing this while HOT).
  • Add the florets to the blender and pulse once, (this give the soup a nice green florety colour without totally destroying the florets).
  • Taste and season again if necessary.
  • Heat through before serving.

1 package (20 ounces) refrigerated O'Brien hash brown potatoes
1 garlic clove, minced
2 cups reduced-fat sour cream
1/4 cup all-purpose flour
1/2 teaspoon pepper
1/8 teaspoon ground nutmeg
3 cups vegetable stock
1 package (12 ounces) frozen broccoli florets, thawed
4 cups shredded cheddar cheese, divided
1/2 cup finely chopped green onions

Steps:

  • Combine the hash browns and garlic in a 5- or 6-qt. slow cooker. In a large bowl, whisk the sour cream, flour, pepper and nutmeg until smooth; stir in stock. Pour into slow cooker; stir to combine. Cook, covered, on low until hash browns are tender, 6-8 hours., Add the broccoli and 3 cups cheese; cover and cook until cheese is melted, about 10 minutes longer. Serve with green onions and remaining cheese.

This chowder warms you to the bones when its cold and bitter outside. A nice hearty chowder.

10 ounce(s) package frozen broccoli w/cheese sauce
12 ounce(s) can of mexicorn with red and green peppers
1 1/2 cup(s) diced ham
1 cup(s) 2 % milk
1 cup(s) half n half
1 medium potato, peeled and diced
dash(es) black pepper
1 slice(s) 1/2 thick of velveeta cheese, diced

Steps:

  • Put frozen broccoli w/cheese in a micro safe bowl and cook for 3 minutes. Dump into a large sauce pan along with contents of the mexicorn, potato, ham and 1 cup 2% milk.
  • Heat till it starts to boil, stirring several times so it doesn't stick. Turn it down to simmer till broccoli and potatoes are cooked to your liking. Then put the velveeta cheese in and stir until dissolved. Add the 1 cup of Half n half.
  • Bring the chowder back up to almost boiling and then serve with favorite crackers or fresh baked bread.

2 cups peeled and cubed Yukon Gold potatoes
1 ¾ cups chicken broth
½ cup sliced carrots
1 teaspoon minced garlic
1 teaspoon salt
¾ teaspoon garlic powder
½ teaspoon ground black pepper
2 cups frozen corn
1 ½ cups cubed fully cooked ham
¼ cup butter
¼ cup cornstarch
2 cups milk
2 cups shredded sharp Cheddar cheese

Steps:

  • Combine potatoes, broth, carrots, and garlic in a large pot and bring to a boil, about 5 minutes. Stir in salt, garlic powder, and black pepper. Reduce heat, cover, and simmer until potatoes and carrots are tender, 8 to 10 minutes. Add corn and ham. Reduce heat to lowest setting.
  • While soup simmers, melt butter in a saucepan and whisk in cornstarch. Add milk and whisk to combine. Cook and stir until thickened and bubbly, 3 to 5 minutes. Add Cheddar cheese and stir until melted, about 2 minutes. Pour mixture into the pot with the soup. Cook over medium heat, stirring occasionally, until heated through, about 2 minutes more, or until ready to serve.

This is a wonderful Fall recipe. It came from a "Taste of Home" magazine. It is warm, filling and makes quite a bit. One of our favorite soups!

10 slices bacon, diced
1 large onion, chopped
1 cup carrot, diced
3 tablespoons flour
3 cups milk
1 1/2 cups water
1 (15 ounce) can corn, drained
2 teaspoons chicken bouillon
3 cups shredded cheddar cheese
2 cups cooked ham, chopped
2 1/2 cups cubed potatoes
pepper

Steps:

  • In a dutch oven or large soup kettle cook bacon over medium heat until crisp.
  • Drain.
  • In the leftover drippings, saute onion and carrots until tender.
  • Stir in flour until blended.
  • Gradually add milk and water.
  • Bring to a boil.
  • Cook and stir for 2 minutes or until thickened.
  • Add the potatoes, corn, bouillon and pepper.
  • Reduce heat, simmer, uncovered for 20 minutes or until potatoes are tender.
  • Add cheese and ham.
  • Heat until cheese is melted.
  • Stir in bacon.

I am not sure where I got this recipe but have changed it enough to call it my own regardless... My prior boss used to love this soup so much he nicknamed me the "Soup Nazi" (Seinfeld episode) and said I should quit my current job (huh?) and open a soup restauraunt. I have quite a few other awesome soup recipes too. I will post them as time permits. Note: I NEVER follow recipes but this one is perfect the way it is. I won't change it. This is the best I have ever had. Enjoy!

2 cups chicken broth
1 cup celery, chopped
1 cup carrot, chopped
1/2 cup onion, chopped
1 lb fresh broccoli, chopped (use flowerettes)
1/2 cup butter
1/2 cup flour
2 teaspoons salt
1/4 teaspoon pepper
4 cups milk
Tabasco sauce
1 lb Velveeta cheese, cut into cubes
2 cups cubed ham

Steps:

  • In a large saucepan combine broth, celery, carrots and onion. Bring to a boil and reduce heat. Simmer, covered, about 5 minutes. Add broccoli. Cook until tender crisp. Do not drain.
  • To make sauce melt butter in a large saucepan. Blend in flour, salt, and pepper. Cook- stirring for 1 minute. Stir in milk. Cook until thickened. Add tabasco to taste. Stir in cheese and cook, stirring often, until melted. Stir in ham.
  • Combine cheese mixture and undrained veggie mixture. Stir to blend.
