1 cup Caesar dressing
2 bunches romaine, torn into bite-size pieces (20 cups)
2 cups Caesar or garlic-flavored croutons
2/3 cup freshly grated Parmesan cheese
Freshly ground pepper

Steps:

  • Pour dressing into large salad bowl. Add romaine; toss until coated with dressing.
  • Sprinkle with croutons, cheese and pepper; toss.

There's no need to dine out when you crave a classic Caesar salad -- make this rendition at home, with all the bells and whistles.

2 thick slices rustic white bread, cut into 1-inch cubes
1/4 cup extra-virgin olive oil
Coarse salt and ground pepper
1 garlic clove, minced
2 anchovy fillets, minced
1 large egg yolk or 1 tablespoon pasteurized egg yolk
1 1/2 teaspoons Dijon mustard
1 tablespoon fresh lemon juice
1 small head romaine lettuce, cored, outer leaves discarded, and heart cut into 1 1/2-inch pieces
2 tablespoons freshly grated Parmesan

Steps:

  • Preheat oven to 400 degrees. On a rimmed baking sheet, toss bread with 1 tablespoon oil and season with salt and pepper. Bake until golden brown, 10 to 12 minutes. Let croutons cool completely.
  • On a cutting board, combine garlic, anchovies, and 1/2 teaspoon salt. Using a large knife, drag the blade at an angle across mixture until a paste forms. Transfer to a large bowl and whisk in egg yolk, mustard, and lemon juice. Gradually whisk in 3 tablespoons oil. Season with pepper. Just before serving, add croutons and lettuce to dressing and toss; top with Parmesan.

This is the "recipe" that a waiter performed tableside at a Spanish Bay restaurant in Pebble Beach several years ago. The measurements are very flexible. Egg substitute can be used for the raw egg.

3 -4 garlic cloves
3 -4 anchovy fillets
1/2 lemon, juice of
1 teaspoon Grey Poupon
1 egg, raw
1 dash Worcestershire sauce
1 dash balsamic vinegar or 1 dash red wine vinegar
3 dashes extra virgin olive oil
romaine lettuce, as needed
crouton, as needed
parmesan cheese, freshly shredded, as needed

Steps:

  • Mash together very thoroughly, the garlic and the anchovie fillets. Add lemon juice, Grey Poupon, and egg. Mix thoroughly. Add Worchestershire Sauce, vinegar and olive oil. Mix together. Just before eating the salad, add torn romaine, croutons and parmesan. Toss.

1/4 cup grated Parmesan cheese
1/4 cup mayonnaise
2 tablespoons milk
1 tablespoon lemon juice
1 tablespoon Dijon-mayonnaise blend
1 garlic clove, minced
Dash cayenne pepper
1 bunch romaine, torn
Salad croutons and additional grated Parmesan cheese, optional

Steps:

  • In a small bowl, whisk the first seven ingredients. Place romaine in a large bowl. Drizzle with dressing and toss to coat. Serve with salad croutons and additional cheese if desired.
