CAJUN PORTOBELLO SANDWICH WITH AVOCADO AND REMOULADE
This is a rich sandwich, delicious withavocado and a generous smear of remoulade! This recipe calls for 1 hour marinating time, so plan accordingly. Adapted from Chef Tal Ronnen's The Conscious Cook.

- Mushrooms:.
- Place a large pot over medium heat. Sprinkle the bottom with a pinch of salt and heat for 1 minute. Add the oil and heat for 1 minute, being careful not to let it smoke. This will create a nonstick effect.
- Add the shallots and garlic and cook for 3-4 minutes, until softened. Add 1 tbls. of the Cajun seasoning, along with the wine, vinegar, and 1 cup water, bring to a boil, lower heat and simmer 20 minutes.
- Add mushrooms and cook 1 minute. Pour the mushrooms and liquid into a shallow container, cover, and set aside to marinate for 1 hour.
- Remove the mushrooms from the marinade and press between paper towels or in a dish towel to remove excess marinade, then sprinkle with remaining Cajun seasoning, pressing the seasoning into both sides of the mushroom slices. Discard the marinade(or save for another use).
- In a cast iron skillet over medium high heat, cook the mushrooms in a single layer(you may need to do this in two batches) until blackened, 2-3 minutes on each side. Remove to a plate.
- Remoulade:.
- Place all the ingredients in a food processor or blender and blend on high for 1 minute. Store, covered, in the refrigerator for up to 1 week.
- Makes 1 3/4 cups.
- Putting it together:.
- Spread a spoonful of the remoulade on one half of each roll. Top each with 1 or 2 lettuce leaves and a few slices of tomato and avocado. Divide the mushroom slices among the rolls. Close each sandwich and cut in half. Serve and enjoy!

Steps:
- Preheat oven to 425 degrees.
- Make cajun remoulade by mixing mayonnaise with 2 Tbsp.
- cajun seasoning, Worcester sauce, cayenne pepper, lemon juice, and Tabasco.
- Refrigerate for 30 minutes.
- Meanwhile, heat 1 Tbsp.
- olive oil in skillet over high heat, 2 minutes.
- Toss shrimp with 1 tsp.
- of cajun seasoning and salt.
- Cook for 3 minutes.
- Transfer to large bowl.
- Add chiles and cilantro to shrimp and mix.
- Brush a large cookie sheet with olive oil.
- Arrange 1 tortilla on cookie sheet.
- Top with 1/2 of cheese and shrimp mixture.
- Place another tortilla on top of that.
- Brush lightly with olive oil.
- Bake 8 minutes, until lightly browned.
- Repeat with the remaining tortillas and mixture.
- Cut quesadilla into wedges and serve with the remoulade.
BLACKENED CATFISH PO'BOY TACOS WITH CAJUN REMOULADE

- Blackened Catfish.
- Season fish liberally on one side with blackening spice and a small amount of salt and pepper. Set aside.
- Place cast iron skillet on a burner and turn on high for about 3 minutes, until it becomes very hot. Turn off flame, add oil and place fish, seasoning side down, in pan.
- Turn flame back on and cook fish, seasoning side down, until translucent, about 5 minutes. The fish will turn white except for a small amount of pink in center. At this point, turn off heat and flip fish over in pan.
- Allow to sit in pan for about 1 minute. Remove from pan and place on a paper towel to absorb some of residual oil.
- Heat three tortillas in microwave for 30 seconds, to warm. Spread a small amount of remoulade on each tortilla, then lay three roughly equal-sized portions of fish on individual tacos. Top with lettuce (or cabbage) and tomato, then dollop a generous portion of remoulade on top of tacos. Makes 4 servings of 3 tacos.

- Preheat oven to 325°F Remove roast from package; lightly pat with paper towels. Discard gravy packet or refrigerate for another use. Lift string netting and shift position on roast for easier removal after cooking.
- Place roast, skin side up, on flat roasting rack in 2-inch deep roasting pan. Spray roast with cooking spray. Bake 1-3/4 to 2 hours, or until meat thermometer inserted in center of roast reaches 170°F
- Let roast stand 10 minutes before removing string netting; carve into thin slices.
- Meanwhile, melt butter in medium skillet over medium heat. Add green and red peppers and onion; cook and stir 8 minutes, or until tender. Stir in hot sauce and celery seed. Remove from heat.
- Spread bottom halves of rolls evenly with mayonnaise. Top each of the bottoms with 1 slice cheese, 1/8 of the turkey and vegetables and top halves of rolls.

CAKE TRUFFLES
This recipe is from Bakerella, is super popular, and is very good. They are time consuming, especially if you make them for the first time, so plan for a couple days. This is a unique treat to give as a gift or to serve at a bridal shower, a holiday party, or any get together. Enjoy! Prep time does not include chilling time.

- Cook the cake as directed on the box for a 13 X 9 cake.
- After the cake is cooked and cooled completely, crumble into a large bowl. Make sure any parts that have a more crusty texture (from the outside edge of the pan) are picked out.
- Mix the cake thoroughly with the cream cheese frosting (like you would mix meatloaf). Make sure the cake is moist enough to roll into balls, but not mushy; you may not need to use all of the frosting (I find that about 3/4 of the container is a good amount).
- Roll the mixture into quarter-size balls and lay on a wax-paper covered cookie sheet.
- Chill for several hours (you can speed this up by putting in the freezer).
- Melt chocolate in the microwave per directions on package.
- Roll balls in chocolate and lay on wax paper until firm. (Use two spoons to dip and roll in chocolate and then tap off extra.).
- Decorate as desired.
- NOTES:.
- For steps 3 and 4, I found it works very well to wear powder-free latex gloves (if you're not allergic). I already have them for cutting jalapenos. They don't stick to the cake, and no coloring gets on your hands (if you're working with a red velvet cake, like in my eyeball pictures).
- If using small sprinkles to decorate, use a 1/4 teaspoons measuring spoon, and sprinkle a little on the top of each cake truffle before the chocolate coating firms up.
- I chilled my cake truffles in the refrigerator overnight (for step 5), and they were easy to work with.
- I used a 1 lb. bag of candy melts from the craft store, but I ran out near the last 1/3 of my cake truffles, so I covered the rest with either powdered sugar or drizzled semi-sweet chocolate (therefore, I recommend using more than one bag of candy melts, or a couple of packages of candy bark available at most grocery stores).
- The recipe says it makes 40-50 cake truffles, but I usually get about 88 (I must roll them smaller).
