6 cups sliced peeled tart apples
2 tablespoons lime juice
3/4 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Dough for double-crust pie
2 tablespoons butter
TOPPING:
2 tablespoons butter
1/4 cup packed brown sugar
1 tablespoon heavy whipping cream
1/4 cup chopped pecans

Steps:

  • Preheat oven to 400°. In a large bowl, toss apples with lime juice. Combine sugar, flour, cinnamon and salt; add to apples and toss lightly. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top., Bake until golden brown and apples are tender, 40-45 minutes., For topping, melt butter in a small saucepan. Stir in brown sugar and cream; bring to a boil, stirring constantly. Remove from the heat and stir in pecans. , Pour over top crust. Bake until bubbly, 3-4 minutes longer. Place on a wire rack. Serve warm.

The South is known for apple pies, but this one is not your typical apple pie! The filling includes red-hot candies, and instead of a regular double crust, you simply crumble a frozen pastry shell and sprinkle it over the top. You can peel the apples if you wish or leave them unpeeled.

6 cups sliced tart apples
2/3 cup chopped walnuts
1/2 cup red-hot candies
1/3 cup plus 2 tablespoons sugar, divided
1/3 cup all-purpose flour
2 frozen deep-dish pastry shells (9 inches)

Steps:

  • In a large bowl, combine the apples, walnuts, red-hots, 1/3 cup sugar and flour; toss to coat. Spoon into one pastry shell. Crumble the remaining pastry shell into 1/2-in. pieces; toss with remaining sugar. Sprinkle over filling., Place on a baking sheet. Bake at 375° for 50-60 minutes or until filling is bubbly and crust is golden brown. Cool completely on a wire rack before cutting.

1 ¾ cups unsweetened apple juice
20 cinnamon red hot candies
¼ teaspoon red food coloring
½ teaspoon vanilla extract
5 Granny Smith apples
3 tablespoons cornstarch
1 (9 inch) pie crust, baked

Steps:

  • Peel and core the apples. Slice thinly.
  • Combine 1 1/2 c apple juice, candies, food coloring, vanilla, and apples in a saucepan. Bring to a boil. Simmer until apples are tender, stirring frequently. Combine remaining 1/4 cup apple juice and corn starch; stir into apple mixture, and cook until thickened. Remove from heat, and let cool.
  • Spread apple mixture into pie shell, and chill for several hours. Before serving, top with whipped topping and sprinkle with cinnamon if desired.

2 cups flour
1 teaspoon salt
2/3 cup lard, Oscar Mayer sells it
4 -5 tablespoons ice water
1 cup sugar
1/4 cup flour
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 dash salt
6 cups thinly sliced peeled tart apples, Granny Smith
1 -2 tablespoon butter
2 tablespoons red-hot candies
milk
sugar

Steps:

  • Cut lard into flour and salt, mix with enough ice water to hold together.
  • Roll out half of dough and line an 8 or 9" pie pan. Roll another circle for top with other half.
  • In large mixing bowl, stir together filling ingredients except apples and candies.
  • Fold in apples well.
  • Turn into pastry-lined pan and dot with butter.
  • Sprinkle with 2 Tbl. cinnamon candies.
  • Cover with top crust and seal edges.
  • Cut slits in top, brush with milk.
  • Sprinkle with a little sugar.
  • Bake about 1 hour at 350 degrees.

3 cups apples, peeled,thinly sliced
1/4 cup golden raisin, large (optional)
2 tablespoons candied ginger, shredded (optional)
2 tablespoons lime juice
3/4 cup brown sugar
1/4 cup flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon mace
1/4 teaspoon salt
1 tablespoon butter, cut into small cubes
2 pie crusts, not cooked (your favourite)
1/4 cup butter
1/2 cup brown sugar
2 tablespoons heavy cream
1/2 cup chopped pecans

Steps:

  • Preheat oven to 400 degrees Prepare crust for a double crust pie.
  • Set aside.
  • In a large bowl combine all ingredients for filling.
  • Blend well and pour into pie shell.
  • Dot with butter cubes and top with remaining pie crust.
  • Cut three of four steam vents on top of pie.
  • Bake in a 400 degree oven for 45 minutes.
  • Pie Topping Put butter, brown sugar and cream in small pot and bring to a boil, remove and add pecans.
  • Then pour over pie crust and return pie to oven for 5 minutes, until bubbly.
  • This pie is wonderful served with sharp cheddar cheese or French vanilla bean ice cream.

5 cups sliced apples (enough to fill a casserole pan about 3/4 full.)
1 tablespoon lemon juice
1 cup flour
1 cup either unbleached cane sugar or 1 cup brown sugar
1 teaspoon cinnamon
4 tablespoons soft butter
3/4 cup of chopped hickory nuts or 3/4 cup chopped pecans

Steps:

  • Fill a medium sized casserole three - quarters full of peeled, cored, and sliced apples.
  • Add the lemon juice.
  • In a separate bowl, mix the flour, sugar, cinnamon, butter, and nuts.
  • Blend until mixture looks crumbly.
  • Sprinkle on top of the apples. Do not stir.
  • Bake in a 350 degree oven about forty- five minutes.
  • Turn oven to 450 degrees and allow it to brown quickly.
  • It can be served hot or cold.
  • If you like, you may pour cream on top.

Crust and Topping
1 recipe Traditional Pastry Piecrust dough for a 9-inch single-crust pie (see page 5)
1/4 cup heavy cream (to glaze the crimped pie edges)
Cinnamon Sugar Crumb Topping (page 12)
1/2 cup chopped pecans or walnuts (optional)
Filling
3/4 cup sugar
3 tablespoons unbleached all-purpose flour
1 tablespoon ground cinnamon
Pinch of ground nutmeg
8 medium apples, peeled, cored, and cut into 1/2-inch chunks
2/3 cup Caramel Sauce (page 189)

Steps:

  • Preheat the oven to 425°F.
  • To prepare the pie shell, on a clean, lightly floured work surface, roll out half a ball of dough with a rolling pin until it forms a 10-inch circle. Wrap the remaining half of the dough tightly in plastic wrap and reserve it in the refrigerator for future use for up to 5 days. Fold the circle in half, place it in a 9-inch pie plate so that the edges of the circle drop over the rim, and unfold the dough to completely cover the pie plate. Using your thumb and index finger, crimp the edges of the pie shell. Brush the edges of the pie shell with heavy cream to create a perfect, golden brown finish. Set the pie shell to the side while you make the filling.
  • To prepare the filling, in a small bowl, whisk together the sugar, flour, cinnamon, nutmeg, and pecans or walnuts if desired. In a large bowl, toss the apples with the sugar mixture, making sure the apples are thoroughly coated.
  • To assemble the pie, spread 1/3 cup of the caramel sauce across the bottom of the pie shell. Place the apples in the pie shell, distributing them evenly. Sprinkle the cinnamon sugar crumb topping over the apple filling, covering it completely.
  • To bake, place the pie plate on a baking sheet and bake for 15 minutes. Reduce the heat to 375°F and continue baking for 40 minutes, or until the apples are tender. Transfer the pie plate to a wire cooling rack and allow the pie to cool for 10 minutes. While the pie is still slightly warm, drizzle the remaining 1/3 cup caramel sauce over the crumb topping.
  • Apple pies are best served either at room temperature or warmed at 350°F for about 10 minutes. Candy Apple Crumb Pie will keep at room temperature overnight and can be stored in the refrigerator for up to 4 days.

1/4 TEASPOON SALT
1 TEASPOON CINNAMON
Cream Cheese Topping:
8 OUNCES CREAM CHEESE
1 TEASPOON VANILLA
1 EGG
1 TABLESPOON LEMON JUICE
1/4 CUP SUGAR
Topping:
3/4 CUP HEAVY CREAM, WHIPPED
2 TABLESPOONS SUGAR
1/2 CUP CARAMEL ICE CREAM TOPPING
1/4 CUP CHOPPED PECANS

Steps:

  • Preheat oven to 375 degrees F. For the Crust: In a medium bowl, combine the crumbs, sugar, cinnamon and melted butter. Mix well and press into a 10-inch pie plate and up the sides. Bake for 6 to 8 minutes until golden in color. Remove pie shell from oven and cool completely. Pour caramel into pie shell, and sprinkle with 1 cup of chopped pecans. Refrigerate pie shell while making apple filling. For the Apple Filling: In a large (12-inch) skillet over medium heat, melt butter and add brown sugar, salt and cinnamon. Stir with a wooden spoon. Add apples and stir. Cook over medium to medium-high heat for 15 to 20 minutes until apples are softened and tender. Let cool for 10 minutes and pour into pie shell. Reduce oven to 350 degrees F. For the Cream Cheese Topping: In a medium bowl, using a hand-held mixer on low speed, combine cream cheese and sugar for about 1 minute until smooth. Add egg, lemon juice and vanilla and beat for 1 minute or until fully blended. Pour over apple filling in pie shell. Bake for 30 minutes until an inserted knife comes out clean. Remove pie from oven and let cool. Refrigerate for 4 hours. Let stand outside the refrigerator for 30 minutes. Top with whipped cream, caramel and pecans, and serve.
