Creme de cassis is a black-currant-flavored liqueur that adds great flavor to these crispy cookies.

Number Of Ingredients 8

2 3/4 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon coarse salt
1/2 cup (1 stick) unsalted butter
1 cup granulated sugar
2 large eggs
1/4 cup creme de cassis
Coarse sanding sugar, for sprinkling

Steps:

  • Preheat oven to 350 degrees. Sift together flour, baking powder, and salt into a medium bowl. Put butter and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment, mix on medium speed until pale and fluffy, about 4 minutes. Add eggs and creme de cassis, and mix until combined. Add flour mixture, and mix on low speed until smooth.
  • Divide dough in half, and wrap each half in plastic; refrigerate until cold, about 1 hour. Working with 1 half at a time, roll out dough on a lightly floured surface to 1/4 inch thick, and cut into 3-inch squares. Space 2 inches apart on baking sheets lined with parchment paper, and sprinkle with sanding sugar. Reroll scraps; repeat with remaining dough.
  • Bake cookies until golden brown all over, 12 to 15 minutes. Let cool on sheets on wire racks. Cookies can be stored in an airtight container at room temperature up to 3 days.

PARMESAN CHICKEN STICKS

1 1/2 pounds skinless, boneless chicken breasts (3 to 4)
1 cup flour
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 extra-large eggs
1 cup seasoned bread crumbs
1/2 cup grated Parmesan
Unsalted butter
Good olive oil
Bamboo skewers (6 to 10 inches long) or ice-cream sticks

Steps:

  • Lay the chicken breasts on a cutting board and slice each diagonally into 4 or 5 large strips.
  • Combine the flour, salt, and pepper on a dinner plate. Beat the eggs with 1 tablespoon of water on a second plate. Combine the breadcrumbs and Parmesan on a third plate. Dredge the chicken breasts on both sides in the flour mixture, then dip both sides into the egg mixture and roll in the bread-crumb mixture, pressing lightly to coat.
  • Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large saute pan and cook the chicken strips on medium-low heat for about 3 minutes on each side, until just cooked through. Don't crowd the pan. Add more butter and oil and cook the rest of the chicken breasts. Serve each strip on a skewer or stick.
  • You can keep the chicken breasts warm for about 15 minutes on a sheet pan in a preheated 200 degree F oven.

CASSIS BONBON SANDWICH

1000 grams cassis (blackcurrant) fruit puree
1110 grams granulated sugar
20 grams pectin
200 grams glucose syrup
15 grams citric acid
Twelve 2-by-6-inch chocolate bars

Steps:

  • Line a half sheet pan with a silicone baking mat.
  • Bring the cassis puree to a boil in a pot, continuously stirring to prevent scorching. Combine 110 grams of the sugar with the pectin using a whisk, add to the fruit puree and boil for 2 to 3 minutes. Add the remaining 1000 grams sugar to the fruit puree in three or four batches, continually whisking. Then add the glucose syrup. Continue to cook, whisking, until a candy thermometer inserted in the mixture reaches 225 degrees F. Then whisk in the citric acid. Quickly pour the mixture onto the prepared sheet pan and cool the mixture completely in the refrigerator.
  • Cut the fruit pate into 2-by-6-inch strips and sandwich between two chocolate bars to serve.
