Carrot juice and Prosecco combine to make these cute, kitschy mimosas that couldn't be more perfect for Easter.

Number Of Ingredients 6

1/3 - 1/2 cup 100% pure carrot juice (chilled)
1/2 cup Prosecco or other dry-ish champagne or sparkling wine (chilled)
or simply
1 part carrot juice
1 part Prosecco
Carrot stems or parsley sprigs

Steps:

  • Add carrot juice and Prosecco to a champagne glass. Garnish with carrot stems or parsley sprigs and serve immediately.
  • I recommend starting with a ratio of a little less carrot juice to Prosecco. Then give it a taste and if you'd like a little more carrot, go for it.

1 1/2 cups freshly squeezed carrot juice, carrot greens reserved for garnish
1 1/2 cups freshly squeezed orange juice
Juice of 1 lime
1 bottle Champagne or sparkling wine, chilled

Steps:

  • Combine the carrot, orange and lime juice in a pitcher. Fill chilled champagne flutes or glasses halfway with the juice and top with the Champagne. Garnish with the carrot greens.
