Corn and Broccoli Rice Casserole - so simple and SO delicious! Everyone cleaned their plates - even our picky broccoli haters! Cooked rice, creamed corn, broccoli, onion and garlic topped with butter and crushed Ritz crackers. You might want to double the recipe for this quick side dish - this didn't last long in our house!

1½ cups cooked rice
1 (10-oz) package frozen chopped broccoli, (thawed and drained)
1 (14.75-oz) can creamed corn
1 large egg, (beaten)
¾ tsp onion powder
½ tsp garlic powder
½ tsp seasoned salt, (or to taste)
¼ tsp black pepper, (or to taste)
½ cup crushed Ritz crackers
¼ cup butter, (melted)

Steps:

  • Preheat oven to 350ºF. Lightly spray a 9x9-inch pan with cooking spray and set aside.
  • In a bowl, combine rice, broccoli, corn, egg, onion powder, garlic powder, salt and pepper. Pour mixture into pan.
  • Toss crackers with melted butter. Sprinkle over broccoli mixture.
  • Bake uncovered for 25 to 30 minutes.

3 cups Rice Krispies®
2 tablespoons margarine or butter
2 tablespoons all-purpose flour
3/4 cup fat-free milk
1 cup shredded, sharp Cheddar cheese
1 (11-ounce) can whole kernel corn, drained
1 (10-ounce) package frozen broccoli cuts, thawed, drained

Steps:

  • 1. In 2-quart saucepan, melt margarine. In mixing bowl, combine KELLOGG'S RICE KRISPIES cereal and 1 tablespoon of the margarine. Set aside for topping.2. To remaining margarine in pan, stir in flour. Add milk, stirring until smooth. Cook over medium heat until mixture boils, stirring constantly. Continue cooking and stirring 1 minute longer. Add cheese, stirring until melted. Remove from heat. Stir in corn.3. Place broccoli in bottom of 10 x 6 x 2-inch (1 1/2-quart) baking dish. Pour sauce evenly over broccoli. Sprinkle with cereal topping.4. Bake at 350°F about 25 minutes or until thoroughly heated and cereal has browned.

3/4 cup butter, softened
9 ounces cheddar cheese, grated
1 1/2 cups flour, sifted
1/2 teaspoon salt
1 teaspoon Tabasco sauce, more to taste
3 cups Rice Krispies

Steps:

  • Cream butter and cheese together until well blended.
  • Add Flour, salt and Tabasco and knead until well blended.
  • Knead in the Rice Krispies.
  • Make tiny balls out of teaspoon amounts of dough.
  • Place on an ungreased cookie sheet and press down with fork until each teaspoon of dough is round and approximately 1/4 inch thick.
  • Bake in preheated oven at 400°F for 10 to 12 minutes.
  • Remove to rack to cool.
  • Store in airtight container.

1/4 cup butter, divided
2 cups corn flakes, crushed down to 1 Cup
2 tablespoons all-purpose flour
1 (16 ounce) can whole kernel corn, drained
1/4 teaspoon salt
2 (10 ounce) packages frozen broccoli spears, thawed and drained
1 1/2 cups milk
1 1/2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350.
  • Melt 2 T. butter in a large saucepan on low.
  • Stir in flour and salt.
  • Add milk gradually, stirring until smooth. Increase heat to medium and cook until bubbly and thickened, stirring constantly.
  • Add cheese, stirring until melted.
  • Stir in 1/4 cup corn flakes and corn and remove from heat.
  • Arrange the broccoli in a 12 X 7 X 2 glass baking dish. (I have used a 9 x 13 and its fine).
  • Pour the cheese sauce over broccoli.
  • Melt remaining butter in small saucepan. Stir in remaining corn flakes.
  • Sprinkle over the casserole.
  • Bake at 350 for 30 minutes.
