CHARRED DOUBLE-CUT PORK CHOPS WITH BROWN SUGAR BBQ SAUCE

- Preheat the oven to 350 degrees F.
- Heat a large skillet over medium heat and add the oil. When the oil begins to smoke lightly, sprinkle the pork chops on both sides with salt. Arrange them in a single layer in the skillet. Cook until browned, 3 to 5 minutes, then turn over and cook for an additional 3 to 5 minutes. Transfer the skillet to the center of the oven. Cook until the pork reaches an internal temperature of 150 degrees F, 25 to 30 minutes.
- Drizzle the chops generously on both sides with the Brown Sugar BBQ Sauce. Transfer to a platter and serve with additional sauce on the side.
- Combine the ketchup, dark brown sugar, cider vinegar, chili powder, soy sauce, Worcestershire sauce and Dijon mustard in a large pot and whisk to blend. Bring to a simmer over medium heat. Add the garlic, ginger and lemon slices. Simmer until the vinegar mellows slightly and the flavors start to meld together, 20 to 25 minutes. Remove from the heat but keep warm.

- Pork Chop:.
- Combine all ingredients in a vacuum seeled bag and sous vide at 62C for 1 hour.
- Peach Mostarda:.
- In a sauce pan toast seeds over medium heat. Add all other ingredients and simmer until fruit is tender, about 10 minutes. Using either immersion blender or vitamix, blend everything, check seasoning and pass through chinoise. Chill and store.
- Peaches:.
- Combine all ingredients in a vacuum bag and seal. Let sit for one day.
- Remove peaches from bag, reserving liquid and vanilla bean.
- Lightly oil peaches and char pit side on flat top.

I put this glaze on pork chops and stuff them with an apple cranberry stuffing. You can double it and make it a ham glaze also.

- Stir apple cider, honey, cider vinegar, and brown sugar in a saucepan over medium heat. Bring to a simmer and reduce heat to low, stirring often, until the mixture reduces to 2/3 cup, about 20 minutes.
- Simmer 1/3 cup whiskey in a separate small saucepan over medium-low heat until steam no longer smells of alcohol, about 10 minutes; stir into the apple cider mixture. Reduce this mixture to 1/2 cup, forming an apple cider glaze and cool.
- Stir 3 tablespoons whiskey into apple cider glaze.
- Preheat oven to 350 degrees F (175 degrees C).
- Place pork chops into a baking dish; brush with the apple cider glaze.
- Bake chops in the preheated oven, basting them often with glaze, until tender, about 1 hour. If desired, bring any remaining glaze to a boil in a saucepan and drizzle over chops to serve.
