QUICK RAISIN BREAD image

Yield 1 loaf

Number Of Ingredients 12

3 tablespoons butter
1 cup sugar
3 eggs
3/4 cup raisins
1 tablespoon grated lemon peel
3 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon mace
1/2 teaspoon lemon extract
1/2 teaspoon vanilla
1 cup milk

Steps:

  • Cream butter and sugar. Add eggs one at a time, beating well after each addition. Stir in raisins and lemon rind. Mix and sift dry ingredients. Combine lemon extract, vanilla and milk. Alternating with dry ingredients, add raisin mixture and flour mixture to the milk. Pour into a greased and floured 9x5 inch loaf pan. Bake at 350F for 45 to 50 minutes.
