I rarely enter recipe contests, but I absolutely love the Pacific soups, so I decided to give this contest a whirl. I grew up in the midwest, but have lived in Southern Cali the last 15 yrs, so my cooking style is midwest by stock and southern cali by flavor. For my personal blog, I take vintage dessert recipes and modernize them, so... it only seemed fitting I'd modernize the traditional sloppy joe. I've always been a big fan of sloppy joes; usually made with ground beef and canned ingredients. These Joes snap, crackle and POP with flavor. The new roasted red pepper & tomato bisque is the main ingredient, with a few other deeelicious flavors. These Snappy Joes are deelicious and healthy.

- Preheat oven to 400 degrees.2) In medium bowl combine cherry tomatoes, garlic cloves and 2 Tbsp of olive oil. Mix until olive oil coats tomatoes and garlic. Spread onto cookie sheet and cook for 20 minutes, turning tomatoes and garlic once. Start step 3 while tomatoes and garlic are roasting. Remove cookie sheet from oven and cool on rack.3) Heat 2 Tbsp of olive oil in stockpot and cook chopped onion on low for 15 minutes until soft. Add turkey to chopped onion and brown turkey and crumble. Once turkey is cooked, drain oil from turkey/onion mixture. Return turkey/onion mixture to stockpot; add roasted tomatoes &garlic into meat mixture and smash with wooden spoon until tomatoes and garlic are broken up. Add remaining ingredients; Roasted Red Pepper & Tomato Bisque, roasted red peppers, Worcestershire sauce, chili powder, cayenne pepper and salt. Simmer on low for 15 minutes. Enjoy!!
