This is really really good! For Goat cheese lovers do try to purchase the goat cheese that is rolled in plump dried cranberries. Do try ir on the grill!

1 lb prepared pizza dough, room temperature (I used Pizza Dough Bread Machine for one pie)
1 tablespoon olive oil
1 small sweet onion, sliced
4 -6 fresh figs, cut in half
5 ounces goat cheese (if you can get goat cheese with cranberries it fabulous)
1 teaspoon chopped fresh rosemary
1/2 cup mozzarella cheese, shredded
olive oil
cornmeal

Steps:

  • In a pan saute onions in oil till a caramel color, set aside to cool completely.
  • Preheat oven to 450 degrees.
  • Roll out dough on a floured surface to 1 inch thick. You can make it round or square all a matter of taste.
  • Place on a pan that is dusted with corn meal.
  • Spread a thin coat of olive oil on dough.
  • Arrange goat cheese, figs cut side up, cooled onions around on crust.
  • Top with mozzarella cheese and sprinkle with rosemary.
  • Place in oven and bake for 15-20 minutes.
  • ALTERNATE method:.
  • If grilling preheat grill to medium high.
  • Oil one side and place on a clean oiled grill and grill for 4-5 minutes.
  • Flip and then lightly spread olive oil on dough.
  • Arrange goat cheese, figs cut side up, cooled onions around on crust.
  • Top with mozzarella cheese and sprinkle with rosemary.
  • Cook a couple more minutes.

2 tablespoons olive oil, divided
1 large onion, chopped
3 garlic cloves, minced
1/4 teaspoon pepper
1 tube (13.8 ounces) refrigerated pizza crust
1 package (8 ounces) cream cheese, softened
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1 cup dried figs (about 6 ounces), chopped
6 thin slices prosciutto or deli ham, chopped
1/3 cup pine nuts
1 cup shredded provolone cheese

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium heat. Add onion; cook and stir until softened. Reduce heat to medium-low; cook 30-35 minutes or until deep golden brown, stirring occasionally. Add garlic and pepper; cook 1 minute longer., Preheat oven to 425°. Unroll and press dough onto bottom and up sides of a greased 15x10x1-in. baking pan. Bake 7-10 minutes or until golden brown., In a small bowl, beat cream cheese, thyme and remaining oil until blended. Spread over crust. Top with caramelized onion, figs, prosciutto and pine nuts; sprinkle with cheese. Bake 6-10 minutes longer or until cheese is melted.

"Ready, Set, Cook! Hidden Valley Contest Entry" Recently we ordered a pizza at a local restaurant that featured pine nuts and fresh figs as two of the ingredients. I loved the combination of these flavors and textures! Their pizza was seasoned with a spicy Italian dressing. I decided instead to add that spicy kick with little bites of hot Italian sausage which is a perfect compliment to the Hidden Valley Original Ranch Dressing, caramelized onions, figs and pine nuts!

4 tablespoons parmesan cheese
3 tablespoons panko breadcrumbs
1 tablespoon olive oil
1 medium red onion, sliced
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
2 teaspoons balsamic vinegar
1 (16 ounce) ball pizza dough
1/4 cup Hidden Valley® Original Ranch® Dressing
1 cup fresh fig, sliced
1/4 cup pine nuts, toasted
1 cup crumbled gorgonzola
6 ounces hot Italian sausage, casings removed

Steps:

  • Preheat oven to 425°F Spray a large rimless baking sheet with no-stick olive oil spray. Set aside 2 tablespoons of the Parmesan cheese. Mix together the remaining Parmesan cheese and bread crumbs. Sprinkle sprayed baking sheet with 1 tablespoon of the cheese and breadcrumb mixture.
  • In a skillet over medium-high heat, warm the olive oil. Add the onion, salt and pepper. Cook, stirring often, until the onion is soft and caramelized, 12 to 15 minutes. Stir in the vinegar. Transfer the onion to a plate and let cool.
  • Meanwhile, sprinkle the remaining 4 tablespoons of the cheese and breadcrumb mixture on work surface. Roll dough in mixture to coat. Gently knead dough, working crumb mixture into dough. Pat and gently stretch the pizza dough into a 14-inch circle; transfer to prepared baking sheet. Bake at 425° for 6 - 8 minutes or until light golden brown.
  • Drizzle ranch dressing over dough. Top with onions, figs, pine nuts and crumbled Gorgonzola cheese. Break up sausage into small bite-size pieces and sprinkle over top.
  • Bake for an additional 8 - 10 minutes or until the cheese has melted, the sausage is cooked through and the crust is golden, rotating the pizza occasionally to ensure even browning.
  • Transfer the pizza to a cutting board and sprinkle with reserved 2 tablespoons of the Parmesan cheese. Cut into slices and serve immediately.
