2 1/2 cups cut-up cooked chicken
1 cup red or green grapes, cut in half
1 medium cucumber, cut into strips

Steps:

  • Mix yogurt and mayonnaise in large bowl. Stir in lemon juice, chives and salt.
  • Stir in remaining ingredients. Serve immediately, or refrigerate until chilled, at least 2 hours but no longer than 24 hours.

2 cups chopped tart apples
3/4 cup chopped celery
1/4 cup sliced green onions
1/4 cup chopped pecans
1/2 cup fat-free reduced-sugar vanilla yogurt
1/4 cup reduced-fat mayonnaise
1/2 teaspoon curry powder
1/4 teaspoon salt
1 medium cantaloupe
6 lettuce leaves

Steps:

  • In a large bowl, combine the chicken, apples, celery, onions and pecans. Combine the yogurt, mayonnaise, curry and salt; add to chicken mixture and toss to coat. Cover and refrigerate for 2 hours or until chilled., Meanwhile, place cantaloupe on it's side; cut into six rings. Discard seeds and ends. With a sharp knife, cut off rind. 2 chicken breasts (boneless & skinless)
2 cups low sodium chicken broth
1/4 cup mayonnaise (may need more)
2 3/4 tablespoons sour cream
1 red apple, cored and diced (unpeeled)
1/2 lemon, juice of
2 celery ribs, thinly sliced
7 ounces green seedless grapes
1 cantaloupe, peeled and cut into bite-sized pieces (make sure it is ripe)
3 teaspoons slivered almonds or 3 teaspoons pecan pieces, toasted

Steps:

  • Place chicken breasts in a pan and cover with chicken stock and water, if needed, to poach. Simmer on low heat for 8 minutes or until chicken is cooked. Remove from heat and allow to cool.(This you can do ahead of time, if needed).
  • Slice chicken and set aside.
  • Combine mayonnaise and sour cream.
  • Add apple, lemon juice, celery grapes and cantaloupe.
  • Mix gently and thoroughly.
  • Add chicken slices and toss.
  • Top with almond pieces or toasted pecans.
  • Serve with hot biscuits and a nice Chablis.

1 cup green seedless grape, halved
1/2 cup sliced almonds
3 cantaloupes, halved, seeded

1 tablespoon fresh lemon juice
1 1/2 teaspoons grated lemon peel
1 1/2 teaspoons sugar or 1 1/2 teaspoons sugar substitute

Steps:

  • In a large bowl, combine chicken, blueberries, celery, grapes and almonds.

1 can (20 ounces) pineapple chunks in juice, drained
1/2 cup sliced green onions
1/3 cup diced celery
1/3 cup unsalted peanuts
1/3 cup raisins
1/4 cup sweetened shredded coconut
DRESSING:
1 jar (4-1/2 ounces) strained apricots with tapioca (baby food)
3 tablespoons mayonnaise
2 to 3 teaspoons curry powder
1/4 teaspoon powdered ginger
2 medium cantaloupes

Steps:

  • In a large bowl, combine chicken, pineapple, onions, celery, peanuts, raisins and coconut; set aside. In separate bowl, mix dressing ingredients. Combine chicken mixture with dressing; mix well. Cover; refrigerate for 1 to 4 hours. Cut melons in half; remove seeds. Remove fruit by cutting into bite-sized pieces or using a melon ball cutter. Number Of Ingredients 16

1/2 cup uncooked orzo pasta
1 snack-size cup (4 ounces) pineapple tidbits
1/2 cup fat-free mayonnaise
1/3 cup fat-free plain yogurt
4 teaspoons lemon juice
1 teaspoon minced fresh mint
1 teaspoon grated lemon peel
1 teaspoon honey
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups cubed cooked chicken breast
1/2 cup chopped celery
1/3 cup chopped sweet red pepper
1/4 cup chopped green onions
1 small cantaloupe, seeded and quartered
1/4 cup unsalted cashews

Steps:

  • Cook pasta according to package directions. Meanwhile, drain pineapple, reserving juice; set pineapple aside. In a small bowl, whisk the mayonnaise, yogurt, lemon juice, mint, lemon peel, honey, salt, pepper and pineapple juice until smooth.
  • Drain pasta and rinse in cold water. Place in a large bowl; add the chicken, celery, red pepper, onions and pineapple. Add mayonnaise mixture and toss to coat. Serve on cantaloupe wedges. Sprinkle with cashews.
  • Yield: 4 servings.
