Carrot-Juice Mimosas image

Fresh carrot juice in addition to the usual OJ adds a welcome note of earthiness to this classic brunch libation and gives it a vivid orange hue.

1 1/2 cups fresh carrot juice
1 cup fresh orange juice
1 bottle (750 ml) brut sparkling white wine, chilled

Steps:

  • Combine juices in a small pitcher. Fill champagne glasses halfway with juice mixture; top with wine and serve.
