A Chinese-inspired one-pan supper with crunchy greens and nuts, and a rich chilli and soy sauce

1 tbsp vegetable oil
500g pork fillet, cut into thick slices
1 garlic clove, thinly sliced
300g Tenderstem broccoli, cut into 3cm pieces
2 red onions, cut into thick half moons
50g toasted unsalted cashew
1 tbsp dark soy sauce
1 tbsp Chinese black or red wine vinegar
1 tbsp rice wine or sherry
1 heaped tsp chilli bean sauce or chilli sauce
1 tbsp liquid chicken stock
1 tsp golden caster sugar
2 tsp cornflour dissolved in 2 tbsp water

Steps:

  • In a small bowl, mix together the sauce ingredients and set aside. Heat the oil in a large wok. Season the pork and sear in batches, then remove and set aside.
  • Fry the garlic until golden - about 30 secs - then add the broccoli and onions. Stir-fry for 2 mins, then add the pork and cashews along with the sauce. Keep stir-frying for another 2-3 mins until everything is hot and simmering.

2 teaspoons minced peeled fresh ginger
2 teaspoons minced garlic
1/2 teaspoon dried hot red pepper flakes
1 large red bell pepper, cut into 1/4-inch-thick strips
1/2 lb snow peas, trimmed

Steps:

  • Stir together Sherry, cornstarch, and 1 tablespoon soy sauce, then stir in sesame oil. Add pork, stirring to coat well, and let stand 10 minutes.
  • Stir together sugar and remaining 2 tablespoons soy sauce.
  • Heat a wok or large nonstick skillet over high heat until a bead of water dropped on cooking surface evaporates immediately. Add 1 1/2 tablespoons peanut oil, swirling wok to coat evenly, then stir-fry 1 teaspoon ginger, 1 teaspoon garlic, and 1/4 teaspoon pepper flakes until fragrant, about 5 seconds. Add bell pepper and stir-fry 2 minutes. Add snow peas and cashews and stir-fry until snow peas are crisp-tender, 1 to 2 minutes. Transfer vegetables to a bowl.
  • Heat remaining 1 1/2 tablespoons peanut oil in wok until just smoking, then stir-fry remaining ginger, garlic, and pepper flakes until fragrant, about 5 seconds. Add pork and stir-fry, separating strips, until browned and barely cooked through, 2 to 3 minutes. Add vegetables and sweetened soy sauce, then stir-fry until vegetables are just heated through, about 1 minute more.

2 cups chicken stock
2 tablespoons canola, vegetable or other high-temperature cooking oil
1 cup white rice
1 small bunch scallions, thinly sliced on an angle
6 chicken cutlets or chicken thighs or 6 thin pork loin chops
1 large bundle broccolini or 1 head broccoli
Salt
1 1/2 inches fresh gingerroot, peeled and finely chopped or grated
2 to 3 garlic cloves, finely chopped
3 tablespoons tamari (aged soy sauce)
1/3 cup orange marmalade
1/2 cup roasted unsalted cashews

Steps:

  • In a sauce pot, heat 1 1/2 cups of the stock and 1 tablespoon of the vegetable oil. Bring to a boil and stir in the rice. Lower the heat and bring to a bubble, cover, and simmer until the rice is tender, about 18 minutes. Fluff with a fork and add the scallions.
  • Meanwhile, thinly slice the chicken or pork.
  • Trim the broccolini or broccoli and cut into 2-inch pieces or florets. Bring 2 inches of water to a boil in a shallow pot or deep skillet over medium heat. Salt the water and cook the broccolini or florets until tender-crisp, about 3 to 4 minutes. Drain.
  • Heat a large skillet over high heat while the broccolini cooks. Add 1/2 tablespoon of the oil and when it begins to smoke or ripple, add the chicken and brown it for 5 to 6 minutes, turning once, then transfer it to a plate. Add the remaining 1/2 tablespoon of oil to the pan, stir in the ginger and garlic and cook for 1 minute. Add the tamari, the marmalade, and the remaining 1/2 cup of chicken stock. Slide the chicken, broccolini, and cashews into the pan and stir to combine with the sauce. Simmer for another 1 to 2 minutes.
  • Scoop the chicken mixture into serving dishes, top with a scoop of rice, and serve.

4 tablespoons soy sauce
1 1/2 tablespoons cornstarch
1 cup cashew nuts (unsalted if possible)
4 tablespoons peanut oil
1/4 teaspoon red pepper flakes
1 lb leek, trimed and shredded
1 inch piece fresh gingerroot, peeled and cut into matchsticks
2 garlic cloves, peeled and chopped
1 red bell pepper, deseeded and sliced
1 (15 ounce) can chicken or 1 (15 ounce) can vegetable broth
2 tablespoons fresh cilantro, chopped
1 lb freshly cooked oriental noodles (or packaged pre-cooked oriental noodles)

Steps:

  • Trim fat from pork and cut into 3/4 inch slices.
  • Place in shallow dish.
  • Blend the soy sauce and cornstarch together until smooth and free of lumps.
  • Pour soy mixture over pork, stirring until all pieces are coated.
  • Cover with plastic wrap and marinade in refrigerator for at least 30 minutes.
  • Heat nonstick skilled untiol hot, add the cashew nuts and dry-fry for 2-3 minutes until toasted, stirring frequently. Transfer to a place and reserve.
  • Heat a wok or large skillet, add 2 tablespoons of oil, and when hot, add the leeks, ginger, garlic and bell pepper and stir fry for 5 minutes or until soft.
  • Using a slotted spoon, transfer to a plate and keep warm.

1 cup salted, roasted cashews, divided
1 tsp. ground turmeric
1 tsp. freshly ground black pepper
1 3/4 tsp. kosher salt, plus more
2 1/2 tsp. light brown sugar, divided
2 large boneless center-cut pork loin chops (about 1 1/4 lb. total)
8 oz. vermicelli rice noodles
2 cups basil leaves
2 small serrano chiles, seeds removed
1 Tbsp. finely grated lime zest
1/3 cup fresh lime juice
1 Tbsp. vegetable oil
1 lb. green beans, trimmed, halved crosswise
1 cup mint leaves
Lime wedges (for serving)

Steps:

  • Place 3/4 cup cashews in a blender and cover with 3/4 cup boiling water. Let soak 10 minutes.
  • Meanwhile, mix turmeric, pepper, 1 tsp. salt, and 1 tsp. brown sugar in a small bowl; set aside.
  • Working one at a time, place pork chop flat on a work surface. First, butterfly the pork chop so that it's thinner, which will reduce cooking time and create more surface area for seasoning. Using a sharp knife and starting from an outside edge, slice three-quarters of the way through the center of chop, as though you're slicing a bagel in half, then open it up like a book. Place butterflied chop between 2 sheets of plastic wrap or inside a heavy-duty resealable plastic bag and pound to 1/4" thin. Repeat with remaining chop. Rub chops with turmeric mixture and let sit 10 minutes.
  • Cook vermicelli according to package directions. Run under cold water to stop the cooking, then transfer to a large bowl.
  • Add basil, chiles, lime zest and juice, and remaining 1 1/2 tsp. brown sugar and 3/4 tsp. salt to cashews and cashew soaking water in blender and purée until smooth and creamy. Pour sauce over noodles and toss to combine.
  • Heat oil in a large heavy skillet over high until shimmering. Cook cutlets one at a time until browned and cooked through, about 2 minutes per side. Transfer to a cutting board and let rest 5 minutes. Slice into 1/2"-thick strips.
  • While pork rests, cook green beans in same skillet over high heat, stirring often, until lightly charred and crisp-tender, about 5 minutes.
  • Divide noodle mixture among bowls. Arrange pork and green beans over. Top with mint and remaining 1/4 cup cashews. Serve with lime wedges alongside.

3/4 cup uncooked long-grain rice
1/3 cup chopped green onions
1/4 cup dry-roasted cashews, salted and coarsely copped
1/2 tsp. salt
2/3 cup chicken broth
2 Tbsp. cornstarch, divided
3 Tbsp. low-sodium soy sauce, divided
2 Tbsp. honey
1 (1-pound)pork tenderloin, trimmed and cut into 1/2 in. cubes
1 Tbsp. canola oil, divided
2 cups sliced mushrooms (about 4 oz.)
1 cup chopped onion
1 Tbsp. grated peeled fresh ginger
2 garlic cloves, mince
2 cups sugar snap peas, trimmed
1 cup chopped red bell pepper

Steps:

  • 1. Cook the rice according to package directions, omitting salt and fat. Stir in 1/3 c. chopped green onions, chopped dry-roasted cashews, and salt; set aside, and keep warm. 2. Combine 2/3 c. chicken broth, 1 Tbsp. cornstarch, 2 Tbsp. soy sauce, and honey in a small bowl; set aside. 3. Combine pork, remaining 1 tbsp. cornstarch, and the remaining 1 Tbsp. soy sauce in a bowl, tossing well to coat. Heat 2 tsp. oil in a large nonstick skillet over medium-high heat. Add pork; saute 4 mins., or until browned. Remove from pan. 4. Add remaining 1 tsp. oil to pan. Add mushrooms and 1 c. onion; saute 2 mins. Stir in ginger and garlic; saute 30 mins. Add peas and bell pepper to pan; saute 1 min. Stir in pork; saute 1 min. Add reserved broth mixture to pan. Bring to a boil; cook 1 min. or until thick, stirring constantly. Serve over cashew rice.

400 grams pork fillet or tenderloin (1 whole tenderloin is about the right weight)
4 spring onions or shallots, finely sliced
4 small hot red chillies, deseeded and finely chopped
3-4 cloves of garlic, finely chopped (3 large or 4 small cloves)
1 thumb sized knob of ginger, peeled and finely chopped
90 grams cashews (or peanuts), chopped or bashed into small pieces
The juice and zest of 3 limes
2 tablespoons nam pla (Thai fish sauce - light soy sauce can be substituted)
Handful basil leaves, torn to shreds
Handful mint leaves, chopped finely
2-3 tablespoons groundnut oil

Steps:

  • Slice the pork into strips no thicker than 1 centimetre. Heat approximately 1 tablespoon of the groundnut oil in a wok or large frying pan and, when it is very hot, quickly stir fry the pork until it is cooked through and lightly browned. Put the pork and any juices into a bowl and set aside. Next heat the rest of the oil and add the chillies, garlic, sping onions and ginger. Stir fry for 2-3 minutes. Add the cashews and stir fry for a further 2 minutes. Next add the lime juice and zest and nam pla. Simmer for a minute to allow the flavours to marry, then put the pork and juices back into the pan and heat through. Lastly stir in the mint and basil and serve immediately. Serve with plain boiled or steamed rice, fried rice or couscous.

1 tablespoon vegetable oil
2 boneless pork chops
2 cloves garlic, minced
½ onion, cut into chunks
½ green bell pepper, chopped
1 sprig fresh basil for garnish
⅓ cup chicken broth
½ cup white wine
1 tablespoon tomato paste
1 dash Worcestershire sauce
1 pinch dried thyme
1 pinch dried parsley
salt and pepper to taste
½ cup chopped pepperoni
1 tomato, chopped
⅓ cup cashews

Steps:

  • Heat the oil in a wok over medium-high heat, and evenly brown the pork chops. Set aside.
  • Mix the garlic, onion, and green pepper into the wok, and cook until tender. Stir in the chicken broth, wine, and tomato paste. Mix in Worcestershire sauce, thyme, parsley, salt, and pepper. Cook until heated through, then stir in pepperoni.
  • Return chops to wok. Cover wok, and continue cooking 15 minutes over medium heat, until sauce has thickened and pork chops are cooked to desired doneness. Mix in the tomato and cashews, and cook until heated through. Scoop sauce over chops and garnish with basil sprigs to serve.

1 1/2 cups sliced celery
1 cup thinly sliced carrots
1 medium onion, chopped (1/2 cup)
1/2 cup chopped red or green bell pepper
3/4 cup chicken broth
3/4 cup purchased stir-fry sauce
2 teaspoons sugar
2 tablespoons water
2 teaspoons cornstarch
1 (5-oz.) pkg. uncooked Chinese noodles
1/2 cup salted cashew halves

Steps:

  • Spray large nonstick skillet with nonstick cooking spray. Add chow mein meat; cook over medium-high heat for 5 to 7 minutes or until browned, stirring frequently. Add celery, carrots, onion and bell pepper; cook 2 minutes, stirring occasionally.
  • Add broth, stir-fry sauce and sugar; stir to mix. Cook over medium heat for 8 to 10 minutes or until vegetables are crisp-tender, stirring occasionally. In small bowl, blend water and cornstarch until smooth. Add to skillet; cook and stir until thickened.

1 small onion, chopped (1/3 cup)
1 tablespoon grated gingerroot
1 clove garlic, finely chopped
1 jalapeño chile, seeded and finely chopped
1/2 bag (16-oz size) frozen sliced peaches (1 cup)
1/2 cup fresh or frozen cranberries
1/2 cup packed light brown sugar
2 tablespoons cider vinegar
1/2 teaspoon curry powder
1/4 teaspoon salt
1/2 cup panko (Japanese bread crumbs)
1/2 cup finely chopped cashews
1 egg
1 egg white
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 cup vegetable oil
4 boneless pork loin chops, 1/2 inch thick (1 lb)

Steps:

  • In 3-quart saucepan, heat 1 tablespoon oil over medium heat until shimmering and hot. Add onion and cook 3 minutes, stirring occasionally, until soft. Stir in gingerroot, garlic and chile and cook about 1 minute, stirring constantly.
  • Stir in peaches, cranberries, brown sugar, vinegar, curry powder and 1/4 teaspoon salt. Cook uncovered 20 minutes, stirring occasionally, until peaches begin to fall apart and cranberries soften and burst. Remove from heat and keep warm. (Chutney can be covered and refrigerated up to 1 week.)
  • In shallow bowl, mix bread crumbs and cashews. In another shallow bowl, beat egg and egg white with wire whisk. In pie plate or shallow bowl, mix flour, 1/2 teaspoon salt and the pepper. Place wire rack on cookie sheet.
  • First, lightly coat 1 pork chop with seasoned flour; shake off excess. Next, place in egg mixture; allow excess to drip off. Finally, place pork in bread crumb mixture and coat well. Place on wire rack while you coat remaining pork.
  • In 12-inch skillet, heat 1/4 cup oil over medium heat until shimmering and hot. Place pork in skillet and cook 3 minutes or until golden and crisp on one side. Flip and cook other side, about 3 minutes longer or until slightly pink in center.
  • Serve pork with warm chutney.

1 tablespoon medium-dry sherry
2 teaspoons cornstarch
3 tablespoons soy sauce
2 teaspoons sesame oil
3/4 lb boneless pork loin, thinly sliced,then cut into 2 by 1/4 inch strips
1 teaspoon sugar
3 tablespoons peanut oil
2 teaspoons minced peeled fresh ginger
2 teaspoons minced garlic
1/2 teaspoon dried hot red pepper flakes
1 large red bell pepper, cut into 1/4 inch thick strips
1/2 lb snow peas, trimmed
1 cup salted roasted cashews

Steps:

  • Stir together Sherry, cornstarch, and 1 tblsp soy sauce, then stir in sesame oil.
  • Add pork, stirring to coat well, and let stand 10 minutes.
  • Stir together sugar and remaining 2 tblsps soy sauce.
  • Heat a wok or large nonstick skillet over high heat until a bead of water dropped on cooking surface evaporates immediately.
  • Add 1 1/2 tablespoons peanut oil, swirling wok to coat evenly, then stir-fry 1 teaspoon ginger, 1 teaspoon garlic, and 1/4 teaspoon pepper flakes until fragrant, about 5 seconds.
  • Add bell pepper and stir-fry 2 minutes.
  • Add snow peas and cashews and stir-fry until snow peas are crisp-tender, 1 to 2 minutes.
  • Transfer vegetables to a bowl.
  • Heat remaining 1 1/2 tablespoons peanut oil in wok until just smoking, then stir-fry remaining ginger, garlic, and pepper flakes until fragrant, about 5 seconds.
  • Add pork and stir-fry, separating strips, until browned and barely cooked through, 2 to 3 minutes.
  • Add vegetables and sweetened soy sauce, then stir-fry until vegetables are just heated through, about 1 minute more.
  • Serve with steamed rice.
