SUZANNE'S CARAMEL SQUARES image

Number Of Ingredients 12

1 cup of packed brown sugar
1/2 cup butter, melted
1 large egg
1/2 cup of flour
1 teaspoon baking powder
1 cup medium unsweetened coconut
1/2 cup chopped walnuts
Caramel Fudge Icing:
1 cup of brown sugar
3 tablespoons light cream
3 tablespoons of butter
1 teaspoon of vanilla

Steps:

  • For squares, whisk brown sugar into butter. Whisk in egg. Combine flour and baking powder, stir into butter mixture. Combine coconut and walnuts, fold into 8 inch square baking pan. Bale 325 F. for 25 minutes. Let cool in pan (should be kind of moist like a brownie). For icing, combine brown sugar, butter and cream. Boil for 3 minutes, remove from heat and add vanilla. Whisk or beat until thick and spread.
