Caribbean-Style Waldorf Salad image

Enjoy this salad that's made with fruits and nuts - a tasty side dish that's ready in just 15 minutes.

1/2 cup mayonnaise or salad dressing
1/4 cup whipping cream
1 tablespoon fresh lemon juice
1 tablespoon milk
2 medium unpeeled red eating apples, coarsely chopped (2 cups)
1 cup fresh pineapple chunks
2 medium stalks celery, chopped (1 cup)
1/2 cup coarsely chopped pecans or walnuts
1/3 cup raisins
3 tablespoons flaked coconut
1/4 cup sweetened dried cranberries
Bibb lettuce leaves or salad greens, if desired

Steps:

  • In medium bowl, mix mayonnaise, whipping cream, lemon juice and milk until well blended.
  • Stir in apples, pineapple, celery, nuts, raisins, coconut and cranberries. Serve salad on lettuce leaves. Cover; refrigerate any remaining salad.

IT'S A WONDERFUL WALDORF



It's a Wonderful Waldorf image

Number Of Ingredients 13

2 Ginger Gold apples (Fuji will substitute)
1 Red Delicious apple
3 tablespoons cider vinegar
1 cup prepared mayonnaise
1 pinch kosher salt
Cracked black pepper
3/4 cup toasted walnuts, crushed
1 cup golden raisins
2 teaspoons curry powder
2 stalks celery, thin bias cut
1/3 cup fresh mint, chiffonade
1/2 red onion, julienned
1 head romaine lettuce, heart only

Steps:

  • Cut apples in half and remove the core with a melon baller. Chop apples into medium-sized pieces, leaving skin on.
  • In a bowl, toss apples with the cider vinegar. Fold in mayonnaise thoroughly. Season with salt and pepper to taste. Fold in walnuts, raisins, curry powder, celery, mint and red onion. Adjust seasoning. Refrigerate for at least 1 hour to allow flavors to incorporate. To serve, arrange 2 leaves of romaine lettuce per plate and spoon salad on top.

CURRIED WALDORF SALAD



Curried Waldorf Salad image

Try this version this year instead of the traditional Thanksgiving salad. The original Waldorf salad combined celery, apples, and mayonnaise. Gradually walnuts and raisins were added to the mix. This version is not made with the gloppy mayonnaise we associate with Waldorf salad, but it has the same sweet, savory and crunchy mixture of celery, apples, raisins, and walnuts. Slice the apples and celery thin for a more elegant salad.

Number Of Ingredients 12

2 tablespoons freshly squeezed lemon juice
2 tablespoons mayonnaise
1/2 cup plain low-fat yogurt
3/4 teaspoon curry powder
1/2 teaspoon ground cumin
Salt to taste
2 fuji apples
2 teaspoons fresh lemon juice
1/3 cup lightly toasted walnut halves
1 cup thinly sliced celery, from the heart of the celery
1/4 cup raisins
1/4 cup celery leaves or flat-leaf parsley (or 2 tablespoons each), coarsely chopped

Steps:

  • Mix together the lemon juice, yogurt, mayonnaise, curry powder, cumin, and salt. Set aside.
  • Cut the apple into 12 wedges. Cut away the core of each wedge and slice into thin crosswise slices. Toss in a large bowl with 2 teaspoons lemon juice. Add the remaining ingredients and toss together.
  • Shortly before serving toss the salad with the dressing.

2 cloves garlic, minced
1/4 cup green onion, chopped
1 tablepoon curry powder
1 cup low fat plain yogurt
1/4 cup pecans, toasted
salt and pepper to taste

Steps:

  • In a medium-sized bowl mix yogurt, curry powder, green onion, garlic, cilantro and green chilies. Toss grapes and pecans into the dressing mixture. Season with salt and pepper.

1 cup chopped celery
1 cup chopped pecans
1 cup mayonnaise
6 tablespoons white sugar
1 teaspoon lemon juice
ΒΌ teaspoon ground cinnamon
1 cup heavy whipping cream

Steps:

  • Combine apples, celery, and pecans in a bowl.
  • Whisk mayonnaise, sugar, lemon juice, and cinnamon together in a separate bowl until well combined.
  • Whip heavy cream with an electric mixer until soft peaks form; fold into mayonnaise mixture to form a creamy dressing.

Fruity Caribbean curry image

Kidney beans and veg make chicken drumsticks go further with this sweet and hot curry - pack in 4 of your 5 a day in a filling family meal

2 tsp vegetable or sunflower oil
4 chicken drumsticks , skin removed
2 large red onions , chopped
2 peppers (any colours will do), chopped
3-4 tbsp mild curry powder
425g can pineapple chunks in unsweetened juice
400g can coconut milk
400g can kidney beans , drained
2-4 tbsp hot pepper sauce (depending on how hot you like it)
small bunch coriander , chopped
cooked rice , to serve (we used Tilda coconut rice)

Steps:

  • Heat the oil in a large frying pan. Add the chicken and brown well on all sides, then transfer to a plate. Add the onions and peppers to the pan, and cook for 5 mins until the veg starts to soften. Return the chicken to the pan and sprinkle in the curry powder, then add the pineapple with its juice, and the coconut milk. Season and simmer, uncovered, for 40 mins until the chicken is tender and the sauce has reduced and thickened a little.
  • Add the beans and pepper sauce to the pan. Simmer for another 2-3 mins until the beans are warmed through, then scatter with coriander and serve with cooked rice.
