Friends beg me to make this when they come over. Cream cheese, garlic, anchovies, feta cheese and fresh chives are quickly blended and ready to serve in this easy gourmet snack. Even serious dieters can't resist this heavenly spread! Serve with crackers, toasted pita wedges, or sliced baguette.

2 cloves garlic, minced
4 anchovy fillets, chopped
6 tablespoons butter, softened
1 (8 ounce) package cream cheese, softened
¾ cup crumbled feta cheese
¼ cup sour cream
1 tablespoon chopped fresh chives
1 dash hot pepper sauce (e.g. Tabasco™), or to taste
freshly ground black pepper to taste

Steps:

  • Combine the garlic, anchovies, butter, cream cheese, feta cheese, sour cream, chives, hot pepper sauce and pepper in the container of a food processor. Process until smooth. Transfer to a serving bowl, and serve with crackers, bread slices, or pita chips.

WARM GARLIC PITAS

4 medium-size whole wheat pitas
4 medium-size white pitas
4 tablespoons unsalted butter
6 cloves garlic, minced
3 tablespoons minced fresh parsley
1/4 cup grated Parmesan
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F. Cut the pitas into 6 wedges.
  • In a medium saucepan, add the butter and garlic. Set over medium heat and warm through until the butter melts and the garlic becomes fragrant, 5 to 6 minutes. Add the parsley and mix well.
  • Place the pita wedges in a large bowl and pour the garlic butter over the top. Toss well to combine and coat everything evenly. Spread the pita wedges out evenly on a sheet tray and dust with the grated Parmesan. Bake in the oven until golden and crispy, 12 to 15 minutes. Remove from the oven and taste. Adjust seasonings with salt and pepper, if necessary. Serve warm.

1 (10 ounce) package pita bread, cut in half
3 tablespoons butter
1 teaspoon crushed garlic
1 teaspoon dried Italian-style seasoning
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Open pita bread halves and roughly cut into approximately 2 inch pieces. Arrange on a medium baking sheet.
  • In a small saucepan over medium heat, melt butter and mix in garlic and dried Italian-style seasoning. Pour the mixture over pita bread pieces.
  • Sprinkle bread with Parmesan cheese, adjusting the amount as desired. Bake in the preheated oven 10 minutes, or until lightly browned.

2 tablespoons Italian salad dressing mix
4 whole pita breads
1 to 2 medium cucumbers, peeled and cut into 1/8-inch slices
Lemon-pepper seasoning

Steps:

  • In a small bowl, beat cream cheese and salad dressing mix until combined. , Split pita breads in half, forming two circles. Spread cream cheese mixture over pita circles; cut each into six wedges. Top with cucumbers; sprinkle with lemon-pepper.

2 tbsp. chopped fresh basil
1/3 cup (1 1/2 oz) grated parmesan cheese

Steps:

  • 1. Split pita bread in half,cut each half into 4 wedges.
  • 2. Mix butter, garlic and basil, brush over cut side of bread wedges, then sprinkle with Parmesan cheese.
  • 3. Place in single layer on oven trays. Bake in moderate oven (350) for 10 minutes or til crisp. Makes 32 wedges.
