1 cup uncooked regular long-grain white rice
3 tablespoons soy sauce
2 teaspoons grated gingerroot
1 teaspoon sugar
1 teaspoon sesame oil, if desired
1 lb boneless skinless chicken breasts, cut into bite-size pieces
3/4 cup Progresso™ chicken broth (from 32-oz carton)
1 1/2 teaspoons cornstarch
1 tablespoon vegetable oil
3 cups fresh broccoli florets
2 green onions, sliced (2 tablespoons)
1 cup salted roasted cashews

Steps:

  • Cook rice in water as directed on package.
  • Meanwhile, in large bowl, mix soy sauce, gingerroot, sugar and sesame oil. Stir in chicken until coated; let stand 15 minutes to marinate.
  • In small bowl, stir 1/4 cup of the broth and the cornstarch until cornstarch is dissolved; set aside.
  • In 12-inch skillet, heat vegetable oil over high heat. Remove chicken from marinade and add to heated oil in skillet; reserve any remaining marinade. Cook chicken about 3 minutes, stirring frequently, until no longer pink in center.
  • Stir broccoli and remaining 1/2 cup broth into chicken in skillet; cover and cook 1 minute. Stir in onions and cashews.
  • Stir reserved marinade into cornstarch mixture. Stir into chicken mixture; cook and stir 1 to 2 minutes or until sauce thickens slightly. Serve over rice.

2 carrots, cut into thin diagonal slices (2 c)
5 ounces soba noodles
1 tablespoon olive oil
1 tablespoon fresh ginger, minced
3 garlic cloves, minced
2 boneless skinless chicken breast halves, sliced crosswise (6 oz each)
1 tablespoon reduced sodium soy sauce
1 teaspoon toasted sesame oil
3 medium scallions, thinly sliced (about 1/2 c)
1/2 cup chicken broth, reduced-sodium, fat-free
1/2 cup cashews, unsalted raw (3 oz)

Steps:

  • Bring large pot of water to a boil. Add broccoli, carrots, and noodles. Cover and cook until vegetables are crisp-tender, 3 to 5 minutes. Drain, transfer to medium bowl, and cover loosely with wax paper.
  • Heat olive oil, ginger, and garlic in wok or large nonstick skillet over medium-high heat. Cook, stirring, until garlic starts to turn golden, 1 to 2 minutes. Add chicken, soy sauce, and sesame oil. Stir-fry 4 to 5 minutes, or until cooked through. Add scallions and stir-fry 1 minute.

1/2 cup chicken broth
1/4 cup creamy peanut butter
2 tablespoons soy sauce
1 tablespoon honey
pinch of red pepper flakes
4 cups broccoli florets
3 stalks celery, sliced diagonally
3 green onions with tops, chopped
1 teaspoon ground ginger, divided
1 pound boneless, skinless chicken breasts, cut into 1 inch pieces
4 teaspoons vegetable oil, divided
2 garlic cloves, minced, divided
2 packages ramen noodles, any flavor
1/3 cup cashews or peanuts

Steps:

  • For sauce, whisk together chicken broth, peanut butter, soy sauce, honey and red pepper in a small bowl. Set aside. Heat 2 teaspoons of the oil in a large skillet over high heat. Add 1/2 teaspoon ginger, 1 garlic clove, and all the chicken. Cook and stir 6-7 minutes until chicken is no longer pink. Remove from skillet, but keep warm. Reduce heat to medium-high. 1 cup uncooked tri-colored quinoa, rinsed
2 cups low-sodium vegetable broth
2 large boneless skinless chicken breasts, cut into chunks
salt and pepper
2 tablespoons olive oil, divided
1 large onion, chopped
2 carrots, peeled and chopped
4 to 5 cups broccoli florets
3/4 cup cashews
sesame seeds, for garnish
thinly sliced green onions, for garnish
2 tablespoons freshly squeezed orange juice
1 tablespoon orange zest
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 clove garlic, minced
1 teaspoon grated fresh ginger

Steps:

  • Add the quinoa and vegetable broth to a medium saucepan. Bring the mixture to a boil, give it a stir, cover, then reduce the heat to medium-low / low and let simmer for about 15 minutes, until the water is absorbed. Turn off the heat and let the pan sit covered for 5 minutes, then fluff the quinoa with a fork.
  • Meanwhile, season the chicken pieces with a little bit of salt and pepper. Set a large skillet over medium heat. Add in 1 tablespoon of the olive oil. When hot, add the chicken to the pan. Toss to coat and cook for about 5 to 7 minutes, until cooked through and browned on all sides. Remove the chicken from the pan and set aside.
